Rest Days.

Everyone knows that sometimes you just need a rest day.  I had been doing about 8-9 miles everyday for the past 10 days and my body was starting to give me a hard time.  My hips, especially were tight and achy.  I felt as if I had arthritis!  Anyway, I proclaimed Thursday my rest day.  NO GYM for this girl. 

The day started out like any other day.  Filling & crunchy.

Fiber Select + cake batter protein milk.

 I don’t know what it is about this breakfast that satisfies my soul.  Maybe because I used to ALWAYS eat cereal as a kid.  It’s like for the first meal of the day, I’m back in a time when I had no worries or responsibilities…Cereal does it for me!  Granted, then it was more like Lucky Charms or Fruity Pebbles, but you get the picture 😉  What’s your favorite childhood cereal?

 Speaking of childhood, I brought my little pink lunch tote to work containing all of the following goodies:

Packed lunch.

A veggie tub filled with a rainbow of color

Orange pepper, cherry tomatoes, celery, cucumbers, & carrots.

Swimming in some apple cider vinegar mixed with Splenda.

Two dogs.

Hebrew National 97% Fat Free Hot dogs @ 40 calories apiece and 6g protein!  That’s a pretty good calorie to protein ratio if you ask me!

My snackTAXI is CLEAN!  Finally getting to use it.  No more ziplock baggies for me!! I’m working on getting these in MY SHOP.

Over my actual lunch break, I managed to hit the grocery store & the farmer’s market!  I prefer to buy farmer’s market produce because it’s usually much cheaper than at the grocery store.

When I got home from work, I put away all the groceries and made myself a snack.

Next on the agenda was to go support my Mom’s softball team in a home game at my alumni.  It was a beautiful day for a game!  When I arrived, they were in the 4th inning, losing 1-2.

They ended up making a killer comeback and winning the game 10-2.  I think I was the good luck charm because they were losing until I got there 😉  Momma Freckled Foodie agreed.

After the game, I headed home and made some dinnah.

I guess looks are deceiving!  This sandwich is actually a Gardenburger veggie patty with Sonoma Jacks & reduced sugar Heinz ketchup on a whole wheat light english muffin!

Along side my delish burger, I had some peas [& thank you].


I used to have serious pea issues.  Like any other kid, peas & I were enemies at a younger age.  What was an enemy food of yours growing up?

With my dinner, I drank the last of my iced birthday cake coffee.  Time to make another pot!

Okay, so I know I said today was a rest day, but I was antsy.  No one was home and I was bored, so I decided a little LIGHT biking was in order.  No harm in that, right?  Biking is a lot less hip rotation, so it didn’t bother me one bit.  I went downstairs and ended up doing this

I got a shower, packed my lunch for today, and had dessert.

Pet Peeves.

Pet Peeve #1: When people are pushy about religious topics & manage to shove their opinions down your throat.

With that being said, I give you the verse of the day.  These verses are posted everyday to give an encouraging word and start your day off on a positive note.  It’s just an aspect of my life that I find valuable and want to share with you, for no other reason but that.


“I know that my Redeemer lives, and that in the end He will stand upon the earth.”

Breakfast was an old classic filled with fiber & protein.

Greek yogurt + SF Log Cabin with Fiber Select for crunchy topping.

Lately on the way to work, I’ve been hitting crazy amounts of traffic.  I’m not sure why because I haven’t had issues since winter when the weather conditions weren’t so great.  There have been no accidents, rain, or anything else that would hinder the flow of traffic, but somehow people FORGET how to merge onto the highway. 

Pet Peeve #2:  Drivers who are NOT passing but are content to drive in the left lane, staying even with the people in the right lane & allowing NO one to pass. I lie.  Pet peeve #2 is simply drivers with no common sense in general.

 Can you tell I ❤ Fiber Select?  It’s like honey, cinnamon, crunch, and oatmeal flavor all rolled into one filling cereal.

I packed a typical veggie tub of cucumber fries, cherry tomatoes, orange pepper, cauliflower, & 1 single celery stick (from the middle of the bunch, the whitest of the white!) with some homemade honey mustard for dippage.  Then I blended some chocolate mint protein milk (Optimum Nutrition Chocolate Mint + water/ice) for eating with my cereal come lunch time. 

Pet Peeve #3: Being called a “vegetarian” at work because I eat healthy.  Don’t get me wrong, I have absolutely nothing against vegetarians or vegans or any type of eater for that matter, but it’s annoying when the foodie-uneducated just make assumptions and even after CORRECTING them, continue to call you the “vegetarian-weird-health-food-eater“.  Hellooooo, do I get on YOUR case for eating McDonald’s everyday for lunch? No?!  Then leave my veggies, protein shake, & cereal alone, please! Thanks.

These two partners in crime were consumed after work before hitting the gym.

At the gym, I tried really hard to stay focused on interval work while I was on the elliptical to get the most out of my workout .  I stayed on that sucker for about an hour and 3 minutes doing about 9 miles & burning 710 calories.  No, I don’t aim for a calorie burning goal, more like a distance goal.   

Pet Peeve #4: The girls at the gym who do ABSOLUTELY no work.   They simply walk around sipping their water bottles, talking to all the guys or yapping on their cell phones.  DRIVES ME NUTS!  Who can afford to pay for a gym membership and not even TRULY use it?! Anyone else feel my pain on this one?

After cardio, I hit the machines for a quick circuit:

  • 4 sets of 15 sit ups on the incline bench
    (totals: 60 right elbow to left knee, 60 left elbow to right knee, & 60 middle)
  • 3 sets of 25 hip adductors (110 lbs.)
  • 3 sets of 25 hip abductors (110 lbs)

By the time I got home, I was craving veggies as usual.

I sliced up some cauliflower, sprayed a non-stick baking sheet with Pam, re-sprayed & sprinkled with garlic salt & pepper.  I popped the tray in the oven for about 25 min. at 375º.

 I found this gorgeous bowl in the cupboard and decided it was DEFINITELY blog worthy. 



Later on, I found out that the bowl was my Mom’s great grandma’s and that if I ever touched it again, I could consider myself crucified. Note to self:  don’t blog bowl search within the FF household.

Before I knew it, a “ding” went off in my head to check the cauliflower.  Perfect timing!

I washed it down with a shamrock shake chocolate mint protein smoothie. Optimum Nutrition strikes again!

Using the xanthan gum that THIS doll sent me, this shake was so thick and creamy.  Janetha B.  YOU ARE THE GREATEST.  Thanks so much.  I will be ordering this. 

Then, I packed my lunch & my girl Mandy came over to watch past OTH episodes and catch up since it had been awhile since she saw it last.  We watched the episode when Hailey’s mom passes away & it ended in tears for us. 

What to do when you’re feeling sad?  HAVE DESSERT, of course 😉

I made Mandy a thin mint milk shake with vanilla ice cream, girl scout cookies, & some peppermint syrup + milk.  For myself?  Why, I TOO indulged in a girl scout cookie flavored dessert 😉

Boo yahh.

Deep chocolate Vitatop topped with a mixture of Oikos greek yogurt + Walden Farms calorie free chocolate syrup + SF peppermint syrup.  Duhh.  Heavenly.

Allen’s Vegetables + Recipe Contest!

Exciting news in the wonderful world of vegetables!  The largest privately held vegetable company in the nation, Allens, Inc. has announced that it will be holding a FEAST YOUR VEGGIES ON THIS recipe contest in which the finalists will be judged on innovation, flavor, and visual appeal for a chance to win a ONE YEAR SUPPLY of Allens brand vegetables. 

Runner ups will receive a SIX month supply!  In celebration of the contest, Allens was kind enough to send me three of their tasty blend to try out! 

Allens is a family-owned and operated company, which I’m a total fan of and are headquartered in Siloam Springs, AR with a wide variety of canned goods and frozen blends, along with seasoned blends and original varieties.  Almost anything you can think of!  Greens, beans, hominy, cabbage, carrots, peas, succotash, and potatoes.  I didn’t even put a DENT in the full list!  The three cans that I received included:  Seasoned Pinto Beans with Vidalia Onions, Seasoned Green Beans & Potatoes with Vidalia Onions, and Squash with Vidalia Onions.  Good thing I like vidalias, huh!? 🙂

First up was my favorite.  I absolutely LOVE squash.  I love it even more when I don’t have to prepare & season it myself! The convenience of these cans which are already seasoned to perfection make quick and easy side dishes that make pulling together a healthy dinner easy peasy. 

Each serving is only 25 calories!  That’s probably for the better since I could eat the entire can in one sitting.  No shame.  Haha.  It’s okay!  They’re vegeeeeeetables.  The only thing you have to be careful of is the sodium content.  Being canned, I expected those stats to be a lot worse, though!

Another weird note:  I liked this cold!  Straight from the can.  I’ll bet it’s yummy warm though, too! 

Seasoned Pinto Beans with Vidalia Onions.

Seasoned Pinto Beans with Vidalia Onions.  This had mexican dish written all over it.  As you may remember, I used mine to make bean burritos


and mexican salads!  Deeelish.  The onions in these canned goods aren’t overwhelming and strong.  They’ve got more of a subtle sweet taste that only adds to the spices and beany flavoring. 

They’re packed with protein & fiber, as you can see:

And contain 20% of your DV Iron in just 110 calories!

Last but not least, we’ve got the Seasoned Green Beans & Potatoes with Vidalia Onions.

Being that I’m not particularly a fan of white potatoes, I tossed those from the can and just ate the green beans and onions.  Don’t worry!  They didn’t go to waste.  I microwaved them for about 1 min. added a splash of milk and butter, mashed them, added a dash of parsley, and served them to the ff sister, who DOESN’T even like onions, but LOVES mashed potatoes.  She asked me when I had time to make homemade mashed potatoes?! Haha.  When I told her they were from a can containing a food that she despised, she couldn’t believe it!  That’s how mild the oniony taste is.  The green beans were good by themselves too!  If you like home cookin’, these seasoned blends are for you.  They taste buttery and homemade just like the ones you get on holidays with rare family get-togethers.

However, unlike the fat laden dishes around the family table,  this green bean medley has just 40 calories per serving along with 10% of your DV Vitamin C!  Sodium again, is a little high, but what do you expect from the canned stuff?

Centennial Ball: Wardrobe Help?

This verse reminded me of something brought to my attention in Sunday School a few weeks ago.  We need to have a servant’s heartSelfless love.  Thinking of others first ALL the time and humbling ourselves.  Which, ironically was what our preacher spoke on this past Sunday.  God must be trying to tell me I really need to work on this!
Yesterday started off like any other day.  I began it the best way I knew how.

Work was work, and the only thing notable about the time I was there was my epic lunch & iced Birthday Cake coffee.

Oh yeah, and I spoke with the MFFS (middle freckled foodie seester).  We’ve been planning a weekend trip for me to visit her at school for awhile now, and this weekend seemed to be one of the last opportunities.  She will be coming home in like 2 weeks!  This Saturday also happens to be their Centennial Ball, which she invited me to on Saturday night.  SO EXCITING.  Call me lame, but I missed out on the whole college experience and I’d technically be graduating this year!

Anyway, I need help.  Not sure what type of dress to look for?  Votes are welcome & appreciated!!

I think numbers 2 & 3 are my faves.  What’s your opinion?

Anyway, when I got home last night I changed into workout gear & headed out to the gym.  After an hour & five on the elliptical at various levels (I did some intervals at 7, 9, 10 & 11), some ab work (planks, v-ups, & in-and-outs), I left for home.  Again, I wasn’t hungry for a snack between work & the gym?  I think my lunches are doing a good job of keeping me full!

When I got home, I was craving eggs for some reason, so I cooked up a broccoli, laughing cow, mushroom, & onion omelett with Egg Beaters!

Step 1: saute veggies in water & PAM.
Step 2: Add Egg Beaters.
Step 3: Cook until golden brown.
Step 4: Plate omelett & serve with reduced sugar ketchup.

I had these two cucumber butts to use, since they were on their last legs:


Soooo, along side my omelett, I had a lettuce-less salad topped with raspberry balsamic vinaigrette that I made from SF Raspberry Torani syrup & balsamic vinegar.

 After dinner, I showered up and did some laundry/dishes.  I also packed today’s lunch and finally sat down with my dessert & laptop to watch Biggest Loser and upload some bloggie pictures.

Since it was such a hit last time, I decided to reinact yesterday’s dessert, only I spruced up the presentation a lil bit.  It’s simply a deep chocolate Vitatop (100 calories) topped with chocolate mousse (aka plain greek yogurt mixed with calorie free chocolate syrup) and a plump, juicy strawberry. MMMMMMM.

It’s official.  I have slain a live animal.  On my way to the gym yesterday after work, I hit my first squirrel 😦  I swear it came from out of no where!! I was just about in tears.  I was praying that it didn’t suffer at all and I’m pretty sure it didn’t, considering I looked in my rear-view mirror and saw something pretty ugly.  This is going to sound absurd, but the blogger in me seriously contemplated going back to document aka photograph the accident so you guys could mourn the animal death with me. HA. 

Anyway, I guess we’ll start at the beginning

Breakfast yesterday was pretty boring.  But cereal is exciting for me!  Any other cereal lovers out there?!

In place of milk, I use water blended with 4 ice cubes + 1 scoop Cake Batter Optimum Nutrition protein powder.  LOVE that protein! 

When I got to work, I sipped on this AWESOME iced Caftea Birthday Cake coffee I mixed with a little SF Vanilla Torani Syrup at my desk. 

My snackTAXI is in the washing machine, so I shamefully opted for a ziplock baggie for my wrap!  Don’t worry, though, I use them over & over again!

Lunch was some steamfresh broccoli topped with reduced sugar ketchup with 3/4C. egg beaters + reduced sugar ketchup mixed, along with a La Tortilla Factory low-carb high fiber wheat wrap with a wedge of Sonoma Jacks pepperjack cheese & Splenda.

It’s the 2010 Pillsbury Bake-Off 100 Winning Recipes Cookbook!  Just a little reminder, you can actually WIN YOUR OWN by submitting a recipe on the Eggland’s Best site, as I announced in this post, by April 30th

After scanning through the pages, I got changed and hit the gym for an hour of cardio on the elliptical.  For some reason, I wasn’t hungry for a snack between work & the gym today. 

On the way home, I stopped at the grocery store, mainly because I was craving a big bowl of veggies for dinner and my produce stash was completely depleted.  


It was a huge, beautiful bowl with just about each color of the rainbow represented 🙂  Broccoli, cauliflower, yellow pepper, tomato, cucumber, and spring mix on the bottom.  I topped the bowl with homemade honey mustard (1/4 C. SF syrup + mustard to taste) mixed with 1 whole can of light tuna.  

Post dinner plans were to shower, pack my lunch, and relax.  Our house was finally alllllllmost finished.  Now all that’s left to do it put the trim back on.  The hardwood floors are in, the hallway/living room is painted, and all of our photos have been re-hung! Check it out:

After admiring all the beauteous additions to our home (props to Poppa Freckled Foodie!),  I decided it was time for dessert.  I picked up some fresh strawberries at the grocery store, and knew exactly what I wanted to make. 


Sliced strawberries + frozen deep chocolate Vitatop topped with Oikos mixed with Calorie Free chocolate syrup from Walden Farms. 

Holy yum.

For some reason I prefer my Vitatops cold/frozen as opposed to warmed in the microwave? All I know is, this was the perfect ending to my Monday!  I caught up on Dancing With The Stars and One Tree Hill while consuming this, which only made it that much more enjoyable.  There’s some crazy stuff going on in the OTH world!!  Totally scandalous 😉

This weekend, I made it appoint to try them all! I’m definitely a tea/coffee drinker, and LOVE a strong, flavorful blend to start out my morning on the right foot to sip along with my breakfast!

Typically I prefer Green Tea, flavored with fruit, but I tried to keep an open mind 😉  I knew which one I wanted to try first and second because they caught my eye!  I LOVE chocolate + mint together, so I figured it would be a safe bet.  The ChocoMint ended up being my favorite!  It was subtle, but enough that I could distinctly pick out BOTH the mint and chocolate flavors.  Not overpowering in the tea, but easily detectable. 

Second, I sampled the Coconut Kava Cream, but I’m a cocoNUT.  I was hoping for a strong coconutty taste in this one, almost tropical to taste, and I was not let down ONE bit.  The rich, dark taste with a HINT of sweetness was perfect.  I did take the sweetness in mine to the next level with a touch of Splenda, but it was like a dessert! 

I was not a fan of the Crouching Tiger, Hidden Dragonfruit tea for some reason.  It was infused with pomegranate and dragonfruit, two things that I typically can appreciate, flavor-wise.  It’s known to promote focus and energy along with helping to reduce cholesterol, cancer risk and arthritis.  I think my issue with this flavor was that it overwhelmed the tea. 

Calmation was simply delightful.  This is like relaxation in a cup.  The lavendar and creamy vanilla taste of this beverage completely calm the mind and allow you to savor each sip.  If you’ve got a sweet tooth, I recommend this flavor! 

Loaded with antioxidants, which will help improve your immune system, the Taro Vanilla Cream tea has a slightly watered down taste to it.  I would definitely use two bags next time.  I think the vanilla taste was actually more prevalent in the Calmation blend than this one.  Maybe because of the lavendar enhancement?

 We spent most of our time at the Park City Mall, but we also hit some adorable vintage stores beforehand and I used the bathroom in a Health Foods store, where I couldn’t resist buying some of these bars:

Sunday: Rest day ended up at the gym, then finishing up work on the house,

We saw “Date Night“, which I thought was hysterical.  Tina Fey + Steve Carell is a winning combination. 

Eats were sporadic, yet delectable and for the most part, well-balanced.

Some GREAT salads with some produce I picked up at the Farmer’s Market on Friday during my lunch break:

Broccoli, carrots, alfalfa sprouts, snap peas, tomato, & homemade honey mustard.

andddddd a NOT SO GREAT $10 salad from the Saladworks at the Food Court in the mall.

Skimpy on the toppings! Green beans, baby spinach, carrots, chickpeas, cherry tomatoes, and cucumber with balsamic light on the side.

The crusty wheat roll that came with it was pretty yummy though.  It came out all warm and soft on the inside with a flaky crust.  Washed down with Diet Green Tea.

Guess it’s just proof that if you want something done right, you’ve gotta do it yourself! 😉

How awesome is it to realize that someday everyone will bow down to Him?!  That is going to be QUITE the sight, if you ask me 🙂

Also, I realized this morning, I totally forgot to show you all the beautiful flowers that our office gave me for “Administrative Assistant’s Day” 🙂

Date Night.

Anyway, it’s FRIDAY! Can’t wait to start the weekend.  Only about 7 more hours to go!  Tonight, I’m going out to see Date Night with a guy friend after my workout at the gym.  I’ve heard good things and hope it lives up to the ratings!  I love Tina Fey and Steve Carell, so I’m thinking it can’t be bad!

Back to yesterday’s eats.  When I got home from work, I had a snack wrap of laughing cow with sugar free blackberry jam on a flat out light.

Not as good as gala, but it did the trick and fueled me with some carbs for my workout!

I befriended my stationary bike, yet again, trying to avoid the same workout two days in a row (elliptical/gym machines).  I biked for about an hour, catching up on my Facebook page & watching “Friends“.

I decided it was time to refuel after burning off about 300 calories.

1/2 C. = 70 calories, 0g fat, 12g protein.

Eaten straight from the container. I know, classy, right?

 What can I say?  I was home by myself and I didn’t feel like making extra dishes.  There were already several waiting for me in the sink from the family that were used while I was at work. Yippee.  Probably ate 1.5 servings + some drizzled crack SF Log Cabin. 

I was bored with nothing else to do, so I went back to watch some episodes on the laptop.  I also downloaded the new Robert Pattinson movie, “Remember Me” while I biked for another hour, burning another 300 calories

Time for more protein!  And I had some cake batter on the brain.

Protein Shake

Small handful berries + spinach + 1 scoop Optimum Nutrition cake batter whey protein.


I also knew I needed some veggies in my life, so I opted for some steamfresh cauliflower out of the freezer.

I wanted something creamy, so I blended the cauliflower with some Sugar Free syrup & cinnamon for an oatmeal tasting flavor.

Next time, I’m going to microwave some chopped apple & add it to the mixture.  I think that’ll be like apple cinnamon oatmeal!!?  YUMMMMM.

Next on the checklist was a shower.  A much desired one at that.  I could seriously fall asleep in the shower or bath.  Anytime.  Not in any other than my own, obvi.

I jumped into my coziest pair of sweats and decided to embark on some coffee making for refrigeration and successful iced coffee creation later down the road.


This was no ordinary coffee though,

this was Caftea Birthday Cake coffee!


UHHHHHmazing.  I knew just by the aroma that it was going to be fantastic.  Buttery, sweetness filled the air.  You can buy this in my OpenSky Shop if you’d like to try it!   SERIOUSLYYou’ll love it.

I settled down and unwound, sipping my coffee, by packing my lunch.

Typical suspects: Veg tubsliced yellow pepper, broccoli, cherry tomato, carrots, and cucumbers; FF cottage cheese+sugar free syrup+cinnamon; Fiber Select for crunchy cottage cheese topping; Homemade honey mustard for veg. dippin’

I also realized, I have not been photographing my breakfasts.  NOOOO this does not mean, I’m not EATING them.  I just am usually in a rush in the morning, trying to get everything ready for work and forget to snap a pic when it’s something I don’t have prepared ahead of time.  As of late, it’s been the same thing every morning anyway, because it keeps me full for EVER and tastes yummy everytime.  Simply a protein shake with 1C. Fiber Select mixed in.  The shake trumps milk on my cereal because of the 24g of protein!  Don’t worry, it’s got Calcium, too!
