Dynamic Duos.

I’ll bet you’ve missed seeing pictures of my routine breakfast while I was gone.  I know I missed telling you about how utterly delicious this combo of peanut flour & banana.

1/3 C. raw oats, 1 smashed banana, 1/4 C. peanut flour, pinch of salt, & sugar free vanilla syrup

Or maybe you’ve missed my devotional sharing?  I’ve certainly missed feeding you all my food for thought on each one.

Denying God is something that I struggle with.  Not necessarily in the same way that Peter did, because I’ll tell anyone and everyone that I’m a believer…more so, in the fashion that I don’t trust everything to Him.  I have trouble giving up “control” in certain areas of life.

I got soaked on my walk to work yesterday, if anyone cares.  It was raining cats and dogs with a relentless wind that blew the precipitation right up under my umbrella.

By lunchtime, I was just “soggy”…it’s amazing how slowly a tiny space heater dries pants.

These cuties were pretty yummy! I found them in the frozen organic section of the grocery store and was craving something different than my typical packed lunches.

The stats and ingredients were pretty impressive, so I went for it.  Bragg’s Liquid Aminos were the perfect dipping compliment…another dynamic duo!

 Work was super busy, which I enjoyed, because it meant that the day flew by.  Mondays tend to do that in our office.  Call me crazy, but I’m not a Monday hater…are you?

Mid-afternoon, I had a snack that was more like dessert.  Dynamic duo #3, Udi’s gluten-free granola & fage greek yogurt.  Diced fuji apple was just like icing on the cake.

 I pretty much changed right into my gym clothes when I got home from work.  Shaun T and I really look forward to our dates after work :)   You know the routine by now…It was Insane Abs and then some biking & elliptical work.  It was a quick workout.  I had to finish up my FAFSA and get ready to host girls’ night, so I cut it a little short. 363 calories burned.

Dinner was next on the agenda. 

1 bag steamed broccoli slaw, fat free cottage cheese, light ragu, Cedar’s garlic lovers hummus, and lima beans

Another DD…Light Ragu and broccoli slaw…or, actually, Light Ragu and…ANYTHING.  I think it’s my favorite sauce/condiment ever.  I got a quick shower and before I knew it, guests were arriving for our weekly Bachelor ritual!

Yesss, that’s right.  Brad Womack and Emily :)   I think it’s funny that I’m so completely morally opposed to the show, yet I’m totally hooked on it.  It is a totally unrealistic way to fall in love with someone…I mean, who goes on a date in Africa for a safari ride?!  That isn’t real life, peeps.

Dessert was courtesy of Conscious Nosh…their Chili Maple Vanilla cocoroons happen to be MY other half, and I happily enjoyed it while watching Ashley get shipped home.  She’s a sweet girl, but something about her really annoyed me.  It was like she had ADHD when she spoke…very abrupt and in your face constantly.  Anyone else feel me on that?

Anyway, cheers to Emily & Brad.  Can’t wait to watch you get engaged :)

Snow Days = Awesome Breakfasts.

Typically in the morning, I’m struggling to throw together the quickest, most uncomplicated, yet nutritious breakfast possible.  I never allow myself any extra time in the morning for creating a treat like stove top oatmeal.  

(1/3 C. quick oats – that I chose at the store by mistake!, 1/2 C. almond breeze, 1.5 C. water, 1/2 whipped banana + half sliced on top, and peanut flour paste from 1/4 C. peanut flour, 2 tsp. unsweet cocoa powder, sugar-free vanilla syrup, and water)

I had this brilliant idea to mix in cocoa powder with my peanut flour today to make a fake “dark chocolate dreams” peanut paste.  AWESOME.  All thanks to the fact that most of Central PA looks like this today

And I didn’t make it in to work.

I had a Nutrition assignment to complete and send in by 7PM.  I’m not too sure about this whole, submitting projects online thing.  I hate that everything is so technologically dependant

After awhile, everyone was up and about.  Dad and I headed to get some groceries together at our local store.  Is it weird that I cherish each little outing that we have together?   

Even if he was on his cell most of the time…it was nice to be just hanging out with Pops.  We used to take a lot of trips together because of travel team basketball that I played, but times like that are few and far between anymore, as I’ve mentioned before.

Another win that comes along with snowdays = being able to cook on the stove for lunch!

Into my cooking pot went some water, chopped cabbage, kale leaves, yellow squash, mushrooms, a chicken broth boullion cube, onion powder, garlic powder, salt, and pepper.

 This had a mild flavor, which I really enjoyed.  It was warming and ideal for a snowy day lunch, alongside a grilled chicken breast with reduced sugar ketchup ;)

I also love the fact that the reflection off of the snow made my window-lit shots of my meals look so much more appealing!  Although, snow is SUCH a pain when you’re trying to get somewhere and make plans, I’m doing my best to just enjoy it.

I also had a slice of Forty Spices hummus soaked into Arnold 10grain bread.  This duo never gets old for me.

I meandered around the house, did some laundry, continued working on some Nutrition class projects, and did some other housekeeping things.  Truthfully, even on days off, I don’t like to plop in front of the TV and do nothing all day.  I get a bit stir crazy.

Snacking consisted of a mix of 1/2 C. banana nut and 1/2 C. chocolate Cheerios a little bit later with some Almond Breeze.  Chocolate covered bananas, anyone? :)

I figured, that since practice was cancelled, I could get a good sweat sesh going in the basement.  First up was Insane Abs, proceeded by some time on the elliptical while catching up on The Bachelor that I had missed the night before because of my game.

501 calories, max hr 197, 1 hour & 30 minutes & change

Not too bad for a workout in my basement, eh? :)

I wanted something refreshing afterward, so along with several chugs of water, I had some fat-free French Chocolate fro-yo from Breyers!

It was extra creamy and really hit the spot.  I was impressed with the nutritionals, too.  Only 90 calories in 1/2 C. with 0g fat.

 I got a shower and D came over for the remainder of the night.  The roads were terrible, so he spent the night.  We stayed up playing bananagrams and dutch blitz with the family…and I loved every second of it.

Somewhere along the lines, I ate a salad for dinner with some more cereal and an apple.  There isn’t any photo evidence, because usually when D is there, I forget about everything else…sorry, loves :)

Excitement.

If I haven’t told you yet, there’s a bit of excitement in my life as of lately.

Yeah, I get excited about wholesome, healthy food like my breakfast this morning in green monster form

(3/4 C. unsweet vanilla almond breeze, 1/2 C. canned pumpkin, 1/2 scoop vanilla whey protein powder, 1 handful baby spinach, 3 ice cubes, sugar free Torani syrup, & cinnamon)

I slurped this down in all of it’s Shrek colored glory and contemplated leaving my seafoam mustache for the entertainment of my co-workers.

Instead, I swiped a towel along my lips and packed up some twiggy cereal (Fiber Select) for munching on at my desk, mid-morning.

But hey, back to the excitementRemember back when I was torn about the fact that a guy I really cared about was leaving for Airborne school and immediately following, GermanyGuess what? He’s got three weeks leave.  And he’s already made his way to see me.  We’re getting together this weekend, too. :) :):)

On a very opposite end of the spectrum, some of you have asked for MORE pictures of me on the blog.  Not sure why, exactly, but ask and you shall receive.  Soooo this is me, unexcited…at my desk, staring down a huge pile of work.  Note: I like to match my cardigan to my morning smoothie…Ha.

That’s what I do.  Process paperwork.  All.Day.Long.  It’s not so bad, actually.  I’m being dramatic.  Love my co-workers, though.  Recently, one of them sent me an email asking me about my blog!  She apparently loves food blogs and came across mine in her readings!  How cool, rightHi Michelle :)

Lunch was a fabulous spread of leftovers from the dinner party.  I packed a hugeee salad with greens (spinach, lettuce, romaine), tomato, mushroom, cucumber, broccoli, and cauliflower topped with a naked chicken breast and MarDona Cherry Balsamic Glaze

You thought I was kidding about a HUGE salad?  You should know, I don’t kid about the size of my salad ;)

Then for whole grains I had a slice of 10 grain bread with 1 tbsp. fat-free strawberry cream cheese and a fuji apple for dessert.

After walking back to my car in the frigid 9 degree weather yesterday, I snacked on this Granola Gourmet bar on my way to the gym.  Ultimate Mocha Fudge was fantastic!  This company just started making individually wrapped bars which are totally convenient.  Thanks, Nancy! LOVED this flavor.

At the fitness center, I ellipticalled for about 20 minutes before some ab work.  Then practice began at 5, just as usual and 2 hours and 48 minutes later and I was down 839 calories with an average heart rate of 111. 

When I got home it was already time for girls’ night and the Bachelor!  Everyone was noshing on chips, cookies, and pretzels, but since it was at my house and I hadn’t eaten dinner yet, I rounded up some post workout refueling goodies.

A buncha egg whites swiped in some Forty Spices Tribe hummus and a few others filled with light Ragu.

I think that this episode of the Bachelor just verified what the girls and I had been talking about since the season started.  The producers are REALLY playing up the details of each girls’ fears, past experiences, and trouble areas.  For example, they survey the girls to find out their biggest fears and base the dates around them for optimal entertainment.  Biggest fear: heights = a date repelling down a sky scraper. Biggest fear: open water = a date scuba diving. 

 I guess that’s what you get for going on reality TV to find a husband!

I also had a big bowl of this cereal + unsweet vanilla almond breeze between commercials. 

Not a fan of the fact that sugar was second on the ingredient list for this stuff, but you win some, you lose some, right?

Pros vs. Cons

On a positive note, here’s your Verse of the Day :)

“But he knows the way that I take; when he has tested me, I will come forth as gold. My feet have closely followed his steps; I have kept to his way without turning aside.”- Job 23:10-11

On a little bit less positive note, I’d like to make a public apology for using Ash’s amazing Rush Bowl pictures.  She is truly a talented food blogger and photographer.  I guess I was a tad naive in believing that it wasn’t a big deal to borrow photos without asking.  I promise I meant no harm, and I am sincere and remorseful for to those of you that I’ve offended.  I am a newbie and I suppose for most of you its common sense, but I have learned a lesson and will no longer use a photo without asking permission.  Thank you for bringing it to my attention so I didn’t continue doing something harmful without realizing it.  I wish I had been told the first time that it happened so I wouldn’t have continued to do it!

Anyway, back to the positive.  The Bachelor is OVER! The pro:  We don’t have to sit through the torture of watching someone break good girls’ hearts, while the seemingly immature win out.  The con:  Girl’s nights with the family are over…unless we find a new show to watch!  Which is what I’m gunning for :)  I’m not even going to waste my breath ranting about Jake’s choice.  If that’s the type of girl he wants, then he doesn’t deserve a girl like Tenley anyway.

Pro:  My Dad fixed my stationary bike for me!  I was able to bike 600 calories off when I got home from work last night.  Con:  It may not live very much longer.

 

Dinner.

Pro: Dinner was epic.  My Dad took good care of us last night!  He had fresh greens, cherry tomatoes, sliced strawberries, pork chops, and baked potatoes.  (Baked microwaved sweet potato + sugar free brown sugar cinnamon torani & strawberry salad with asian silk 1 calorie per spray dressing) Con: I am now completely out of SF brown sugar cinnamon syrup

I also had a La Tortilla Factory Wrap filled with banana slices and Dark Chocolate peanut butter from Sunland Inc.  It wasn’t too photogenic, but tasted really delish!  Reviews on the peanut butter to come!  They also sent Raspberry & Banana infused peanut butters as well!  I can’t wait to try them.

After dinner, I packed my lunch for today:

Leftover salad from dinner + a few modifications.

I added some sugar snap peas, cherry tomatoes, sliced strawberries, and broccoli to my salad.

Then I packed a Quorn Turkey burger with a La Tortilla Factory wrap & a Sonoma Jack’s Pepperjack Cheese wedge.

Packed in a classy manner with a ziplock baggie :)

After the Bachelor I passed out pretty quickly.  I was soooo sleepy!

My Baby Is Home.

Yes, that’s right.  After work yesterday, I was able to pick up my baby car from the dealership again, since the TST treatment for the paint was finished….”Reunited and it feels so gooooood“… :) Haha.

When I got home last night, I had a quick snack to fuel my workout.  Unfortunately, my Jonagold stash is completely depleted.  I’ll have to go get some more on Saturday…For now, I’ll settle for this treat.

Then I went to the basement to get my bike on.  I went for about an hour, catching up on my One Tree Hill episode that was missed for the Girls Tell All night on the Bachelor.  Alex still pisses me off on that show.  She needs to just get out of the way and let Julian be with Brooke.  Okayyy, no ranting.

After my 600 calorie burning work out on the stationary, I got a shower and made some dinner.

Okay, I know how gross this looks, but I promise it was so yummy.  I just steamed a bag of broccoli, carrots, & cauliflower in the microwave, added some unsweetened almond milk, minced garlic, and minced onion, and blended on high for about 2 minutes.  I love the consistency, actually.  it’s smooth and flavorful.

Dinner.

The rest of dinner was fat free cottage cheese combined with sugar free mixed berry jam & jalapeno jam on top of a 100 calorie smart start whole wheat english muffin +fiber.

Obviously I hated it.

Then I decided I’d prep my lunch & breakfast for the next morning in order to achieve maximum sleep time :)  I absolutely LOVE fat free cottage cheese.  It tastes good with just about anything!

In the little black dress pink bag, I packed a whole can of french cut green beans (70 calories), a light wheat english muffin (100 calories), and in the little container there was 1/2C. ff cottage cheese + 1/4 C. lima beans + 1/2 tsp. ranch seasoning (115 calories).

Pretty wholesome lunch if you ask me!  I’ll be using the ranch mix to make a sandwich on my english muffin :)

Now for breakfast. There’s nothing like eating dessert first thing in the morning, so I decided on banana nut bread.

Banana nut protein powder + water + fiber one.

Mmm.  This always hits the spot.  I mix the protein powder with a splash of water until it reaches a pudding consistency.  Then I mix in the fiber one cereal and refrigerate it overnight.  It ends up like one big cookie, almost! 

The perfect start to my day.

“Elizabeth-I Do NOT Need A Therapist!”

The title of this post is in honor of Michelle on the “Women Tell All” episode of the Bachelor last night.  HAHA.  HYSTERICAL.  On a more serious note, Rozlyn really made me angry.  Chris Harrison was awesome the way he tactfully made her look ridiculous for lying about the relationship with the Producer.  She was awful gutsy for being the one who screwed up, and very rude. 

Lies, lies, and more lies...

Anywho, after work yesterday (I actually had to leave 1/2 hour early), I had to go to the dealership where I bought my car, drop it off to get the TST treatment on the paint, and pick up my rental car.  It’s supposed to be great for the protection and shine of the paint.  It was reccommended since my car is black, so currently, I’m driving a rental since it takes about a day for them to finish it.

Not a fan.  But I’ll have my baby back before I know it :)   Thank goodness.  Oh, and I met a cute boy who works for Enterprise (where the rental car is from).  He picked me up for our date to get the car at the dealership.   Ha.

When I got home, I ate a slice of Rudi’s 14 grain bread, topped with some mixed berry Sugar Free jam from Nature’s Hollow (faveee).

Along with a chocolate peanut butter bananer & a handful of frozen peas.

Then, I got to work on the stationary bicycle.  Burned 500 cals while searching for some new music.  Anyone have some good ideas?  I’m a fan of contemporary Christian music (love Sidewalk Prophets, Lincoln Brewster, Casting Crowns, Kutless, Jeremy Camp, Chris Tomlin, etc).  I like country and pop/rock, too though.

Anywho.  After that fun was over, I showered up, cooked microwaved some chicken:

Which I then topped with THIS amazing sauce:

THIS STUFF IS SO good.  And only 10 calories per tbsp!  It’s got the perfect sweet/spicy combination going on which makes it a perfect addition to the chicken! 

Then I steamed a bag of broccoli in the microwave and decided to make a broccoli soupish dish for along side my chicken.  It ended up being like a broccoli puree and tasted SOOO good:

I combined the entire bag of broccoli, 1/2 C. of unsweetend Almond Breeze, 3 tbsp. minced onion, and 1 wedge of laughing cow cheese.  It was perfectly savory and I ate every bite!  It reminded me of cream of broccoli soup from “The Special Place”, a restaurant nearby my town!  I’m sure they use lots of fatty cream and stuff in theirs though.  Mine was totally healthy!  And very thick & filling!

For dessert, during the bachelor I had a plate of fruit and a sugar free jello {unpictured}. 

 

President’s Day!

It was SO nice to sleep in on a Monday morning for once!  Having Monday off always makes the week seem to fly by!  I was looking forward to a day out with Dad, car shopping!  But first things first. 

For breakfast, I grabbed a chocolate Vitatop slathered in Better N’ Peanut Butter.

After biking off about 400 calories, I knew I needed to refuel :) [THE BEST PART OF A WORKOUT]

My weapon of choice?  Jay Robb could satisfy, so I went with a vanilla protein shake.

 I also did a little bit of ab work before I got a shower including some planks, sun salutations, and bicycles.

Then it was time for car shopping with Daddy-0!

First stop, Sutliff Cadillac/Hummer.

I saw this Mercury Montego online and loved it!  I was looking for something classy, with decent mpg, and AWD, but I didn’t want an SUV.

Not to mention,  it’s a full-sized car and fairly heavy (safe).  Unfortunately, the price was a little out of our range.  I truly loved it though.  Fully loaded with everything you could ask for.  We took it for a test drive and everything.   I just figured, it wasn’t meant to be!  Unfortunately there weren’t any other noteworthy cars found, in addition. 

We grabbed some Sheetz for lunch.  It was quick and convenient.   One of the better things I’ve gotten from sheetz, actually!  Unfortunately, I didn’t have  my camera, but it looked something like this, minus the olives + turkey ;)[source]

It was the Chef Salad on the MTO menu, but I asked for all turkey instead of ham, and without cheese or croutons.  I didn’t even need dressing!  The veggies flavored it perfectly.  Romaine lettuce, tomatoes, cucumbers, pickles, banana peppers, green peppers, and jalepenos with a little salt, pepper, and oregano.

From there, we did a few more drive throughs, but didn’t find much else.

I came home, cleaned a little bit, did some laundry and by that time, I was ready for dinner.  I made a nice little whole wheat wrap with cottage cheese, cucumbers, tomatoes, and had some baby carrots on the side.

Then, I had a serious craving for green beans about an hour later, so I ate a can.  Yes, a can :)

I made another Fireman’s Apple Pie for serving to our guests at girl’s night and prepped everything to make it “Bachelor” watching friendly.   It ended up snowing, causing people to be too scared to come out in the weather so we just watched it ourselves, in the comfort of the basement & on the big screen.  It was just my Mom, my cousin, Renee, and I:) Still fun!

I had some pumpkin fluff for dessert while they enjoyed the apple pie with vanilla icecream.  They don’t know what they’re missin’!

GO HOME, already!

Okay.  Before I get to all the good stuff, I’ve got to rant about Vienna.  She NEEDS TO GO.  I cannot believe he is keeping her around.  Not only is she too immature to handle an adult relationship, she could NEVER be marriage material for Jake.  She’s too needy.  Almost desperate for him.  What does he see in her?!?

He is disappointing me left and right!

Anyway…here’s the verse for the day!

Many of the things we anticipate and dream about are much less glorious in real life than they were in our imaginations. There is one event, however, that is better than we can imagine and beyond our wildest dreams. When Jesus returns to take us home to be with our Father, it will be far better than we can ask, imagine, dream or think.

Last night when I got home from work, before all the Bachelor drama began, I ate this beauty:

Then I got to work on the stationary bike.  I burned about 300 calories while facebooking and surfing the web, and then I took a potty break and prepped my dinner.  I knew I was hungry for roasted veggies, so I took out the remainder of my brussel sprouts, quartered them, and tossed them in a ziplock baggie with balsamic vinegar & sugar free maple syrup. 

I sliced 1/2 a sweet potato thinly and placed them on the sheet as well finished off with a dab of sf syrup on each and a sprinkle of cinnamon.  Cheetahs are the best! 

My dinner last night: Cheetahs, roasted sprouts, and the grand finale....rice pudding!

For the rice pudding, I combined 1 cup of Minute Brown Rice and one container of Voskos Greek Yogurt with 1 packet of Splenda and lots of cinnamon.  I added a few raisins to mine too!

After dinner I went back downstairs to finish up my bike workout, burning an additional 250 calories

We headed to my Aunt’s for the Bachelor around 7:30 after I showered, where she had a ton of goodies!  I stuck to cucumbers, salsa, & red pepper slices with a few grapes on the side ;) {unpictured}

Getting Down To Business

That must be the theme of The Bachelor this year!  I’ve got to say, I’m thoroughly enjoying it!  Finally a guy who doesn’t play games and knows what he wants (and what he doesn’t!).  The only thing I can complain about is the fact that VIENNA is STILL there.  Who knows, maybe the producers made him keep her for ratings?  She’s ridiculous.  I’m gunning for Tenley.  I like Ali though, too.

He got rid of three extra girls, total last night! Way to go, Jakey!

In other news, there’s a nifty little giveaway going on that Total Fit Girl is having for some Crofter’s Superfruit Spreads!  I’ve been wanting to try these for awhile now, so don’t win…kay? :)

 Now, on to the eats last night.

Who knew something as simple as an apple could be so exciting for a girl? Haha.

I got home from work, changed clothes, grabbed a Jonagold snack, and hopped on the stationary.  I didn’t seem to tire out at all last night, thanks to those complex carbs in my lastest obsession, so I biked for about 2 hours while facebooking and working on my newest article for The Examiner.

After biking, I grabbed a handful of frozen peas for snack #2.  I was pretty hungry after those two hours on the bike and burnt about 600 calories!  Then I whipped up a dinner which turned out looking pretty boring:

Let’s be honest.  This looks pretty pathetic, but I can assure you the combination inside was everything BUT.  It was made up of:

Smashed beans

Shredded lettuce, Pace salsa, Plain Oikos (sour cream!), and halved cherry tomatoes

Perfection!

After my shower, I decided I deserved some dessert for biking so long, so I decided on a banana and some Barney Butter that I got in the mail yesterday!  MMMM!  It totally hit the spot.

On a classy paper towel...

Now it was time for GIRLS NIGHT & THE BACHELOR.  Everyone arrived and I had set out the following spread of goodies:

I didn’t eat either of these, but instead took a shot of Good Belly & ate some SF Black Cherry Jello:

I also experimented last night for a successful breakfast this morning!  It was SO tasty!  It tasted like pumpkin oatmeal cookie batter!  Tooo dieee forrr:

Pumpkin Piee

It was easy, too!  Just 1/3 C. oats, 1/2 C. fiber one, 1 egg white, 1/4 C. canned pumpkin, a splash of vanilla, and a spritz of unsweetened vanilla Almond Breeze with a few sprinkles of cinnamon! Unbelievable. You must try it. The perfect beginning to my day!
