Pie For Breakfast.

Posted on

Verse of the Day:

“Therefore, get rid of all moral filth and the evil that is so prevalent and humbly accept the word planted in you, which can save you.”

- James 1:21

Sooooooo, this breakfast was hungry-girl inspired.  I’ve got to give Lisa Lillien the credit.  Not many people would think to ground up Fiber Bran cereal and use it for bases such as pie crust and such things.

Pie crust= 1 C. ground up Fiber Select mushed together with 2 tbsp. egg whites, 5 sprays ICBINB, and baked at 350° for about 10 minutes.

Pie filling= 1/2 C. frozen blackberries blended with a splash of water, 1 tbsp. Cool Whip Free, and a tbsp. of Organic Zero

Frozen overnight and topped with a tiny squirt of Lite Redi-Whip in the morning.

For protein, I nuked a Morningstar Farms Maple Flavored Sausage patty.

The commute to work was not a fun one.  It was raining cats & dogs, causing people to freak out and forget how to merge onto a highway, apparently.

It is rain people, NOT snow.  Again I had a Skinny Water at my desk when I finally arrived to keep my Vitamins at an optimal level :)

  Lemonade Passionfruit, of course.

Work was work.  End of story.  I didn’t even have CLASS to look forward to…just lunch.  Lunch is always a pick-me-up :)

1 Golden Corn Vitatop and “spaghetti & meatballs” a la Freckled Foodie (1 bag of broccoli slaw steamed and topped with 1/3 C. Light Ragu + 3 Veggie Patch Meatless Meatballs)

I DID have my first sand volleyball match since my vacation in June after work, but it wasn’t until 6:15PM, so I went to pick up a birthday gift for my Godmother.  She is an angel!  So I thought this gift was only appropriate :)

The little box says “Because of you my heart has a place to belong” or something to that effect.  After I picked up a card, I stopped at the store to get some more Sugar Free Vanilla Torani Syrup

I also bought an apple & a box of Cranbran Vitatops.  I needed some carbage before the game! [unpictured]  Obviously it wasn’t enough, because we lost all three games in our match.  It was kinda ugly.  Our fourth player (one of the guys) couldn’t make it and we didn’t find a sub in time.  Four weeks without playing + 3 man team vs. 4 man team = less than flattering results.  It was still fun though!

When I got home I whipped up a quick dinner and prepped for the next day’s meals.  I had FINALLY found the Forty Spices Hummus by Tribe that I fell in love with during the review at the same store I picked up the SF Torani!  :)

Nom.

and then there were carrots, munched on while I was making this salad beast.

Shroomies, tomato, avocado, and spring mix drizzled with this dressing I received from Girard’s to try out!

Light Creamy Balsamic was pretty good!  It was nice and thick, which I loved because you don’t need a lot of it to get a big flavor punch.  For just 45 calories in each 2 tbsp. serving, it was great!  I only needed 1 tbsp.

I packed up my lunch & snacks for the next day, so I went downstairs to bike a bit while I was facebooking.  I <3 multitasking.  I feel much more productive than just sitting around on my laptop if I do it while I’m exercising!

Afterward, I made dessert.

Chunky Monkey Softserve made with 1 frozen banana & a dollop of Calorie Free Walden Farms Chocolate.

I also had a stalk of celery slathered in Better N’ PB.

3 Question Thursday!

1.  What do you do for a living?  Love it or hate it? I’m in a human resources department for a health & safety section.  My main duties are clerical.

2.  What’s your biggest pet peeve?  Mine is BAD/illogical drivers!  I think the Lord was testing me this morning!  I think I passed by the skin of my teeth :)

3.  What’s your favorite hummus?  Mine is currently Forty Spices!

It’s almost Friday, loves!  Just hang in there ;)

**PS- Check out my guest post on the SeaPak blog!  Some of my favorite foods are SeaPak specialties!

Oh yeah, and don’t forget to enter to win yourself some Dr. Lucy’s baked goodies!  Gluten-free, delicious cookies are where it’s at!

A thankful shout out to Caitlin who sent me these FAVORITES from Tribe Hummus for review on the blog!

I have been an avid Tribe fan since the day I first tried the Roasted Red Pepper version from the grocery store, but now it’s hard to choose a favorite being that I’ve been introduced to three of the other varieties!

For those of you hummus newbies out there, hummus, in a nut shell is a dip/spread created by combining pureed chickpeas, lemon, sesame tahini, oil, and spices like roasted garlic, red peppers, scallions, and dill.  Hummus is a very versatile food and tastes delish on just about ANYTHING.  Typically used for dipping veggies, but I also love it on baked potatoes, spread on a sandwich, stirred into savory oats, or mixed with my egg beaters!

It actually contains ZERO saturated fat, hydrogenated oils, and cholesterol, but is high in protein and fiber!  It is vegan friendly, dairy free, and certified kosher as well!

Tribe is my absolute favorite.  I have yet to try a lot of the flavors, but they come in 16 different varieties including: Spicy Chipotle, Horseradish, Roasted Eggplant, Classic, Garlic, Roasted Red Pepper, Cracked Chili Pepper, 40 Spices, Scallion, Dill, Zesty Lemon, Calamata Olive, Garden Vegetable, Jalapeno, French Onion, and Sun-Dried Tomato Basil.   Caitlin sent me the Original, Roasted Red Pepper, Garlic, and 40 Spices.

I’ve got to say, there is officially a contender for Roasted Red Pepper hummus (my thought to be favorite) now that I’ve tried the 40 Spices version

The Roasted Red Pepper has a touch of sweetness to it that I’m smitten with, but the 40 Spices has an undeniable, exotic kick that made my tastebuds do a little dance make a little love :)

The nutritionals on all of the hummus are fairly similar.  Varying from 40-50 calories each, 2.5-3.5g of fat, 1-2g of protein, and 1g of fiber per 2 tbsp. serving.

I’d love to try the Sun-Dried Tomato Basil, French Onion, and Garden Vegetable!  Check online to see what grocery stores near you are carrying Tribe Hummus so you can try it for yourself!

Friday night, was SUCH a blast.  I got home from work, changed into my biking attire (sweats), and got to work on the stationary.  My sister had a basketball game at 7:00PM, so I biked from about 4:30 til 6:30PM.  I facebooked and car hunted to keep myself occupied on the bike.  Plus, when I arrived home, I had received the latest edition of InStyle in the mail, so that entertained me for awhile too.

Anne Hathaway Is Our March Cover Girl

It featured Anne Hathaway, who I adore as an actress!  She’s so real.   I love that about her!  She said in the book that she values authenticity much more than perfection, which is totally admirable from the lips of a Hollywood star.

Dinner was broccoli lasagna, as I like to call it :)

Ugly picture, savory taste!

I swear this combo of broccoli slaw + light Ragu + ff cottage cheese is just like an italian sweet lasagna.  You have to try it :)

I also had a lil bit of this:

Forty Spices Tribe Hummus.

Clementine, dill pickle, baby carrots, yellow pepper, & string cheese.

After the game was when the real fun began.  My Mom, Aunt, cousin (best friend), and I go to a Women of Faith Conference every year in September.  The cost of the conference plus food/lodging/transportation can get pretty expensive, so the church that we go with, Grace United Methodist, provides opportunities for fundraisers throughout the year so that the expense isn’t totally out of pocket.  It is SUCH an amazing event, I wouldn’t miss it for the world.

Peanut Butter Egg Making.

Anyway, one of the fundraisers are the classic “eggs” that we sell at Easter time.  They come in peanut butter with dark or milk chocolate, double coconut in dark or milk chocolate, and coconut cream in dark or milk chocolate.

The Egg Maker.

I seriously felt as if we were in Willy Wonka’s Chocolate Factory.  This egg making machine was so neat to watch!

Best friends in hairnets.

We had such a blast!  Each person had assigned tasks.   My bestie and I were the “baggers”.  We put each egg in a little plastic baggie when they were done going through the chocolate coating machine.   It was a goofy night, but I wouldn’t have wanted to spend my Friday night any other way!

Chocolate coating machine.

I just kept thinking how cool it would be to run strawberries through the machine! :)   Everyone kept joking that we should drop a few “by accident” so that we could eat them.

These eggs got stuck together !

Turns out, I did drop one!  It fell out of the bag in transition to the “sealing” station and everyone shared it.  Except me.  Those things are very rich and heavy and not worth the calorie/fat content to me.

Momma Freckled Foodie.

Don’t worry, I had some chocolate covered peanut butter too!  The healthy kind ;)

When we got home, I had a sweet dessert before hitting the pillow as a reward for all my egg making and biking that night.
