Dynamic Duos.

I’ll bet you’ve missed seeing pictures of my routine breakfast while I was gone.  I know I missed telling you about how utterly delicious this combo of peanut flour & banana.

1/3 C. raw oats, 1 smashed banana, 1/4 C. peanut flour, pinch of salt, & sugar free vanilla syrup

Or maybe you’ve missed my devotional sharing?  I’ve certainly missed feeding you all my food for thought on each one.

Denying God is something that I struggle with.  Not necessarily in the same way that Peter did, because I’ll tell anyone and everyone that I’m a believer…more so, in the fashion that I don’t trust everything to Him.  I have trouble giving up “control” in certain areas of life.

I got soaked on my walk to work yesterday, if anyone cares.  It was raining cats and dogs with a relentless wind that blew the precipitation right up under my umbrella.

By lunchtime, I was just “soggy”…it’s amazing how slowly a tiny space heater dries pants.

These cuties were pretty yummy! I found them in the frozen organic section of the grocery store and was craving something different than my typical packed lunches.

The stats and ingredients were pretty impressive, so I went for it.  Bragg’s Liquid Aminos were the perfect dipping compliment…another dynamic duo!

 Work was super busy, which I enjoyed, because it meant that the day flew by.  Mondays tend to do that in our office.  Call me crazy, but I’m not a Monday hater…are you?

Mid-afternoon, I had a snack that was more like dessert.  Dynamic duo #3, Udi’s gluten-free granola & fage greek yogurt.  Diced fuji apple was just like icing on the cake.

 I pretty much changed right into my gym clothes when I got home from work.  Shaun T and I really look forward to our dates after work 🙂  You know the routine by now…It was Insane Abs and then some biking & elliptical work.  It was a quick workout.  I had to finish up my FAFSA and get ready to host girls’ night, so I cut it a little short. 363 calories burned.

Dinner was next on the agenda. 

1 bag steamed broccoli slaw, fat free cottage cheese, light ragu, Cedar’s garlic lovers hummus, and lima beans

Another DD…Light Ragu and broccoli slaw…or, actually, Light Ragu and…ANYTHING.  I think it’s my favorite sauce/condiment ever.  I got a quick shower and before I knew it, guests were arriving for our weekly Bachelor ritual!

Yesss, that’s right.  Brad Womack and Emily 🙂  I think it’s funny that I’m so completely morally opposed to the show, yet I’m totally hooked on it.  It is a totally unrealistic way to fall in love with someone…I mean, who goes on a date in Africa for a safari ride?!  That isn’t real life, peeps.

Dessert was courtesy of Conscious Nosh…their Chili Maple Vanilla cocoroons happen to be MY other half, and I happily enjoyed it while watching Ashley get shipped home.  She’s a sweet girl, but something about her really annoyed me.  It was like she had ADHD when she spoke…very abrupt and in your face constantly.  Anyone else feel me on that?

Anyway, cheers to Emily & Brad.  Can’t wait to watch you get engaged 🙂



Pure In Heart.

As I read todays verse, I couldn’t help but be relieved at what God was saying to me.  I also thought about the fact that for those who have impure motives, this verse may be a bit frightening.  Regardless of the outcome, God knows our intentions and our hearts.  Sometimes I do things with good intentions and end up screwing up pretty badly.

After all, we’re all human.  Things never work out exactly as we plan them. 

Work today was super slow.  I spent most of the day stressing about when I would have time to finish up Christmas shopping.  You know, it probably gets on God’s nerves that we spend so much of this special time of year fretting over things that Christmas isn’t even about.

Rather than focusing on the birth of our Savior, we’re too wrapped up in the commercialism of Christmas time.  The gifts, the decorations, the parties, and the food.

Don’t get me wrong, I love the family get-togethers, gift giving, cookie baking, and Christmas parties just as much as the next girl.  I’m simply stating that I need to reevaluate my priorities.  I’m not saying it’s wrong to participate in such activities, either!  For some people, though, it all causes an unnecessary amount of stress and thus, we lose sight of the reason for the season.

 Enough of the heavy stuff, I suppose.  Now, onto the fun part of my day…BASKETBALL practice…after a quick 10 min. warm up on the Cross Ramp and some ab work on the mats.

We don’t have another game until Jan. 8th, so practice everyday is only about an hour and 1/2 instead of two.  But as you can see, I’m still getting a mega cardio workout.  I forgot to hit “stop”, so naturally it’s showing you that I worked out for 4 hours.  Not the case.  Haha…Two total.

The most famous lazy girl dinner EVER on my blog…Broccoli slaw steamed in the microwave, light ragu, fat free cottage cheese, and garlic lovers Tribe hummus ❤ You don’t have to tell me, I know it looks gross, but it tastes just like lasagna! 

Next up, I roasted 1/2 of a small butternut squash sprinkled with paprika, salt, pepper, and chili powder.  I made a little pot of vanilla icing for dippage.  I swear, it was just like Pillsbury, but super healthy.  Just some plain Fage 0% yogurt with sugar free vanilla syrup & cinnamon!

Next, I packed my lunch for the next day, cleaned up the kitchen, and did some things around the house.  I unloaded my gym bag from practice and repacked all my clothes to do the same thing all over again the next day.


Around 8PM, I finally sat my butt down to watch “The Singoff” finale! I hadn’t gotten to see all of the episodes, but I knew that my favorite was Committed.  They are a contemporary christian group that had voices like angels.

The other group was great as well, but they weren’t my favorite.  I snuggled up to watch the show with a warm bowl of oats for dessert.

For the FIRST TIME EVER, I made this bowl on the stovetop.  Beth (SO GLAD YOU’RE BACK!) darling, you were SO right…TOTALLY creamier and more volumnous than the microwave method!  It contained 1/2 C. old fashioned oats, 3/4 C. unsweet almond breeze, and 1 C. water, sugar free vanilla syrup, & cinnamon.  I let it simmer for about ten minutes and then refrigerated it for a little bit to avoid scalding the roof of my mouth.  Mmmmmmmmm.

I also had two squares from this chocolate bar before hitting the pillow!  Chocolate is the best way to end ANY night 🙂

Happy Friday, Ya’ll!

Thank you again to everyone who has participated and shared what you’ve been reading with me!  It’s so encouraging to see God at work all around me.  Today’s Bible Challenge piece for me, comes from Ephesians 5:1.

…Wow.  Its a bit too personal to share what this post actually means to me, but I’m thinking some things in my life really need to change if I want to have an inheritance in Heaven.  Here’s how I’m thinking about it…God knows my every thought before I think itImpure thoughts are just as sinful as impure actions!  People may say that “they can’t control their thoughts”, but I beg to differ.  When you surround yourself with holiness and are constantly seeking a closer relationship with God, you impure won’t be running through your mind.  I know it’s impossible not to slip up…we’re human…but I think it has a lot to do with the company you choose to keep, the ways you spend your time, and the priorities you make in life which will determine your mindset…ALL of which you DO have control over

Starting Numbers:

181.6lbs. and 26.6% body fat

after two weeks of Insanity and clean eating: 

175.2lbs.  and 23.8% body fat!

Awesome job, Todd! 

I was telling him about my new HR monitor, and he decided to order his own, since they recommend you have one while doing Insanity, too.

His easily goes above and beyond anything that mine can do…it’s a Garmin Forerunner, after all!  I admit, I’m a bit jealous!  Haha.   Anyway, he ordered alll the accessories for it too and is counting on me to help him figure it out.  Like I’ve said before, I totally admire his dedication to this life change!

In other news, check out this awesome fall produce I picked up on my way home from work the other day at a local farm stand!

Beautiful, isn’t it?  And alll this was only $5!  Then I got home and made some dinner before heading to the little seesters’ basketball game.

Last night was filled with random eats.  It was pretty much the same when I got home from work.  The typical granola bar + green monster for before my workout.


Frozen mixed fruit, frozen spinach, & sugar free raspberry syrup (since I was out of Diet v8 – don’t worry, I restocked!) blending.

I hit the gym for about an 1-1/2 hours, completing my 8 miles on the elliptical after 1 hr. and burning 650 calories.

Then I used the abdominal crunch machine with 25lbs. for 3 sets of 15, the back extension with 115 lbs. for 3 sets of 20, the lat pull down machine with 45 lbs. for 3 sets of 12, and I did 3 sets of 15 sit ups on the incline bench 15 to each side/middle for each set.

When I got home I immediately had a bowl of cereal with protein banana split milk.  I was starvin’ marvin’!  Guess that’s what a loss of about 700 calories will do to ya 😉

While I was waiting for my entree (broccoli slaw) & sweet tater to finish steaming in the microwave,  I munched on some frozen peas.

When then were finally done cooking, I assembled the broccoli slaw with ff cottage cheese + light ragu.

It tastes like a mixture between sweet lasagna & spaghetti!

Then, I had my cooked sweet potato on the side with some sugar free syrup.

Yes, I recycled my cereal bowl.  Just wash n’ reuse! The less dishes, the better.

Packing my lunch was nice since I didn’t have to unpeel any more hardboiled eggs and omit the yolks!  It was sooo simple.

I mixed my Oikos with 1/8 C. SF Log Cabin & lots of cinnamon.  The fiber one is for topping my yogurt at work, and the  honey mustard was made prepped the same way as the Oikos!  Just some mustard in place of yogurt 😉


For dessert last night, I ate an apple & some Sugar Free black cherry jello.

My family was at a banquet for the basketball team since my Dad is an assistant coach, so I was completely on my own for most of the night.

I showered up, and did some facebooking while watching America’s Next Top Model.  Anyone got a favorite yet?

I’m soooo ready for this weekend!  I’m heading to Lancaster to stay with my Aunt and adorrrrable cousins!  I haven’t seen them for far too long and am anticipating a fun trip!

Already Hump Day?!

 Where did the first two weekdays go?! I’m not complaining, that’s for sure!

I love starting my days off with Bible verses.  It helps me keep my outlook somewhat positive the rest of the day.  No matter what happens or goes wrong, we can find comfort in the fact that we’re not going to be on this Earth forever.  It’s hard to keep things in perspective sometimes because the world tells us that THIS is life, but in the scheme of things, this is only the beginning 🙂

Last night upon my arrival home from work, I made myself a sweet potato baked in the microwave for some complex carbs to fuel my bike workout.  I also had a banana for a snack.

After I biked off about 500 calories, I did a little ab work and took a break to eat dinner with the family.  My Dad made chili, so I figured I’d make my own version 🙂

Broccoli slaw, light ragu, & fat free cottage cheese.

Not exactly the most photogenic meal, but it’s beautifully colorful!  The taste of this dish reminds me of the sweet lasagna that my Aunt Sandy used to make when we came to her house.  It was AWESOME.

You’d be surprised how well the textures come together, too.  The process is pretty quick to make.  Just steam the bag of broccoli slaw in the microwave, combine 1/2 C. Light Ragu with 1/2 C. fat free cottage cheese, and pour over the slaw when finished steaming.  It’s really yummy because the cheese gets a lil’ bit melty.  Kind of the way it does in stuffed shells!

I also had a Flat Out Light wrap with Sonoma Jack’s cheese & Splenda to round out my meal and add some whole grains.

After dinner, I packed my lunch for today

Strawberry Oikos with Fiber One topping and broccoli slaw with Sonoma Jack's and mustard.

The broccoli slaw may look nasty to you, but I promise it’s good!  I steam the broccoli slaw, mash in a cheese wedge, mix in a little mustard, top with salt, pepper, & a little bit of minced garlic.  Holy flavorful.  If you’re a savory fan, you should try it!

After the lunch packing was finished, I showered up and brewed some more coffee for refrigeration and iced coffee making.  For my dessert last night, I had an apple with cinnamon & raspberry peanut butter, topped with some more Fiber One! YUM.  Sorry it went unpictured.  It was down the hatch before I could snap a photo 😉

Willy Wonka.

Friday night, was SUCH a blast.  I got home from work, changed into my biking attire (sweats), and got to work on the stationary.  My sister had a basketball game at 7:00PM, so I biked from about 4:30 til 6:30PM.  I facebooked and car hunted to keep myself occupied on the bike.  Plus, when I arrived home, I had received the latest edition of InStyle in the mail, so that entertained me for awhile too.

It featured Anne Hathaway, who I adore as an actress!  She’s so real.   I love that about her!  She said in the book that she values authenticity much more than perfection, which is totally admirable from the lips of a Hollywood star.

Dinner was broccoli lasagna, as I like to call it 🙂

 I swear this combo of broccoli slaw + light Ragu + ff cottage cheese is just like an italian sweet lasagna.  You have to try it 🙂

 After the game was when the real fun began.  My Mom, Aunt, cousin (best friend), and I go to a Women of Faith Conference every year in September.  The cost of the conference plus food/lodging/transportation can get pretty expensive, so the church that we go with, Grace United Methodist, provides opportunities for fundraisers throughout the year so that the expense isn’t totally out of pocket.  It is SUCH an amazing event, I wouldn’t miss it for the world.

Anyway, one of the fundraisers are the classic “eggs” that we sell at Easter time.  They come in peanut butter with dark or milk chocolate, double coconut in dark or milk chocolate, and coconut cream in dark or milk chocolate.

I seriously felt as if we were in Willy Wonka’s Chocolate Factory.  This egg making machine was so neat to watch!

 We had such a blast!  Each person had assigned tasks.   My bestie and I were the “baggers”.  We put each egg in a little plastic baggie when they were done going through the chocolate coating machine.   It was a goofy night, but I wouldn’t have wanted to spend my Friday night any other way!

I just kept thinking how cool it would be to run strawberries through the machine! 🙂  Everyone kept joking that we should drop a few “by accident” so that we could eat them.

Turns out, I did drop one!  It fell out of the bag in transition to the “sealing” station and everyone shared it.  Except me.  Those things are very rich and heavy and not worth the calorie/fat content to me.

 When we got home, I had a sweet dessert before hitting the pillow as a reward for all my egg making and biking that night.

I’m not sure how much longer I’ll be able to stand not having my own car.  Unfortunately, I thought that I added a rental car to my insurance coverage the last time I was rear ended on my way home from work and my car was undrivable, but it didn’t get added.  Not only is it inconvenient for me, but my poor parents have to take me to work and pick me up, so it’s not fun for them either. 

After arriving home, I changed clothes, chomped on a Jonagold and hit the stationary:



After watching 3/4 of Twilight on the bike and burning about 550 calories, I decided to shower up and make some dinner.  The family was having burgers and fries at home, but I was hungry for something Mexican.

Dinner last night was comprised of these ingredients (Can you guess what I made??):


Comfort food

Yep, you’ve got it!  Bean burritos, baby.  Not sure why but this meal really appealed to me as a comfort food. Ha.

Then the little sis and I hit up the grocery store to satisfy my Clear Splash addiction & grab some Diet Green Tea.

Again, Giant was out of my favorite flavor, Key Lime.  I had to settle for Tangerine Lime instead. 

Grrr.  Typical.

At least they had Turkey Hill Diet Green Tea.  Who else votes that this brand is King!?


My favorites are the Diet Mojito and Diet Green Tea with Mango!  They’re musts.  I’m a little sad that they discontinued the Chai Tea.  It had zero calories and an AWESOME flavor.

When we got home, I made dessert:

For lunch today I packed some broccoli slaw and meatless meatballs in Dei Fratelli marinara sauce

And what better way to start off my day than with another Pina Colada? Thank youuu, boyfriend.Mmm.

Not exactly nutritional all-stars, but they were mighty yummy 🙂

I snacked on these with a Jonagold when I got home as a pre-bike workout.  I biked for about 2 hours total burning 650 calories.

After biking, I steamed some broccoli slaw in the microwave, topped it with 1/2 C. (50 calories, 0g of fat) of this awesome sauce:

The flavor was insane for being a “light” sauce.  I could really taste the sweet basil.  It was awesome!  I also topped the bowl off with about 3/4 C. of fat free cottage cheese.  It was kind of off the cuff for a meal, but it ended up reminding me of the way lasagna tastes!  With the red sauce and riccotta cheese mixed!  SOOOO yummy.  And the sauce was perfectly sweet.  I will be remaking this soon 🙂  Foodie success!

Just Another Day In Paradise…

Mornin’ everyone! 

It’s already Wednesday, so we’re half-way through the week!  Friday will be here before ya know it 😉  Sooooo.  I’ve got some exciting news!!! But I think I’m going to be a brat and wait until the end of this post to share 🙂 

Let’s talk about last night. 

When I got home from work, I had an exciting package on my doorstep which started the evening out perfectly!!  I was due for a snack and was excited to see that Mariani had sent me some delectable dried fruit to review!   Stay tuned later this week for the official write up!  But let’s just say, I got my snackface on, for sure.

I definitely spoiled my dinner with these awesome treats.  But anywayy, after my snack attack, I tried to muster up some hunger and biked for about 1 1/2 hours while watching “Jumper” on my ipod and scanning the latest issue of InStyle Magazine that I got in the mail on Monday.

After showering, my appetite still wasn’t raging, but I knew if I didn’t eat anything I’d get the munchies later, so I whipped up a faux spaghetti bowl.  The family had beef chili over white rice for dinner, so I picked out and rinsed off some kidney beans out of the chili along with some stewed tomatoes.  I also diced some fresh tomato, added some black bean & quiona soup, 1/4 C. Hunt’s tomato sauce, red pepper flakes, minced onion, garlic and oregano

I microwaved this mixture for about 1.5 minutes to warm. 


Then I steamed some broccoli slaw in the microwave and topped it with the saucy mixture.  It was like a faux spaghetti bowl! It was perfect along side some Turkey Hill diet green tea.

For all of you who just “eeewwwww” ed, don’t knock it til ya try it!!  You’d be amazed at how similar it tastes to a bowl of pasta with red sauce.  Except it’s got 0g of fat, and under 250 calories.  I think I put a little too much red pepper flakes in the mix though, because my tastebuds were on fire.  Maybe next time I’ll add a wedge of Sonoma Jack’s Pepperjack Cheese?  I’m kind of upset I didn’t think of that last night! 

No dessert needed last night.  I was stuffed full of dried fruit and pasta broccoli slaw.

I wound down last night watching American Idol and packing my lunch/breakfast for today.  There’s some raw talent out there, lemme tell ya!

The 16 year-old girl (I forget her name) who speaks Portuguese was probably my favorite.  She rocked!  And I’ve gotta say, I think I liked her so much because I got to see how she interacted with her Grandmother and took such good care of her.  What a responsibility for a teenager!  She seems really genuine and sweet.

But, back to the eats.  I packed a lunch of egg whites, a La Tortilla Factory wrap with a Sonoma Jack’s wedge, splenda, and a side of steamed sugar snap peas for crunching

And for breakfast I concocted yet another cottage cheese blizzzzzard:

1/2 C. ff cottage cheese + 1 Tbsp. sf black raspberry jam + handful of frozen berries = dessert for breakfast? :)

I’m sorry for the lack of variety for breakfast!  I just LOVE this and it never gets old!  Plus, it does make for some b-e-a-utiful pictures, no? Check out the detail!

What's best, is that I leave these bowls in the fridge overnight, so the frozen fruit partially thaws and the juice mixes into the cottage cheese! Pleaaase try it!

Now for my exciting news….drumroll, please 🙂

I was selected to write as the Harrisburg Healthy Restaurant Examiner, which I found out yesterday!  I am so excited about the opportunities that this might present.  I love to write…especially about good, wholesome food!  It’s exciting!  I’m trying to brainstorm ideas for my first posting…Any suggestions would be welcomed & appreciated!  I’m thinking about doing something on the topic of new healthy options at the Macaroni Grille?  I heard they extended their “light fare” and it could make for an interesting piece!
