The Original Brat Hans have been sent to me previously for reviews (here)  and I can personally vouch for the fact that they are not only delicious, but wholesome, too!  Not to mention, their Sweet Apple Chicken Sausage (my personal favorite!) is the ultimate Fall flavor. 

Check out this recipe, and tell me your mouth doesn’t water.

Coleman Organic Apple Sausage Quesadillas

Ingredients: 2 tablespoons canola oil, divided

1 medium orange, yellow or red bell pepper, cut into ¼-inch dice (about 1 ¼ cups)

2 Coleman Organic Apple Chicken Sausages (6 ounces), casings removed and sausages coarsely chopped

1 cup Cabot 50% Reduced-Fat Shredded Cheddar Cheese (4 ounces)

1/2 cup fresh or frozen corn kernels, thawed

2 tablespoons all-natural barbecue sauce

Five 8-inch flour tortillas

Instructions:

  1. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Cook the bell pepper, stirring frequently, until soft, 5 to 7 minutes.  Add the Coleman Natural Organic Sausage, reduce the heat to medium, and cook until heated through, an additional 2 to 3 minutes.
  2. In a bowl, stir together the cooked bell pepper and Coleman Natural Organic Sausage, cheese, corn kernels, and barbecue sauce. Spread the mixture evenly over half of each tortilla. Fold over, press down gently, and set aside.
  3. Heat 1 teaspoon of the oil in the skillet over medium-high heat (you may want to wipe out the skillet first). Add two of the quesadillas and cook, pressing down occasionally with a spatula, until the tortillas become crisp and golden on the bottom, about 3 minutes. Flip the tortillas and cook an additional 2 minutes.
  4. Repeat with the remaining oil and quesadillas. Cut into halves or quarters and serve.
Nutrition Information per Serving:  360 calories, 16g fat (3.5g saturated, 0.4g omega-3), 750mg sodium, 34g carbohydrate, 2g fiber, 27g protein, 30% vitamin A, 80% vitamin C, 15% calcium, 10% iron

Coleman Natural Chicken Meatballs!

You know, I don’t particularly enjoy red meat.  Chicken, however is another story entirely.  If you remember awhile back, Original Bran Hans won me over with their chicken sausages, but they’ve got something as equally delicious that I had the privelage of trying out, thanks to Shaina and the company! 

 

 

ALL-NATURAL GOURMET CHICKEN MEATBALLS.

These are ultimately the most delicious form of a meatball that I have ever tried.  Quite honestly, I’m super pleased that the company doesn’t use any MSG (monosodium glutamate), fillers, nitrites or nitrates, antibiotics or preservatives in their chicken products. These meatballs are fully cooked (easy to throw ontop of a salad or into a bowl of spaghetti squash!) and have a very simple ingredients list, which means everything in them is totally recognizable.  LOVE that.

Although the sodium is a bit high, as with most prepared foods, all the other stats are super impressive.  Realistically, for 14g of protein, and just 150 calories, you don’t get this kind of flavor, let alone convenience!  Not only that, a serving size is FOUR meatballs.  Pretty awesome, if you ask me ;)   The meatballs cook up nice and juicy, even in the microwave and have a flavor that will blow you away.

My favorite flavor was the Spinach, Fontina, & Roasted Garlic meatballs!  They were laced with delicious cheese, wilted green spinach, and a perfectly seasoned garlic taste that I couldn’t get enough of.

The most important meal of the day was probably the most delicious meal of the day today.  I typically like a sweet breakfast as opposed to savory, so I whipped up a sweet wrap & a mini vanilla chai sludgy drink to wash it down with.

3 egg whites microwaved and wrapped up with a tbsp. of sf apricot jam in a La Tortilla Factory Whole Wheat wrap.

Green sludge?  1/2 frozen banana, 1/2 scoop AM Vanilla Chai, & 1/2 C. unsweet almond milk with a splash of water and a few ice cubes

A breakfast fit for a queen!  THIS was exceptionally filling, and held me well until lunchtime.  Much more satisfying than yesterday’s breakfast

I had an eye doctor’s appointment to order new lenses and ended up choosing two for $100 at America’s Best!

I decided that I only needed the “anti-scratch” sealant on the “good pair” since it was an additional $40.

Lunch was all packed up and waited in the refrigerator for me until I arrived back at work after my eye doctor appointment!

And boyyy was it good!  I always remove the casing off of the chicken sausages.  For some reason it really grosses me out!  Haha.

Alll packed up.  Now can you see how monstrous the salad actually is??? Clean plate club = win!Anddd I didn’t leave one morsel in the bottom of the container. 

Yesterday our FINAL GRADES were posted online!  I checked out my MATH scores and much to my excitement…

 

Anyway, I was not really hungry when I got home, but munched on an apple anyway,  well because I love a sweet, crispy gala apple for a snack.  There’s no photo proof, but it sure looked a lot like this:

Anddd then I packed up a delicious dinner for consumption at the ball park.  Not a fan of anything that they really serve there, and I don’t want to pay for something that doesn’t even TASTE good to me.   Soooo another chicken sausage was on the menu! Yes, I’m a repeat offender.

GOSH the basil pesto was an awesome addition to the wrap!  It reallllly hilighted the flavors and spices in the chicken sausage and this flavored wrap was perfect with the flavor combination!

I also scrounged up some celery, carrots, and sliced red pepper to bring along.

And then we were off to the ball game!  It was a beautiful night, and the Senators were playing the New Britain Rock Cats.

When we got there, the gang got their food awhile and we found our seats.  I loveee spending time with these guys.  SO much fun!

Going into the 9th inning, the Senators were up 3-1, so things were looking good on the homefront! 

The whole night we had been playing baseball bingo, where each of the numbers corresponded with a play in the game (ie. if the catcher hit a single, one of the numbers got punched out.); The codes were on the back of the card.

Everyone joked that we wanted New Britain to catch up so that the game would go into extra innings and we could keep playing baseball bingo! 

Our wishes came true!  Through a series of embarassing errors by the second baseman & pitcher, they ended up scoring 2 runs, making for a tie ball game!

Between innings, the KISS CAM came on, and guesss who it found?!

This cheeseball and I were front and center on the BIG screen for everyone to see our big smoooch.  :)   It was kinda cute, actually.

Unfortunately, the Senators ended up LOSING the game, but it made for a great (triple?) date night!

Some mornings, I know exactly what I’m craving for breakfast.  Others, I throw something together incorporating all the important parts:  whole grains + lean protein + maybe some fruit, and pray that it tastes alright.  Sometimes it hits the spot, sometimes it leaves me feeling unsatisfied.

2 Low Fat Whole Grain Eggo waffles + 2/3 C. plain oikos + de-thawed frozen strawberries  + sprinkling of Fiber One cereal.

I practically licked my plate clean Does anyone else ever feel like when they go out for breakfast/lunch/dinner that the meal they get is always disappointing??  After the server brings our orders, I always think to myself…I could’ve made this SO much better than what they did…and for a lot cheaper!

Take lunch for example:

Lite Costco turkey breast on a whole wheat flat wrap with spinach & salsa + cucumber fries, baby carrots, mini bell peppers, & salsa for extra dippage.

I guess it has something to do with the fact that I like to know exactly what is going into my meal, too.  If I’m the one putting it together, I know the in’s + out’s of every ingredient used.  If you think about it, even when restaurants post nutritional information, that doesn’t GUARANTEE anything.  They can put whatever they want in there while it’s back in the kitchen, and you may never know.  An extra tbsp. of oil here, a dollop of butter there… Do you really think that the cooks are extra careful when preparing NUMEROUS entrees all at once whether they level off the measuring cup perfectly everytime?  Am I the only one with menu paranoia?

Enough rambling.  I’ll just let you drool over my mid-day snack after work.  Nanner softserve + cinnamon = heavenly.

After snackage was complete, I biked for about 40 minutes burning about 175 calories.

I didn’t want to overdo it workout wise, because I knew I had a sand volleyball game at 7:15 and wanted to be tip-top energy wise.

After the bike sesh, I made some dinner.

Baby spinach + sliced baby bell peppers + cukes topped with mango-peach salsa from Costco.  Momma FF picked it up for me on her travels! Thanks Momma :) For protein, I had a sweet apple chicken sausage Original Brat Hans style.  mmmm.

Also eaten along side a small bowl of Fiber Gourmet (the last of it!-RIP)

Sprinkled with 1 1/2 tsp. of nooch and sprayed x4 with ICBINB spray.

Off to my game I went! It was looking like rain all night, but fortunately, the Lord held off until I was safely back in my driveway after the match.  We didn’t play so hot last night.  Lost 3 for 3 :(   I guess you can’t win them all, but we couldn’t get a ball to fall in bounds to save our lives!  It was rough, but still lots of fun because my team is a blast to be around.

1 slice sourdough toast + 1 tsp. peanut butter + drizzle of SF syrup.

When I got home, I had a late dessert, showered to remove all the sand incrusted in each little crack of my skin, made lunch for today, and hit the sack. 

Washed down with 1/2 bottle of Mix 1 that I was sent to review…MmM good!  Unofficially, I lurveee this protein drink…more to come & details in the review!

Just another day in the life…BEACH IN TWO DAYS!

Back to my other questions, do you ever get restaurant paranoia or wish you had created the meal you ordered with your own two hands & ingredients??
