My Weekend With Zorro & Giveaway Winner!

Posted on

First, let me just start by saying, I got to spend most of my weekend staying with my Aunt, spending time with this handsome little devil.

Zorro!

But I’ll start at the beginning and keep you in suspense until the end of the post when I’ll anounce the Oxygenfit winner! ;)

Friday night, I went straight to the gym after work.  I packed a granola bar to fuel me through it.  Running on the elliptical for about 8 miles (650 calories) at levels 7 &9.  After the gym, I headed home for a shower and prep before the high school spring musical that my cousin had a role in.

Once Upon A Mattress: The REAL Story of the Princess and the Pea.

It started at 7:30PM, so I had to hustle a bit, causing me to forget about my life as a food blogger and eat a bowl of cereal & protein milk that was not only boring, but also went unpictured, along with my sweet veggie soup, apple, & light cheese.

The play was fantastic.  The kids really did a nice job.  Very cute!  I have a video I’m hoping to upload tonight!

Saturday morning, I woke up around 7AM and went to the gym after I ate 1/2 granola bar.  I did the typical hour on the elliptical,  then came home starving.  I made a cake batter Optimum Nutrition protein shake & got a shower.  The camera was charging up for my trip to Lancaster, so I don’t have any photos because I’m a slacker.   Right before I left, I had a green monster with frozen spinach, 1/2 C. frozen berries, & 8oz. diet V8.

Good thing I did, because I didn’t end up eating anything until about 2 PM after I got to my aunts, was greeted by these cuties:

Coleman.

+

Jack.

settled in, and went to destroy the local Giant’s salad bar.

Baby spinach, cucumber, peas, onion, beets, chickpeas, imitation crab, cantaloupe, watermelon, honeydew, cauliflower, broccoli, cherry tomatoes, & mushrooms.

I was famished after the cardio that morning and it was catching up to me!

My Uncle Ed’s parents were also coming to visit them, and we all went to dinner together after relaxing & catching up  for most of the day, around 5:30PM.

I highly recommend if you’re ever in the Lancaster area that you try this restaurant.  At Scooter’s, our waiter was sooo accomodating and patient with us.  He even managed to get me EXACTLY what I was craving for dinner!  Not to mention, the place had quote decor all over the walls to keep us entertained.

The table got some appetizers to share which included these three things.  I wasn’t really into them, and didn’t partake, but they didn’t look bad!

Philly Cheesesteak Egg Rolls
Mozzarella Sticks

For my entree, I ordered 1 lb. of steamed shrimp from the appetizer menu

I could only eat about 1/2 of this plate and saved the rest for the next day at lunch!

and asked our waiter to hook me up with a salad, not on the menu.  One with just a boatload of veggies on it served with balsamic vinegar on the side

Baby spinach, cauliflower, carrots, onion, steamed green beans, mushrooms, broccoli, cucumber, & tomato!

Twas EPIC.  He did a PERFECT job.  Sorry for the blurriness.  The quality of produce in Lancaster county is absolutely awesome.  Seriously, they’ve got tons of options for groceries, too.  Lots of organic/wholesome markets!  Oregon Dairy, Stauffer’s, etc.

Cherry, cream cheese, and chocolate chip cookies.

For dessert for the gang, we stopped at Giant and picked up some pastries to eat with coffee when we got back to the house.  I’m not a fan of them, but Uncle Ed’s parents seemed to like them!

Coffee set up!

Instead of pastries, for my dessert I ate a little cup of SF, ff vanilla ice cream with my coffee.  Probaby 1.5 servings for 105 calories.

dessert!

I also had a Deep Chocolate Vitatop since I was lacking in the whole grains department!

Sunday morning, I went to church at The Worship Center with an old friend.  An ex-boyfriend, actually.  Ha.  Oh how things have changed…Before I went, I ate this yummy bowl of Fiber One + Muscle Milk light from the 100 calorie packs I got from the Easter Bunny.

Simplicity.

Anyway, I really, really enjoyed the service.  The church was very contemporary and friendly.  The praise portion was AWESOME.  I loved the songs we sang, and the energy was consuming.  They had a guest speaker, RT Kendall, who preached on forgiveness and used the story of Joseph & his brothers as his example in the Bible.  It helped me realized that there are some people in life that I guess I haven’t TRULY forgiven yet.  Even though I said, “I forgive you”, my heart wasn’t completely submissive to the idea.  There were several steps in the process that I missed.

Check out the podcast!

After church, we went to the grocery store, I ate this baby apple before we left.

gala.

We made lunch upon our arrival home.  I had my leftover shrimp & a big ole’ salad.  I had to take advantage of all the awesome Lancaster county veggies while I still could!

YUM-O!

I topped this with 1 calorie per spray honey mustard & ate a Deep Chocolate Vitatop for lunch dessert :)

After lunch, we took another adventure to Jenn’s Pottery Den!  Cole had been itching to go there, and I was pretty excited too! I love these paint your own pottery places.  After much consideration of what to paint, thinking about all the different options that I would be able to use on the blog, I decided on a giant bowl.  Figuring I’d use it for many concoctions in the future.

My stuff.

I painted the base layer lilac and on the outside used a black crackle paint so the purple underneath would show through.  On the inside, I did deep purple & black polka dots with a rim around the top of sponged black & deep purple.  I can’t wait to see what it’ll look like!  We should have  them back in about a week.

Jen’s also had the option of throwing your own pottery on the wheel and creating glass or gem mosaics.  I can’t wait to go back!  I’m DEFINITELY going to try my luck at the pottery wheel.  The last time I got the opportunity to do that was in college!  I LOVED art class.

Afterward, it was about 5:00PM and we headed to the store because I was telling my Aunt about how awesome Skinny Water is, and she really wanted to try some flavors!  Full review here ;)

When we got home, my Aunt cooked up some chicken for on top of salad for dinner:

Isn't she adorable!? I love her so much!

while Cole & I conquered the world.

Two peas in a pod.

Guess we worked up an appetite!

Chicken, sauteed shroomies & onions, cukes, carrots, baby spinach, yellow pepper, & tomatoes.

glorrrrrious.

Dessert? yes please!

Cantaloupe, honeydew, & watermelon.

This redefines fruit cup :D

Plus a chocolate Vitatop agaaaaaain.  Is it possible for chocolate to NOT taste good? I think not.

After a fun filled weekend, it was time to head back to good old Halifax.

I got home, unpacked, packed my lunch:

L to R: honey mustard, greek yogurt + sf syrup & cinnamon, veggies, + Fiber Select.

Veggies included:

Baby carrots, baby zucchini!!!, cauliflower, cucumber, & yellow pepper.

Verse of the Day:

“[The Resurrection of Christ] Now, brothers, I want to remind you of the gospel I preached to you, which you received and on which you have taken your stand.”

- 1 Corinthians 15:1, 3-4

So, yesterday I got a few exciting packages in the mail!  I ordered a few Spring items from Old Navy.  What can I say?  There was a 20% off your entire purchase coupon & a free shipping offer!  I don’t typically like ordering clothing online because sizes vary so much these days, but I figured I could always return them at the store if they didn’t fit right.  Besides, my Spring clothes are few and far between, so a little shopping is justified, right? :)

Cute draped blue print top.

Terry cloth, white capris.

Anchor, black hoodie.

I got another top, but I think it’s going back.  It’s got NO shape

After trying on all my new clothes, I changed into a hoodie & some shorts so I was ready to hit the gym.  Then I made my typical workout fuel for consumption before leaving the house:

Green monster.

yum, yum.

I also grabbed an unpictured granola bar on my way out the door.

I spent an hour & five on the elliptical at level 7 & 9, which seemed way too easy.  I think my body is getting used to this workout.  Time to change it up!  Any suggestions?  Then, I went to the weight room where I used the ab crunch machine for 3 sets of 20 with 25lbs. moving EXTRA slow to feel the maximum burn (as discussed yesterday).

I used the back machine for 3 sets of 20 with 115 lbs

Then the ab incline bench for 3 sets of 15 each side (elbow to knee & then straight on).

I did a few stability moves on my knees with 5lb. dumbbells for 3 sets of 15 and then 3 sets of 25 “in and outs”.

When I got home, I was craving some good old cereal & milk.

Banana Split Cereal [220 calories, 25g protein, 16g fiber

To amp up the protein for muscle recovery, I blended some cake batter Optimum Nutrition protein with water & ice and a few drops of Banana Split Capella Drops!  It was like a banana split milkshake in my cereal!

While it was in the blender, I munched on a bunch of celery:

The remains :)

I knew I wanted some more veggies, but was craving something sweet at the same time, so I opted for sweet veggie soup which tastes just like brown sugar and oat bran.

The white, inward sections of the celery stalks are my FAVE.  The outer green ones taste a little bitter for my palate.

yes, it looks like baby feces.

Don’t knock it til’ you’ve tried it!

I packed up my lunch like the responsible adult that I am:

Veggie tub, egg whites + homemade honey mustard + flat out light w/ sonoma jacks.

The veggie tub consists of celery, cucumber, yellow pepper, cherry tomato, snap peas, & carrots (bottom).  Lately at work, when I’m assembling the flat out, I spread on the sonoma jacks, mash the splenda into it, and then add a few egg whites! Then I eat the rest of the whites with the honey mustard dressing & the veggies.  This is the LAST of the egg whites for a longgg time!  Tomorrow, I’m thinkin’ tuna!

<3 my pink BYO lunch tote.

In other exciting news, my family got a new stove!  I have yet to be permitted to use it, though.  My Mom hasn’t even gotten a chance!

It’s quite pretty, if I do say so.

By the time I was finished packing up, it was time to sit down and enjoy some dessert with the Biggest Loser.  Kind of ironic, I know.

Ice cream!

I put two spoonfuls of sugar free vanilla ice cream in my bowl and topped it off with sugar free blackberry jam +fiber from Polaner.  Don’t worry, folks, I made Jillian Michaels proud.  Yes, the name is linked, but if you don’t know who she is, shame on you! ;)

Sweet Leaf Diet Peach Tea!

After ice cream, I always need a drink!  Since this awesome stuff was delivered to me yesterday, I figured I’d try it out.  After all, peaches [tea] go with [ice] cream, right? This stuff totally hit the spot!

Don’t forget to enter my Oxygenfit giveaway!  It ends on Monday, so be quicklike! ;) Like greek yogurt?  Check out Anne’s Oikos giveaway, too!

Peace out, girl scouts!  I’m off to get some work done! Happy Hump Day.

Verse of the Day:

“For all have sinned and fall short of the glory of God, and are justified freely by his grace through the redemption that came by Christ Jesus.”

- Romans 3:23-24

Last night, I finally broke down and bought a membership at the gym in our town.  Even though it’s $39/month, I figured it was dumb not to.  I’m not sure how long it’ll be before I get the elliptical from my Aunt, and I don’t want to keep paying $7/day to use the equipment.  I figured, I’ll at least get my money’s worth!

Anyway, I left work early yesterday because I had a dentist appointment.  No cavities here! :)   It was just my 6 month cleaning.  When I got home I made some snacks to fuel my workout.

Green monster making at its finest.

Diet V8+frozen spinach+frozen fruit

+

Granola gourmet berry energy bar.

Don’t be fooled, I ate one whole bar.  This photo was just taken when I realized I forgot!  :)

I did an hour and five minutes on the elliptical at level 7.

Then, I hit the ab crunch machine.  I only used 25lbs. but I did 3 sets of 20 verrrrrrry slowly, making sure to get the best burn for my buck ;)   I’ve noticed that a lot of people at the gym, including myself, just “throw weight” around.  It was brought to my attention by a nice man on Saturday morning while I was there.  He reminded me that the better control I have while I’m lifting, the harder my muscles are working.  You can do 3 sets of 50 quick reps or 3 sets of 20 slowly and get a better burn for keeping your muscles contracted and not using gravity to your advantage.

After the abs, I did some side crunches, and 3 sets of 30 each on the hip abductor & hip adductor machines with about 100lbs.

When I got home, I started on dinner. I decided I was in the mood for beans, and I wanted to try this yummy looking blend that I got in the mail from Allen’s!

Seasoned Pinto Beans with Vidalian Onions

I grabbed my Oikos, chopped some lettuce, spooned out some salsa, and we were in business.  Check out my cutesy little assembly line!

the components.

After heating up the beans, I spread some on a Light Flat Out for a bean burrito & then topped my lettuce for a side salad, too!

bean burrito.

+

mexican salad.

I really loved the sweetness of the vidalia onions that flavored the beans!  It was perfect.  After I ate the main course, I packed my lunch to avoid double the clean up.  You guys are going to be SO glad…I’m officially on the last carton of hard-boiled eggs from Easter!  That means variety in my lunches again!  :D   I can hear you cheering from here.

veggie tub + egg whites & homemade honey mustard + flatout w/ sonoma jacks.

This time for my homemade honey mustard, I also added cinnamon.  I think it’ll make a nice touch.  It certainly tasted good when I licked the spoon after combining!

I needed something sweet for dessert, so I reached for the Oikos & spooned a few dollops into a bowl topped with some SF syrup.

dessert.

Tasted just like a caramel parfait….I should probably invest in stock with Log Cabin SF syrup.  I use it at LEAST once a day.  It’s just that good.

The rest of the night was spent organizing my closet!  Putting away Winter stuff & getting out all the Spring/Summer clothes that had been packed away!

Before bed, I also had an apple & some diet sweet tea, but it wasn’t very photogenic.  Just a basic golden delicious!

Make sure you check out Missy’s Yoplait giveaway of this cute polka dotted lunchbag!

What’s your favorite before bed snack?
