Whatta-Ya-Know?

Posted on

…God wrote me a little love note this morning through my daily Bible verse.

“Praise be to the God and Father of our Lord Jesus Christ, the Father of compassion and the God of all comfort, who comforts us in our troubles, so that we can comfort those in any trouble with the comfort we ourselves have received from God … (2 Corinthians 1:3-4, NIV).”

Victoria’s Secret is having a 7 for $25 deal, rather than the typical 5 for $25.

…Momma FF and I went shopping together and we added a few new additions to my winter wardrobe

…we had a blast together.

Dr. McDougall’s has some ROCKIN’ packable, convenient soups that will knock your socks off.

…they’re healthy, too!

…they are perfect supplements to the daily dose of greens I eat on my lunch break.

Lite Gazebo Room Dressing barely coating some baby spinach, mushrooms, cucumbers, and orange bell peppers

…Janetha’s post this morning inspired me to share with you my love for Bare Minerals makeupSome of you guys have commented or messaged me asking about what make-up I use and how I have such a “glowing complexion”…I  appreciate the compliments, but I can’t take the credit.

…it’s the makeup… “so pure you can sleep in it” ;)  which I often do.  It’s also super easy to put on.  Proof?  If you followed me to work, you’d know that I am literally swiping it on while I drive.  Every.single.morning.  Scary, but true.

…I use the medium beige foundation (with spf15!), followed by warmth all-over-face color, and finished off with some “thistle” cheek color.  **The company doesn’t even know I’m posting this, so don’t think I’m doing it as an endorsement…I just LOVE the stuff.  It’s a bit pricey, so all my other make-up is much more generic.

…that’s right…Wet n’ Wild eyeliner & Maybelline mascara.

Confession:  I often snack on these sugar-free gel bites at work.  Just sitting at my desk sometimes makes me feel munchie.

…It’s already hump day!

…I managed to compile a list of random…whatta-ya-knows and create an entire post.

Here’s to the week being 1/2 over! (:

It’s your turn…whatta ya know?!

Dr. McDougall’s Asian Entrée Cups

Posted on

I’m a girl on the runLiterally and figuratively.  I am in constant motion, running from work to school, to basketball, to the YMCA, to family gatherings, to friends’ invites.  Literally, there is not much time in between for preparation.  I always do my best to keep things onhand like chopped veggies, cooked grains, and sliced fruit so that eating nutritiously isn’t difficult when throwing things together for office lunches or dinner before heading out…in fact, I proudly declare myself queen of tupperware.

Dr. McDougall’s ready-to-eat soups have saved my life belly more times than I can count on two hands, when I don’t have time to pack a homemade meal to bring with me to work, so when I got an email, stating that they had a NEW product, I couldn’t agree faster when they asked me to try it!

Allow me to introduce, Dr. McDougall’s Asian Entrée Cups!

Available in eight low-fat, delicious varieties, these all-natural, eco-friendly, vegan, and non-GMO microwavable cups are heaven sent meal ideas for busy bodies such as myself.

The company uses peanuts for healthy fats rather than typical oily, asian dishes, and BAKED noodles vs. fried.

If you’re a fan of ramen noodles or Thai, Chinese, and Japanese foods, you will love these convenient, lightweight meal options.

In fact, you may not believe your eyes or your tastebuds when you check out the nutrition facts on these babies.

They average about 200 calories a pop with just 1-2g of fat!  The Pad Thai version is even gluten-free.  The directions are super simple, too.  As long as you’ve got a microwave accesible, you can enjoy a cup of noodles at work within 3 minutes of popping the top.

The varieties include the following: Teriyaki, Pad Thai (Gluten Free), Spicy Kung Pao, Roasted Peanut, Spicy Szechuan, Soy Ginger, Lentil Curry Pilaf (Gluten Free), & Masala Lentil Pilaf.

Thanks so much to the company for letting me try these!  They’re yummy for sure.

Breakfast : Black Raspberry Cheesecake Oats

(1/2 C. oats, 1/4 C. fat free cottage cheese, 1 tbsp. sugar free blackraspberry preserves, sugar free vanilla Torani microwaved until warm)

Just as my workouts sometimes need to stay fresh and enthusiastic, so does my relationship with my Savior.  It’s easy to just go through the motions and do what you feel you “have” to do, but are we really getting much out of it?  If we fully believe in His word, then we know that He is our strength.  Keeping that thought in the forefront of our minds will make us WANT to draw closer to Him and it should excite us!

I tried to stay focused at work, but I was so enthralled by all the neat stuff we’re going to be doing in my Nutrition class.  I had the first one on Tuesday night, and I’ve been exploring the book every chance I get to take a break at work.

For any of you dieticians or health fielders out there, we started out pretty basic with kcals vs. calories, the different components of foods (carbs, proteins, fats), and basic health knowledge.

I’m really getting excited about the class, now!  Finally, I get to take a course that I’m totally interested in from beginning.  No more algebra and history, although, both of those ended up being way more interesting that I could’ve bargained for.

Anwho, back to the eats.  Around noon I practically skipped to the office refrigerator because I was excited about my lunch.

Diced cucumber & tomatoes, a bed of steamed kale with 1/2 C. brown rice, a grilled chicken breast, and some cucumber garlic Cedar’s Tzatziki for dressing.

Totally delish and wholesome.  I picked up a few more of my books at the campus bookstore after the 1/2 mile walk back to my car after work.  I also sold back my books from last semester for a total of $91.00!  Not too shabby.

There was snackage before practice, too.

1/4 C. fat free cottage cheese, 1/4 C. canned pumpking, + splenda & cinnamon

A tiny, baby naner.

and some healthy fats for good measure :)

I hate when I get 1/2 way through a practice and feel like I’ve got nothin’ left to give, so I’ve been making sure I’m properly fueled in order to run up and down the floor like the energizer bunny.

752 calories burned, max hr 165.

I didn’t have a great practice, but I’ve come to realize that not EVERYONE is going to be stellar.  The important thing is to push through and not expect perfection from yourself.  You’re GOING to have off days.  It’s inevitable.

Annnd we all know the greatest perk to working out is reeeeeefueling, right?  Dinner was served when I got home.

I had 1/2 of this Dr. McDougall’s Lentil soup box while I was waiting for my veggies to roast in the oven.

Not the most photogenic appetizer in the world, but it sure is delicious.  Probably my favorite soup in the world, actually.  At 115 calories, 7g protein, and 8g fiber, you can’t argue with the stats either!  If you want to really up the nutrition, you can get the low sodium version…but I’ll warn you, I’ve tried it.  Not even a contender.  I convinced myself that I just sweated a whole bunch at practice, so I could use a little extra sodium.

Before I knew it, the oven timer was going off and I had a veggie feast on my hands.  I love the “rainbow on my plate” kind of thing :)  Red (bell pepper), orange (butternut squash), yellow (squash), green (zucchini), and ummm white (parsnips)?  Okay, you get the point.

All seasoned with some NutraSalt Seasalt and pepper.  I used light ragu on the side as a dipper, but ended up eating it more like soup at the end.  The veggies were great all on their own!

After dinner, I logged onto my Health class’s website (since it’s a virtual course) and finished up some assignments.  Before too long, I knew it was time for dessert

(1/2 C. old fashioned oats, sugar free vanilla Torani, cinnamon, and 1/3 C. egg whites topped with fat free cream cheese & sugar free black raspberry jam)

Since I hadn’t really had any whole grains with dinner, I knew I wanted an oatcake to hit my sweet tooth.

What’s your favorite post dinner snack?  I like to have carbs before bed most nights because they help me sleep!  I also had a cup of unsweetened vanilla almond breeze with some cinnamon to wash down my dessert!

XOXO.

Verse of the day:

Delight yourself in the LORD and he will give you the desires of your heart.”

- Psalm 37:4

Since I had been out until 2am the night prior, at the Phillies game, I decided it was best that I went into work a little bit late, in an effort to get a bit more sleep.  SUCCESS!  AND I had time to put together a delicious breakfast while I was at it.

2 Van’s Lite Waffles with 1 vanilla Brown Cow greek yogurt + a dollop of canned pumpkin and a drizzle of sugar free syrup

I don’t know about you, but I sure plan on eating my fair share of pumpkin before the season ends.  I just may stock up and get 50 cans before it gets taken off the shelves…I can’t believe some of you are almost “pumpkined out”!

I love the orange tie-dye looking swirls that the pumpkin & yogurt create!  So artsy :)

Although I had time to put together a nice breakfast, I did NOT have time to pack a homemade lunch…or maybe I just used that as an excuse to have another can box of Dr. McDougall’s!

This one is my ULTIMATE favorite.  It’s chunky, flavorful, and filling!

No wonder, right?! 14g protein and 16g of fiber in this box!

Nothin’ but the good stuff!  With my soup, I had a Deep Chocolate Vitatop.  Because honestly, I think it should be a RULE that everyone eats a little bit of chocolate each day :)

When 3PM rolled around I was in a munchie mood, so I had this crisp, juicy apple while I studied some functions during my afternoon break at my desk,

along with a piece of Cabot’s newest edition to their cheesy family

SERIOUS snacks.

I hightailed my butt to the gym at 4PM and got into the fitness center for a quickie elliptical warm up before practice started at 5PM.

I also did some crunches and some floorwork for the abdominals.

Before I knew it, practice was over and I found myself in the locker room trying to get a good shot of my HR monitor.  Since class starts back up again this week, I won’t be able to stay until 7 when practice ends :-/ Bummer.

Helen’s Kitchen Vegan Chicken Steak with reduced sugar ketchup, kale, Tribe Forty Spices hummus, and mushrooms between two slices of Rudi’s 100% Whole Wheat toast

I tore into my lunchbox in the car, where I had my dinner stashed.  I don’t even have to think twice anymore about packing two meals for the day instead of one.

A good old bag of veggies (snap peas & sliced red pepper) and to finish me off, I ended on a sweet note with this soft, ripe pear.

I had class from 7PM until 8:15PM, after which I drove home, packed lunch, and hit the hay…

OH YEAH.  And I had a pumpkin milkshake (1C. unsweet almond breeze, 1/2 C. canned pumpkin, 4 ice cubes, and some sugar free vanilla syrup + cinnamon) with a slice of Dark Chocolate Dreams toast.  But no photos.  They’re totally against paparazzi :-D

Good news for the day!?

  1. I got a 95% on my most recent math test!
  2. Toddy is doing WONDERFUL on his Insanity weight loss program.  Here are his most recent stats:

Weight 170.2

Body Fat – 22.0%

Starting numbers – 181.6 & 26.6%

2 weeks left of Insanity

3.  I’ll leave you with this photo for all of you baseball fans to envy over ;)

It was a ball from the Phillies’ game!

Can you believe it’s the last Friday in January 2010 already? Sometimes I really feel like life is on “fast forward”…

To start off the day on the right foot here’s the daily Bible verse for you!:

“But those who hope in the Lord will renew their strength.  They will soar on wings like eagles; they will run and not grow weary, they will walk and not be faint.”  ~ Isaiah 40:31

Good verse for a Friday after a long week, huh?

I’m going to start by sharing my breakfast with ya’ll because it was totally EPIC.  I got my Jayy Robb protein powder in the mail two days ago, and have been excited to use some since I opened the package.

Pina Colada Protein Shake♥

What better way to start a Friday than with a Pina Colada in the morning?! :)  This was a combo of 1 pkg. Jay Robb Pina Colada Whey Protein + 1/2 C. Fiber Select + 1/2 banana + 4 ice cubes + 2/3 C. water [210 calories, 29g protein, 1g fat, 19g fiber].  Incase you were wondering, I’m in love with this man.

Now we can get back to what went down last night.

I’ll bet you can guess what I had for a snacky to fuel my bike riding obsession last night?!

Yep.  You guessed it.

Another Jonagold.

Then I hopped on the bike and got a nice workout in.  I watched Monsters, Inc. and facebooked until it was time to shower and get ready for the little sister’s basketball game [burned 500 calories].  I feel like such a slacker sister when I miss her games.  After all, she has been at almost all of mine!

Before leaving for the game, I finished off what was left of my fat free cottage cheese combined with some Tomato & Basil Marinara sauce:

FF Cottage Cheese + Marinara = Healthy Lasagna

I swear it tastes exactly like lasagna.  Not so photogenic, but very yummy.   I was running short on time because the fam. wanted to leave by 6:45PM, since the game started at 7, and I had just gotten out of the shower at about 6:20PM.  I grabbed some Miguel’s Honey Plantain Chips since I knew I wouldn’t have time to whip anything up.

They are SUCH a guilty pleasure.  Perfectly sweetened.  I munched on them while getting ready.  I drank tons of calorie free flavored water at the game.  Our Giant sells them by the liter, and I drink them ALLL the time.  Key Lime is my fave.

Our team played great and beat the most competitive team in the league!  I was really proud of my little :)  She rocked the court.

Afterward, the family went to visit with my Godparents who are driving to Florida, as I’m posting this.  Remember when they were down last time and I went to visit them soon after Thanksgiving? We wanted to see them before they left!

The family went to Pizza Delight since they were craving some post game pizza, while I conjured up by own little snackies at home.  They ordered buffalo chicken pizza and a cheesesteak to share.

Buffalo chicken pizza in all its greasy goodness. [cheesesteak unpictured]

I passed and opted for my own post game munchies:

Steamfresh Sugar Snap Peas

[yep, the entire bag :D]

Dr. Mc Dougall’s Lentil Soup

The entire box of Dr. McDougall’s Lentil Soup.  I was finally satisfied :)  We hung out together for awhile until we all got sleepy.  I fell asleep around 10:30 and slept like a babe.

Tonight’s agenda is still up in the air….I might be getting together with a friend, but I’m not sure what the plans consist of!  All I know is, I’m glad it’s friday!

Have a goodie! :)

Giveaway Winner & Hump Day!

Posted on
Good morning!  I hope all of your days started out well!  I know mine did!  I woke up to a beautiful breakfast of:

Greek yogurt with frozen berries & fiber one sprinkles :)

Looks like we’ve got a winner for the applesauce giveaway from last week:

Jess from Jess Likes It Hot said:

“Ahh yayy!! I really want to try mixing the apple sauce with cottage cheese soon! And looove that its a complex carb which gives me some extra energy in my day”

Congrats, girl!  Please email your mailing address to freckledfoodielove@gmail.com and Musselman’s will be sending some goods your way soon! :)

Last nights eats were VERY random, let me warn you ahead of time.

Miguel's Exotic Plantain Strips
Miguel’s Salted & Honey Roasted Plantain Strips

Not exactly nutritional all-stars, but they were mighty yummy :)

I snacked on these with a Jonagold when I got home as a pre-bike workout.  I biked for about 2 hours total burning 650 calories.

After biking, I steamed some broccoli slaw in the microwave, topped it with 1/2 C. (50 calories, 0g of fat) of this awesome sauce:

Light Ragu

The flavor was insane for being a “light” sauce.  I could really taste the sweet basil.  It was awesome!  I also topped the bowl off with about 3/4 C. of fat free cottage cheese.  It was kind of off the cuff for a meal, but it ended up reminding me of the way lasagna tastes!  With the red sauce and riccotta cheese mixed!  SOOOO yummy.  And the sauce was perfectly sweet.  I will be remaking this soon :)  Foodie success!

Dessert was a deep chocolate Vitatop:

Chocolatey goodnesss.

After showering, I sat down to relax and enjoy the Biggest Loser.

I’m pretty sure these two are my favorite:

Sam & Koli

They seem to be so sweet & genuine.  Willing to do whatever it takes.

I packed my lunch for today:
