From 85º to 50º??

How the heck is it possible to go from a day where it hits almost 90º to a day when it’s hardly 50º?  It figures that the weather would be beautiful all week while I’m stuck in an office and then come Friday, we hear that the weekend isn’t supposed to be that warm….Ahhh well.  Make the best of it, right?

The snackage when I got home from work consisted of another GREEN MONSTA.  I think I seriously start craving these when the weather is warmer?  They’re so cool and refreshing.

My current fave recipe:

  • 3/4 C. frozen mixed fruit (medley of cantaloupe, honeydew, peaches, & grapes)
  • 8 oz. Diet V8 Splash
  • 2/3 C. frozen chopped spinach (thawed a little bit)

Just blend all the ingredients together and you’ll be one happy foodie!

Next up, I munched on an unpictured Chococonut Granola Bar from Nature’s Path Organics, changed clothes, and packed my sneaks for the gym in my new Envitote! SOON TO BE AVAILABLE AT MY OPENSKY SHOP!

I also stashed my water bottle, ipod, & keys in there while I was running!

 I  got several compliments on my cute eco-friendly gym mate when I arrived!  Everyone was green with envi ;)   It’s perfect for anything, really!  I’ve also been bringing it to work with me to carry my water bottles/lunchbag/files! 

My hour long elliptical workout [650 calories] always goes so much faster if I keep myself occupied with things like magazines and literature while I’m doing it, so I snagged the Spring “Family Cirle” on my way to the machine along with an old edition of “Shape.  After the elliptical, I hit the obliques, abs & back…I know, I know…I neeeeed to change up my workout.  I just really want to focus on those areas right now.  Bathing suit season is JUST around the bend! :)   I also did an inner/outer thigh workout while I was there.  I’m really excited for Saturday when I get to try out my Oxygenfit system that I received to review!

On the way home from the gym, I gave my baby a bath ;)   In the four years that I had my GMC Jimmy, I never ONCE washed it.  Haha.  I also contemplated while washing away the suds what I was hungry for dinner-wise.  I planned it out in my head and my mouth was watering the whole way home.

On the menu, we’ve got roasted brussels:

I cut off the ends, sliced them in halves, and tossed them in a ziplock baggie with some SF syrup & low sodium soy sauce until the oven was preheated.  Then, I sprayed a baking sheet with some Pam & roasted these little gems at 375º for about 30 min.

While I was waiting, I gobbled up some of this delectable mixture as an appetizer, inspired by none other than JB and her cottage cheese & ranch concoction.

broccoli slaw + 1/2 C. ff cottage cheese + 1 tsp. ranch seasoning

I could feel the sodium running through my veins…but totally worth it, since I just got finished with a pretty fantastic sweat sesh.

I was really craving something sweet after making this, and the brussel sprouts weren’t quite finished so I whipped up a yummy, sweet cauliflower soup to eat with it.  This may not seem appealing to you, but I was experimenting and it tastes AWESOME.  Reminds me of cream of wheat sweetened with brown sugar! 

I'm going to patent this recipe!

Ingredients:

  • 1 bag steamfresh cauliflower
  • 1/4 C. sugar free Log Cabin
  • buttload of cinnamon

Blend together & voila!

SOOOO comforting, warm & yummy.

I’m tellin’ ya, you’ve got to try this! I let this dinner settle in my belly and washed it all down with this glorious tea:

turkey hill diet green mango.

I packed my lunch all up in my little black dress pink tote.  Same as usual, sorry!

egg whites in honey mustard, flat out w/ sonoma jacks, and a tub o' veggies for good measure.

I also packed my breakfast for quick prep in the AM:

banana split protein shake & fiber one.

Again, sorry for the sameeeee eats.  I’ve got a ton of this protein powder and I abs. love it.  This morning, I mixed it with some ice cubes, water, and banana split Capella Flavor Drops to make a nice little banana split treat for brekkie. 

For dessert?  A spoonful of SF vanilla ice cream & this ruby red:

sweet & crunchy, as it should be ;)

A nice night for some Billy Madison, no?  Anyone else watch it while it was one last night?  I think they played it like 3 times in a row.  Can’t get enough of my man, Adam ;)
