I’ve Got Soul.

As if the fact that it was Friday wasn’t enough to put a smile on my face, a co-worker from another program office with the State sent me this sweet, little hand-written note to thank me for doing a good job :)

It makes me feel really good to know that someone appreciates my efforts.  I don’t think she realized how much she brightened my day!

Friday night, I went to dinner with a friend from basketball.  He took me to Red Lobster and we had a really nice time.  Afterward, we just went home to hang out and watch a movie.  “Wanted” with Angelina Jolie was a pretty neat flick with lots of special effects, but I could’ve done without all the “f-bombs”.

With the weekend came some leisurely workouts with Shaun T

andddd some One Tree Hill episodes that I missed out on during the week.

 James Lafferty, you make a great Nathan Scott, but you’ve got some serious competition in the “Cutest OTH Character” department with Austin Nichols as Julian Baker.

UGH. I will be your Brooke Davis anyday of the week :) Ha.

Anywayyy,  I had a hankering for some soup, and found a bottle of French Onion mix in the grocery store.

I was surprised and delighted by the nutrition facts (per 1/2 c. serving- 40 cals, 0g fat, 4g protein) and the simple preparation (just mix with 1/2 c. water!)

I simply carmelized 1/2 an onion in some non-stick cooking spray, added the broth to the pan, and let it simmer for a little while until cooked through.  

I poured the soup over 1 1/2 slices of light multigrain Fiber One bread and of courseee, added a slice of fat free swiss cheese to the top for melty deliciousness.

Mmmmm.

 In other news entirely, I had another great find at Rite Aid this weekend!

Sunday I got to play basketball for threeee hoursss (and nine minutes ;) ) <3

And burned a crazyyyy amount of calories : 1058! Max HR 187

I had a sister date with the middle for her birthday.  We went to Jade, a chinese buffet and she tried her first piece of sushi!

I wish the would’ve had some with brown rice!  I would’ve enjoyed that.

Instead, I found some seaweed salad and started with that!

I love this stuff and haven’t had it for SO long.

Next, Randa went for some lomein and chicken & broccoli.

While I, on the other hand, took full advantage of the bar where you could mix your own bowl and have it prepared however you like it!  I opted for steaming, of course :)

I had another plate just like this one, only with chicken instead, and finished off with a tiny cup of no sugar added, reduced fat vanilla ice cream for dessert. 

 

I broke my fortune cookie and left it sit. I was just too full!  I hope that’s not “bad luck”!

After dinner, I treated her to a movie of her choice.  I was excited when she chose Soul Surfer, because I had heard such great things about it.

The movie was great, actually.  I was worried that it would be a flop since there were an overload of big names in the mix (Carrie Underwood, Dennis Quaid, Helen Hunt, etc.) and sometimes that can be overwhelming, but it was excellent.  I loved the several Bible references and scripture incorporated into the flick!  Totally inspirational…even more so, that it was a true story!

Needless to say, another successful, enjoyable weekend down!  Now for finals week…this should be interesting!

Top Ten From My Last Two!

10.  As you may remember, I mentioned that I found some goodies at the Consignment Store which just opened a grocery section.  This little gem was found there and snatched up for just $1.49!

After Thursday I started on it, and after this weekend I’m down to just 1/2 the bar.

Green & Black’s Dark Chocolate with cherries is pretty awesome, if I do say so.

Check out the chunkage of dried fruit in there!  It was sweet and sinful, yet tart.  I’m savoring each and every bit of it.  The stats aren’t too bad for chocolate either.  12 pieces for 210 calories.  I usually take 2 or 3 at a time.

9.  Catching up on my One Tree Hill episodes while working out!

The new ones come on Tuesday nights, so while I’m sitting in class from 6-8:45, the Tree Hill gang is lighting up the screen with their new episode.

Thank goodness for cwtv.com :)   Gotta love the early morning workout with no makeup and lookin’ like death.  Haha.

Between OTH & Extreme Makeover: Home Edition, I managed to stay occupied for a little over three hours on Saturday morning…which leads me to number eight…

8.  Barney Butter re-entering my life.

And at minimal cost, thanks to another Consignment Store find!

I used it to fuel my three hour elliptical maddness.

With some sugar-free strawberry jelly on a La Tortilla Factory wrap, heated in the microwave for about 20 seconds until melty & delicious.   Bring on the fats!

7.  A new favorite protein, which was also found at the Consignment Store.  I pretty much heard a ‘hallelujah choir’ when I spotted this on the shelf.

Only $10.89!! Which I put right to work after my cardio sesh Saturday to mend the muscles.

It was sweet, and reminded me of a carmely flavor, too!  Thanks to Janetha who inspired me to get this flavor ;)

6.  I tried a new “sauce” this weekend, which was absolutely fantastic.  IT’s funny, because I just got a comment from Missy letting me know that I should try Bragg’s Liquid Aminos…I had JUST picked some up at the farmers’ market less than a week ago.

I mixed her up with a little bitta sugar-free syrup and some chili powder and marinated some brussel sprouts & carrots in it.  After roasting my veggie babies in the oven at 375° for about 15-20 minutes, I arrived at one of the most delicious lunches I’ve had for a long time.

I even got to use my tofu xpress!  Is it weird that I like RAW tofu?   At least I’m not alone.  I was thinking of you, GC while I was eating it! 

Nom, nom, nom.  <–I don’t even like using that.

5.  Meeting this little man!  Jamison Bishop.

Our friends, Jay & Kami came over on Saturday night for dinner.  They just had a little boy and I hogged him a lot of the night…he’s only 2 months old!

There’s something so relaxing and comforting about holding a baby….more baby talk later ;)

4.  I rediscovered my love of tea this weekend.  Teatulia teas to be precise.

3.  An amazing message on Sunday morning from CLA’s, Pastor Wayde Wilson.

It was all about trusting God with what he’s given us and being generous with our money and “material things”.  It totally makes sense that we would be blessed more if we GIVE more.  I mean, if God gives us a little bit and we show Him that we will put it to good use for HIS purpose, He knows He can trust us with it and He’ll give us MORE. 

HE will ALWAYS provide.  We will NEVER need for anything if we hand our finances over to Him.

2.  Getting my car washed.  Lame but true.

1.  VISITING the bestie & BABY BOWMAN

…in the CRIB ROOM, which is ultimately one step closer to the door!

They are doing so well.  I’m so proud of Bowman!  He’s growing like a weed and he’s a little over 3 months old now!

Also, he’s in crib #31 now, which is MY favorite number!  It has been my basketball number for as long as I can remember.  He will be going in for some testing this morning, so please say a prayer for him!  This could be the big week that he finally gets to come home to his Phillies’ nursery!!

An Epic (ROOTS) Thursday.

Breakfast

It was an ordinary Thursday morning and nothing was standing in the way of my cereal and I

Optimum Nutrition Chocolate Mint SOC.

As I’ve said before, this is not just any other cereal.  By the time I get to work, I’ve already had about 114% of my DV Fiber :) HA.  Is there such thing as fiber overdose? If so, I’m pretty much doomed.

Over our break, my boss & I hit the Farmer’s Market together.  I snagged the usual suspects: alfalfa sprouts, cherry tomatoes, bell peppers, gala apples, some kiwi & peaches.

Lunch 

This is when my day became EPIC.  The generous people at Epic Roots sent me some of their beautiful, fresh mâche mixes to try out! 

I was excited by the mere look of the dramatic shapes, colors, and textures of this blend.  See what I’m talkin’ about?

 Wild Arugula is officially my favorite green of choice for salad from here on out.  It’s also described as a “Mélange of sweet and spicy greens“.  The crunch of the leaves tasted so fresh…I had the absolute finest, most crisp salad base I could’ve asked for.

 I mixed things up again!  Thanks to the inspiration of Epic Roots & Quorn (who also sent me the most AWESOME lunchworthy goodies EVER –> Turk’y Burgers & Chick’n Cutlets!)  With grilling season just around the corner, what better proteins could a girl ask for?!

 I packed some Epic Roots topped with alfalfa sprouts, some snap peas, broccoli, orange pepper, cherry tomato, and broccoli for topping my salad along with a sliced Turk’y Burger & some carby acorn squash microwaved until soft, topped with cinnamon & SF syrup!  I could NOT wait to dig into this lunch. 

Before I knew it the work day was over.  I went straight from work to meet Middle FF seester for a movie with some buds.   Our friend, Adam is visiting this week from Alaska!  We all decided to meet up for a little Russell Crowe action ;)

Good movie, but insanely long.  The movie started at 4:10PM & we didn’t get out until about 6:30ish!  I had a gala apple while I was in the theater & had some packed Oikos before I went in, but by the time I got home, my belly was rumbling!

After dinner, I was kind of bored.  It was almost 8PM, and I had missed the last One Tree Hill because of the see-off dinner for my Daddy at Fiesta Mexico.  I decided it was in my best interest to catch up on it ASAP and take advantage of my downtime by doing some biking & episode watching :)   HOLY COW.  SO glad I didn’t miss that one.  Hailey is out of her funk, Brooke is engaged, and Clay & Quinn are…SHOT?!?  UGH.  Drama, drama, drama.

Afterward, lunch was packed, a shower was had, and this girl collapsed in bed.

It’s official.  I have slain a live animal.  On my way to the gym yesterday after work, I hit my first squirrel :(   I swear it came from out of no where!! I was just about in tears.  I was praying that it didn’t suffer at all and I’m pretty sure it didn’t, considering I looked in my rear-view mirror and saw something pretty ugly.  This is going to sound absurd, but the blogger in me seriously contemplated going back to document aka photograph the accident so you guys could mourn the animal death with me. HA. 

Anyway, I guess we’ll start at the beginning

Breakfast yesterday was pretty boring.  But cereal is exciting for me!  Any other cereal lovers out there?!

In place of milk, I use water blended with 4 ice cubes + 1 scoop Cake Batter Optimum Nutrition protein powder.  LOVE that protein! 

When I got to work, I sipped on this AWESOME iced Caftea Birthday Cake coffee I mixed with a little SF Vanilla Torani Syrup at my desk. 

My snackTAXI is in the washing machine, so I shamefully opted for a ziplock baggie for my wrap!  Don’t worry, though, I use them over & over again!

Lunch was some steamfresh broccoli topped with reduced sugar ketchup with 3/4C. egg beaters + reduced sugar ketchup mixed, along with a La Tortilla Factory low-carb high fiber wheat wrap with a wedge of Sonoma Jacks pepperjack cheese & Splenda.

It’s the 2010 Pillsbury Bake-Off 100 Winning Recipes Cookbook!  Just a little reminder, you can actually WIN YOUR OWN by submitting a recipe on the Eggland’s Best site, as I announced in this post, by April 30th

After scanning through the pages, I got changed and hit the gym for an hour of cardio on the elliptical.  For some reason, I wasn’t hungry for a snack between work & the gym today. 

On the way home, I stopped at the grocery store, mainly because I was craving a big bowl of veggies for dinner and my produce stash was completely depleted.  

Dinner.

It was a huge, beautiful bowl with just about each color of the rainbow represented :)   Broccoli, cauliflower, yellow pepper, tomato, cucumber, and spring mix on the bottom.  I topped the bowl with homemade honey mustard (1/4 C. SF syrup + mustard to taste) mixed with 1 whole can of light tuna.  

Post dinner plans were to shower, pack my lunch, and relax.  Our house was finally alllllllmost finished.  Now all that’s left to do it put the trim back on.  The hardwood floors are in, the hallway/living room is painted, and all of our photos have been re-hung! Check it out:

After admiring all the beauteous additions to our home (props to Poppa Freckled Foodie!),  I decided it was time for dessert.  I picked up some fresh strawberries at the grocery store, and knew exactly what I wanted to make.

Holy yum.

For some reason I prefer my Vitatops cold/frozen as opposed to warmed in the microwave? All I know is, this was the perfect ending to my Monday!  I caught up on Dancing With The Stars and One Tree Hill while consuming this, which only made it that much more enjoyable.  There’s some crazy stuff going on in the OTH world!!  Totally scandalous ;)  

Any OTH fans out there?  I missed part of the episode, so fill me in!! Maybe I’ll watch it online tonight ;)

 

My Baby Is Home.

Yes, that’s right.  After work yesterday, I was able to pick up my baby car from the dealership again, since the TST treatment for the paint was finished….”Reunited and it feels so gooooood“… :) Haha.

When I got home last night, I had a quick snack to fuel my workout.  Unfortunately, my Jonagold stash is completely depleted.  I’ll have to go get some more on Saturday…For now, I’ll settle for this treat.

Then I went to the basement to get my bike on.  I went for about an hour, catching up on my One Tree Hill episode that was missed for the Girls Tell All night on the Bachelor.  Alex still pisses me off on that show.  She needs to just get out of the way and let Julian be with Brooke.  Okayyy, no ranting.

After my 600 calorie burning work out on the stationary, I got a shower and made some dinner.

Okay, I know how gross this looks, but I promise it was so yummy.  I just steamed a bag of broccoli, carrots, & cauliflower in the microwave, added some unsweetened almond milk, minced garlic, and minced onion, and blended on high for about 2 minutes.  I love the consistency, actually.  it’s smooth and flavorful.

Dinner.

The rest of dinner was fat free cottage cheese combined with sugar free mixed berry jam & jalapeno jam on top of a 100 calorie smart start whole wheat english muffin +fiber.

Obviously I hated it.

Then I decided I’d prep my lunch & breakfast for the next morning in order to achieve maximum sleep time :)  I absolutely LOVE fat free cottage cheese.  It tastes good with just about anything!

In the little black dress pink bag, I packed a whole can of french cut green beans (70 calories), a light wheat english muffin (100 calories), and in the little container there was 1/2C. ff cottage cheese + 1/4 C. lima beans + 1/2 tsp. ranch seasoning (115 calories).

Pretty wholesome lunch if you ask me!  I’ll be using the ranch mix to make a sandwich on my english muffin :)

Now for breakfast. There’s nothing like eating dessert first thing in the morning, so I decided on banana nut bread.

Banana nut protein powder + water + fiber one.

Mmm.  This always hits the spot.  I mix the protein powder with a splash of water until it reaches a pudding consistency.  Then I mix in the fiber one cereal and refrigerate it overnight.  It ends up like one big cookie, almost! 

The perfect start to my day.

Snow Dayy!

I just kept thinking to myself yesterday morning, when is it going to stop?!
Thankfully, we were called off work.  I think it was kind of mandatory being that the entire state was basically in a snow emergency.  Spendell finally made a rational decision for once :)

 I got to sleep in until about 9:15AM, when I simply couldn’t sleep anymore.  I tottered out to the kitchen in my jammies rubbing my eyes and decided it was the perfect morning for pancakes.  Batter Blaster pancakes, to be exact:

4 small pancakes = 160 calories!

With sugar free log cabin syrup!  Perfect comfort food for eating while watching the snow fall out my window. 

Then I was bored.  I knew I wanted to wait until later to go outside and enjoy the snow, so I went downstairs to get in an early workout on the stationary bike.  I caught up on One Tree Hill, since I’ve been missing it due to the competition with The Bachelor & girls’ night.  This guy is such a charmer ;)

   600 calories and 1 1/2 hours later, when I was finished drooling over cutie pie up there, I was finished with my workout and needed a quick shower.  By the time I was all cleaned up and squeaky clean, it was time for lunch!  The family ate BLTs (bacon, lettuce, & tomato sandwiches) with creamy potato soup.  But I had something different on the brain.  I’ve been wanting to try this ever since I saw it on Janetha’s blog!  I swear we share tastebuds. :)

I adapted my own version because of lack of greek yogurt in my refrigerator, but managed to make it just as yummy!  I’m really sad that I couldn’t upload my pictures (STUPID COMPUTER) but I’ll give you the ingredients so you can try it for yourself! It was awesome!

Buffalo Chicken Salad Sandwich!

Ingredients:

  • 1/3 C. Fat Free Cottage Cheese
  • 1/2 Tsp. Ranch Seasoning
  • 1 Can Swanson Chunk Chicken Breast in Water
  • 1 Tsp. Texas Pete Hot Sauce
  • 1 Thomas 100 Calorie Smart Start English Muffin
  • 2 Slices Tomato

Directions:

Combine first four ingredients in a small bowl.  Halve the english muffin and top each with mixture.  Top each with a tomato slice.

As soon as I can, I will upload these pics.  It was AWESOME.

I also had some steamfresh veggies on the side in my big old Prgresso Soup mug that I won from Yum Yucky :)

It was a well rounded lunch!  I proceeded to unload and reload our dishwasher to help out the Momma.  Then I put some laundry away and cleaned up a bit.  I finally got my Under Armour gear on and headed out for a nice brisk 5 mile walk.  I took my camera and have lots of amazing pictures, but unfortunately they would not upload either!  Hopefully I can get this resolved tonight when I get home.  I love the way things look in the snow.  At mile #2, I passed my uncles house and stopped in to say hello.  My grandparents were there and I visited for a little while.   I wanted to make sure I was home by dark though, so I didn’t stay long. 

Leaving their house, I jogged the rest of the way home :)    A good three miles.  I passed some guys out shoveling/plowing and they were yelling things to me like “keep smiling” and “I thought I was hardcore“…haha.  I just can’t stand sitting around all day!  My Mom was working on taxes, my Dad was snow blowing, and my sister was on her computer all day.

and coffee. 

I sat down until about 6:30, watching NCIS with the little sis.  I got the munchies and decided to make a dinner of some loose veggies & salsa along with two 97% fat free Hebrew National Franks (40 cals. each)

After dinner, I vegged out for awhile, until the little sis got hungry for a milkshake.  I made her a chocolate covered strawberry milkshake and then made a plain chocolate one for my Mom, as requested.

A 100 calorie pack of Orville Reddenbacher KETTLE CORN!  Mmmm.   The perfect combo of sweet and salty :)   Then I went into a carb coma around 10PM, hoping for a delay from work in the morning and slept like a babe.

Well, the good news is, I’m alive! :)

And with that, I give you the verse of the day:

Last night was a bit rough and is a little hazy at this point.  Everything was pretty normal last night.  I got home from work, changed clothing into sweats for working out, chomped on a Jonagold,

burned a good 500 calories on the stationary while catching up on the One Tree Hill episode I missed to watch the Bachelor on Monday,

got a shower and made some dinner.

Whole Wheat Light English Muffin with Cinnamon & Splenda

Everything was going along according to plan.  I was going to pick up my friend, Rachael to go to the girl’s basketball game that my Dad was coaching last night, so I headed out.  On the way, there was a car spun out in the middle of the road, probably due to the fact that it was snowing (slightly).  I saw the car and slowed down to go around him, but lost traction while trying to turn back into my lane and did a complete 360 into the wall alongside the road, which was there to prevent falling rock.  I could feel my car was completely out of control, so I did the best I could to slow it down and brace myself for the hit.  My Dad thinks the car is totaled, but I was okay {photos to come}

After the accident, I arrived back home and couldn’t think of anything to calm my nerves better than a vanilla protein shake.  Thanks Jay, you’re always there for me ;)

Quick Week!

Well guys, tomorrow is already Friday!  Annnnd it’s a payday for this chica :)   I don’t know about you guys, but having Monday off really make the work week fly by.  I love it!

When I got home from work last night, I made myself a quick snack for workout fuel.  I won Yum Yucky’s Brown Minute Rice giveaway and just received my prize in the mail two days ago!  It was pretty exciting. Anyway, I heated up the rice in the microwave, removing the plastic covering, and then sprinkled a packet of splenda into it with a little bit of cinnamon.  It made for an awesome treat!  It reminded me of rice pudding, actually.

Then I got to work on the exercise bike.  I breaked after I had burned about 300 calories and snacked on a Jonagold Apple that I bought at the Broad Street Market yesterday on my lunch break.  I love the Farmer’s Market.  You can support local farms and get great produce for so much cheaper than in the grocery store!  I bought this apple, 3 kiwi, a box of baby bella mushrooms, a cucumber, a yellow pepper, and some brussel sprouts for about $5!

These apples are simply to die for.  My friend, Jan, brought them to our family’s New Year’s Eve party this year with caramel apple dip, but these apples were SO yummy on their own that I couldn’t imagine ruining them with some sugar laden artificial caramel dipping sauce.  Ever since she introduced me to them, I’ve had an eye out for this type of apple.   They never sell them in the grocery store, but I had a feeling if I looked they would have them at market!  I think I literally shrieked a little bit out loud when I spotted them!

Anyway, after refueling, I got back on the bike, facebooked for a little while,  and watched the One Tree Hill episode that I missed since The Bachelor is on at the same time, Monday nights.  Now I’m all caught up!

When I reached about 90 minutes on the bike, I jumped off in excitement, knowing that I wanted to try a recipe I saw at Beek Eats as a side dish for my dinner!

Yes, that’s right.  They are as tasty as they look!  And SO easy to make.   All you do is de-leaf the brussel sprouts (I only used about 6 sprouts).

Raw Brussel Chips

I tossed these little guys in a large ziplock baggie, drizzled a little bit of Log Cabin SF pancake syrup in the bag along with a splash of balsamic vinegar to coat.  Then, I spread them on a non-stick baking sheet and baked them in the oven until browned.  The oven was at about 350° for about 20 minutes.  You can experiment with oven times based on your particular appliance. 

I showered while they were cooking and then threw together this bowl of raw veggies to accompany the brussel chips, swimming in some strawberry balsamic dressing.  I also added 1/2 C. butter beans to the dish for protein!

For dessert, I ate these AWESOME sugar free black cherry jello bites from Sheetz.  I ate the entire bag for just 45 calories!

We enjoyed watching the little sister’s basketball game and they really kicked butt last night.  My friend, Rachael came with us to the game and it was a good time.  When we got home, I packed my lunch & prepped my breakfast for today.

Breakfast:

1/2 C. FF cottage cheese + 1/4 C. blueberries + drizzle of SF syrup + fiber one topping (unpictured)

Lunch:  Same as yesterday.  Sorry I’m a boring lunch blogger.  I’ll make up for it at dinner, promise! :)
