What I’ve Been Eating Wednesday

I know, I know…this is a food blog, so the lack of meal pictures recently is probably a bit of a let down…I promise, I’ll make it up to you with this “What I’ve Been Eating Wednesday“…here we go:

For her birthday, my friend, Mandy and I went out to her restaurant of choice, Hong Kong City. 

I hate that they call steamed shrimp with veggies “special diet food”, but I couldn’t resist ordering it.  This combo from a Chinese place simply can’t be beat.

I don’t know what makes the difference between their steaming and mine, but the shrimp always turn out to plump up SO big, and the veggies are perfect.

Too full for the cookie, but kept the fortune 😉

It was a fun night with a good friend. 

Lunches, as of late, have been dateless, but delicious.  I didn’t get to share with you all, but JARID was selected for one of the jobs he has been interviewing for!  I couldn’t be prouder (: 

Since we haven’t been going out to lunch, I’ve been throwing a hodge podge of ingredients together…all pretty healthy, might I add.

 Annnnndddd snacks include things like apples the size of my face.I wasn’t lying.

After work, I’ve been heading to the gym for some time on the elliptical/dreadmill and an ab routine with the boy.  Sometimes, I even think ahead and make my dinner before I go so it’s waiting for me when I get home.

It’s so nice just to pop a bowl out of the fridge and nosh away, especially after a workout.

Of course, I needed something more than just vegetables for dinner, so I have been whipping up peanut butter chocolate ABOUT TIME protein shakes for a dessert-like ending to my night. 

If you want a smoothie to last longer, I recommend eating it with a spoon.  Otherwise, it’s entirely too easy to gulp it down in this heat.

1 scoop About Time chocolate peanut butter whey protein, 8 ice cubes, splash of unsweet vanilla almond milk, water to thin, and 2 handfuls of baby spinach

If you haven’t tried xanthan gum in your smoothies yet, do it now.  It makes the consistency like that of a giant, milkshake.  SO yummy.  Janetha is the one who first opened my eyes to it.  Just another reason why I love the girl!

Bring On The Sunshine.

The best days start with award-winning bread.

If you don’t believe me, you’ve probably never tried Rudi’s Organic Bakery products for breakfast.  Trust me on this one, if you’re not a morning person, you will be after fixing a breakfast treat on one of their Multi-grain English Muffins with Flax.

Try them with some sliced banana and sugar-free strawberry preserves.  You’ll thank me later 😉

I had an eye-opening devotional this morning, too…

I couldn’t agree more!  It’s easy to run to God when things are going wrong to ask for help, but how many times do we spend time with him when things are going well?  Definitely something I need to work on…

My walking buddy and I took a gorgeous stroll in the sunshine down by the river today…two, actually, on our breaks at work.  I’m so thankful to be out of this rainy weather phase!

Lunch was eaten in four courses.

Course  #1: sweet potato steamed in the microwave and mashed with sugar-free vanilla Torani syrup + cinnamon

Course #2: romaine based salad with avocado, sliced baby bell peppers, and cucumber + free zesty italian dressing


Course #3: a few slices of Oscar Meyer Cajun Seasoned Deli Chicken

Course #4: Dessert!  Sugar-free orange jello cup

Yes, it’s a lot of food 🙂 On my way home from work, I stopped at the Farmer’s Market to replenish my vegetable stock that was slowly diminishing over the week’s time.

I do my best to support local farmers when I can! Alll of this fresh produce for $13.81.

I’m sorry if you’re tired of seeing this snack, but it’s a favorite!  Speaking of which, I should probably order more peanut flour soon…

Anywho, basketball was fantastic.

In a matter of two hours, I burned 1,007 caloriesIncredibleee.  Best.workout.ever.  I did miss my workout buddy, though…

I was feeling rather lazy, so instead of cooking, chinese food saved the day.

I literally have this meal at least once a week and have yet to get tired of it.

I knew my muscles would thank me in the morning if I downed a bit of casein rather than having a glass of milk before bed, so I opted for a KEY LIME protein shake for my dessert.

Yummmmm-oooo; in the words of Rachel Ray.

Here’s what went into the blender bottle:

  • 1 scant scoop of cookies n’ cream casein protein powder
  • 5 ice cubes
  • 1 handful baby spinach
  • 4 tbsp. 100% lime juice
  • 2 Splenda packets
  • 1/4 C. fiber one cereal
  • 1/2-3/4 C. water for blendability

You’ve gotta try this…I think next time I’ll add some unsweetened coconut, too!  So refreshing!

I may or may not have downed a Rudi’s Sweet Wheat bagel at 11Pm, too…those 1,000 calories that left my body on the court were calling out for carbs! 🙂

1. What’s your favorite smoothie combination? Depends what I’m in the mood for, but some of my addicitons as of lately are mocha mint and key lime.  I love to add fiber one cereal to my shakes!  It’s like those ice creams that have graham crackers mixed in.

2. Any exciting weekend plans? Jarid and I are going to the gym together today after work and then the drive-in’s tonight!  I’m excited…We’re seeing Insideous & Thor!


Champion Nutrition

Many thanks to Mary for hooking me up with a few samples from the company for this review.  Champion Nutrition has a great list of beneficial products for for weight lifters and people looking to gain muscle mass.  What you may not realize, is that you don’t need to be a body builder to partake in these delicious shakes and blends!  They are great for refueling after a tough workout or tiding you over after a long run until meal time. 

Personally, I’ve found the Pure Whey powders perfect for whipping into my oatmeal, or blending into protein ice cream!  My favorite was the Chocolate.  Then again, I only got to try the Strawberry, in addition.  The Strawberry was not as strong as I prefer flavors to be.  I was pleasantly surprised though, that the color was not totally artificial.  It was barely even pink when blended.  Both mixed easily into whatever I had on hand, mainly water or Almond Breeze, but the Strawberry had kind of a chalky aftertaste that I didn’t care for.

The stats for the Pure Whey are pretty fantastic.  26g of protein for just 125 calories!  And I love the fact that there isn’t much sugar in these powders, unlike a lot of protein blends!  Therefore, the carb content is low as well!  They’re also high in the essential amino acids and rich in glutamine peptides which promote muscle growth!  Pure Whey comes in flavors: Chocolate, Vanilla, Strawberry, Banana Scream, Cocoa-Mochaccino, Cookies & Cream, & Tropical Sunrise.  I think the last four sound totally dreamy!

They also make Ready To Drink Ultra Met, which I was also sent to review.  This stuff is creamy, rich, and perfect for on the go folks who need a quick pick-me-up.  It reminded me of Yoo hoo, actually, except with a more luscious consistency.  It was seriously like a milkshake!  The nutritional stats are MUCH better than that of a milkshake, however.  You can get it in

Date Night.

Anyway, it’s FRIDAY! Can’t wait to start the weekend.  Only about 7 more hours to go!  Tonight, I’m going out to see Date Night with a guy friend after my workout at the gym.  I’ve heard good things and hope it lives up to the ratings!  I love Tina Fey and Steve Carell, so I’m thinking it can’t be bad!

Back to yesterday’s eats.  When I got home from work, I had a snack wrap of laughing cow with sugar free blackberry jam on a flat out light.

Not as good as gala, but it did the trick and fueled me with some carbs for my workout!

I befriended my stationary bike, yet again, trying to avoid the same workout two days in a row (elliptical/gym machines).  I biked for about an hour, catching up on my Facebook page & watching “Friends“.

I decided it was time to refuel after burning off about 300 calories.

Eaten straight from the container. I know, classy, right?

 What can I say?  I was home by myself and I didn’t feel like making extra dishes.  There were already several waiting for me in the sink from the family that were used while I was at work. Yippee.  Probably ate 1.5 servings + some drizzled crack SF Log Cabin. 

I was bored with nothing else to do, so I went back to watch some episodes on the laptop.  I also downloaded the new Robert Pattinson movie, “Remember Me” while I biked for another hour, burning another 300 calories

Time for more protein!  And I had some cake batter on the brain.

Protein Shake

Small handful berries + spinach + 1 scoop Optimum Nutrition cake batter whey protein.


I also knew I needed some veggies in my life, so I opted for some steamfresh cauliflower out of the freezer.

I wanted something creamy, so I blended the cauliflower with some Sugar Free syrup & cinnamon for an oatmeal tasting flavor.

Next time, I’m going to microwave some chopped apple & add it to the mixture.  I think that’ll be like apple cinnamon oatmeal!!?  YUMMMMM.

Next on the checklist was a shower.  A much desired one at that.  I could seriously fall asleep in the shower or bath.  Anytime.  Not in any other than my own, obvi.

I jumped into my coziest pair of sweats and decided to embark on some coffee making for refrigeration and successful iced coffee creation later down the road.


This was no ordinary coffee though,

this was Caftea Birthday Cake coffee!


UHHHHHmazing.  I knew just by the aroma that it was going to be fantastic.  Buttery, sweetness filled the air.  You can buy this in my OpenSky Shop if you’d like to try it!   SERIOUSLYYou’ll love it.

I settled down and unwound, sipping my coffee, by packing my lunch.

I also realized, I have not been photographing my breakfasts.  NOOOO this does not mean, I’m not EATING them.  I just am usually in a rush in the morning, trying to get everything ready for work and forget to snap a pic when it’s something I don’t have prepared ahead of time.  As of late, it’s been the same thing every morning anyway, because it keeps me full for EVER and tastes yummy everytime.  Simply a protein shake with 1C. Fiber Select mixed in.  The shake trumps milk on my cereal because of the 24g of protein!  Don’t worry, it’s got Calcium, too!

Yesterday while I was at work, I realized I had about ZILCH fresh veggies in my fridge at home, which is un problemo.

edited to add: greek yogurt (which I ended up forgetting anyway).

When I got home from work, I changed real quick and got into my gym clothes.  Then I whipped up a few snackies for workout fuel:

Protein brownie

I tried out a peanut butter chocolate protein brownie that Lenny & Larry’s sent me to review…unofficially? It’s fudgy and dense.  Chocolate tooth? SATISFIED…almost 😉

Which led me to snacky numero dos.

Before I left, I played with nutcase for a little bit who was also soakin’ up the natural lighting.

She lives quite the luxurious life, no?

Anyway, it was off to the gym I went!  I ellipticized for about an hour and 5 min. watching the “King of Queens

and “Friends” (subtitles obv.) episodes on the TVs at the gym, while jamming out to Casting Crowns & Jeremy Camp on my ipod.

Then I did a little circuit work on the machines.  It was the typical abs & back followed by inner/outer thigh workout.

  • 3 sets of 20 abdominal crunches (25lbs)
  • 3 sets of 20 back extension (115lbs)
  • 3 sets of 25 hip adductors (115lbs)
  • 3 sets of hip abductors (85lbs)
  • 3 sets of 10 each side sit ups on the incline bench

I stopped at the store on my way home from the gym with all the goods to make a powerhouse lettuce-less salad when I got home to accompany my honey mustard tuna that I couldn’t stop thinking about since lunch!

Before I whipped up dinner, I made myself a recovery shake.

1 scoop Optimum Nutrition cake batter whey + 2 ice cubes + 4 frozen strawberries + water.

I roasted some carrots in the oven, but I don’t think I left them in quite long enough?  I just drizzled them with a little SF syrup after spraying the pan with PAM.

These taste like CANDY.  Seriously the sweet factor is amazing.

I found this GORGEOUS antique bowl that I hadddd to include in the post.  I’m thinking it was one of those “passed down” items through the family.

Then I got to work on dinner.  I chopped up some bell pepper, broccoli, chery tomato, and cucumber.

The tuna went exceptionally well with the veggies!


Afterward, I needed something sweet & juicy to wash down dinner, and I knew exactly what I wanted.

1/2 honeydew.

It wasn’t on my grocery list, but they were on sale and I couldn’t pass it up!  I ❤ melon.  Especially honeydew.

After my shower, I packed my lunch for today using some of the other items from my grocery stop.

Fat Free Cottage Cheese + 1 TBSP. Sugar Free Blackberry Jam + Calorie Free Chocolate.

Can you say raspberry chocolate cheesecake?! Speaking of cottage cheese mixes, the QUEEN of cc recently had a 1 year anniversary over at meals&moves and is hosting a giveaway of all her faves! I love this girl! happy 1 year, jb! 😉

From 85º to 50º??

How the heck is it possible to go from a day where it hits almost 90º to a day when it’s hardly 50º?  It figures that the weather would be beautiful all week while I’m stuck in an office and then come Friday, we hear that the weekend isn’t supposed to be that warm….Ahhh well.  Make the best of it, right?

The snackage when I got home from work consisted of another GREEN MONSTA.  I think I seriously start craving these when the weather is warmer?  They’re so cool and refreshing.

My current fave recipe:

  • 3/4 C. frozen mixed fruit (medley of cantaloupe, honeydew, peaches, & grapes)
  • 8 oz. Diet V8 Splash
  • 2/3 C. frozen chopped spinach (thawed a little bit)

Just blend all the ingredients together and you’ll be one happy foodie!

Next up, I munched on an unpictured Chococonut Granola Bar from Nature’s Path Organics, changed clothes, and packed my sneaks for the gym in my new Envitote! SOON TO BE AVAILABLE AT MY OPENSKY SHOP!

I also stashed my water bottle, ipod, & keys in there while I was running!

 I  got several compliments on my cute eco-friendly gym mate when I arrived!  Everyone was green with envi 😉  It’s perfect for anything, really!  I’ve also been bringing it to work with me to carry my water bottles/lunchbag/files! 

My hour long elliptical workout [650 calories] always goes so much faster if I keep myself occupied with things like magazines and literature while I’m doing it, so I snagged the Spring “Family Cirle” on my way to the machine along with an old edition of “Shape.  After the elliptical, I hit the obliques, abs & back…I know, I know…I neeeeed to change up my workout.  I just really want to focus on those areas right now.  Bathing suit season is JUST around the bend! 🙂  I also did an inner/outer thigh workout while I was there.  I’m really excited for Saturday when I get to try out my Oxygenfit system that I received to review! 

Tone-up kit!

On the way home from the gym, I gave my baby a bath 😉  In the four years that I had my GMC Jimmy, I never ONCE washed it.  Haha.  I also contemplated while washing away the suds what I was hungry for dinner-wise.  I planned it out in my head and my mouth was watering the whole way home.

On the menu, we’ve got roasted brussels:

I cut off the ends, sliced them in halves, and tossed them in a ziplock baggie with some SF syrup & low sodium soy sauce until the oven was preheated.  Then, I sprayed a baking sheet with some Pam & roasted these little gems at 375º for about 30 min.

While I was waiting, I gobbled up some of this delectable mixture as an appetizer, inspired by none other than JB and her cottage cheese & ranch concoction.

I could feel the sodium running through my veins…but totally worth it, since I just got finished with a pretty fantastic sweat sesh.

I was really craving something sweet after making this, and the brussel sprouts weren’t quite finished so I whipped up a yummy, sweet cauliflower soup to eat with it.  This may not seem appealing to you, but I was experimenting and it tastes AWESOME.  Reminds me of cream of wheat sweetened with brown sugar! 

I'm going to patent this recipe!


  • 1 bag steamfresh cauliflower
  • 1/4 C. sugar free Log Cabin
  • buttload of cinnamon

Blend together & voila!

SOOOO comforting, warm & yummy.

I’m tellin’ ya, you’ve got to try this! I let this dinner settle in my belly and washed it all down with this glorious tea:

I packed my lunch all up in my little black dress pink tote.  Same as usual, sorry!

egg whites in honey mustard, flat out w/ sonoma jacks, and a tub o' veggies for good measure.

I also packed my breakfast for quick prep in the AM:

banana split protein shake & fiber one.

Again, sorry for the sameeeee eats.  I’ve got a ton of this protein powder and I abs. love it.  This morning, I mixed it with some ice cubes, water, and banana split Capella Flavor Drops to make a nice little banana split treat for brekkie. 

For dessert?  A spoonful of SF vanilla ice cream & this ruby red:

A nice night for some Billy Madison, no?  Anyone else watch it while it was one last night?  I think they played it like 3 times in a row.  Can’t get enough of my man, Adam 😉

The Sun’ll Come Out Tomorrow..

It was a b-e-a-utiful day yesterday, with a high of 80º!  Today is supposed to be just as warm but with a little less sunshine.  I heard a last minute forecast that we’re supposed to have scattered thunderstorms.   Oh well!  Beats snow, right?!  🙂

The verse of the day today comes from 1 John:

“This is how we know what love is: Jesus Christ laid down his life for us. And we ought to lay down our lives for our brothers.”

When I got home yesterday, I made myself a protein cake a la Janetha.  This was my FIRST successful cake!  The others flopped miserably.  Guess you just have to have the magic touch!


Carrot protein cake with cream cheese frosting?

Isn’t it stunning?  I used Dixie Diners’ Carrot Cake Muffin Mix (2 Tbsp.), Optimum Nutrition Cake Batter Protein (3/4 scoop), 1 egg white, and some cinnamon & splenda.  Then for the icing, I melted a Sonoma Jack’s cheese wedge with some splenda and spread it ontop.

It made perfect pre-workout fuel.  I changed out of my work clothing and hit the gym.  I wanted something low impact, so I opted for an hour on the elliptical [600 calories].  Then I went to the weight room to do a little ab & back work.  I stopped at the grocery store on the way home so I’d have veggies to pack for my lunch! 

I was hungry for dinner when I got home and decided on some sugar snap peas with a protein shake & a sweet tater.  While I was waiting for my steamfresh veggies to be finished in the microwave, I snacked on a few sourdough pretzels dipped in this Vermont Co. Store pure raw honey. 


OMG.  Try this combo.  Honey dipped pretzel.  Sweet & salty perfection.

Before I knew it, my meal came together:

Mashed sweet tater with SF syrup & cinnamon.

Steamed sugar snap peas.


For the protein shake, I used Optimum Nutrition Oats & Whey Chocolate protein powder and it turned out fantastically thick & rich.  It really blended well with the strawberry flavor!  I may or may not have had a spoonful of Sugar Free Fat Free Vanilla Ice Cream for dessert.  You really can’t beat the stats though!  It’s Walmart brand.  It has 70 calories per 1/2 C. along with 5g protein & 4g fiber!  🙂  What more can you ask for when it comes to ice cream?  The taste is awesome too.   It reminds me of the Pillsbury canned vanilla frosting!

After this feast, I packed my lunch.

Plain Greek Yogurt w/ SF Syrup, Fiber One for topping, and a big tub of veggies!

In the veggie tub we’ve got a few all-stars including yellow pepper, cucumbers, tomatoes, & carrots.


Nom, nom.

The greek yogurt + cereal combo keeps me full for eeeeeever since it’s got so much protein and fiber. 

The flavors remind me so much of french toast!

Here’s to new starts and the celebration of Spring!  With that, I give you the Verse of the Day:

“If we confess our sins, he is faithful and just and will forgive us our sins and purify us from all unrighteousness.”- 1 John 1:9

This verse truly amazes me.  I can’t believe what a gracious God we serve.  No matter how many times I screw up, he is forgiving if I come to Him with a remorseful heart.  We can be “pure as snow” with just one confession to Him of our sins, because of His sacrifice on the cross.

Last night was totally EPIC.  When I got home from work, I fueled up with some carbs (a sweet potato & a Flat Out Light wrap with Sonoma Jack’s & Splenda) right before heading outside into the gorgeous sunshine that the Lord provided us with yesterday, for a 5 mile run.

I brought my camera so that I could bring you all with me on the journey.   I wanted to try out the “running photography”, Yes Man style 😉

Incase you can’t tell, I live in quite the rural area, to say the least.

But it makes for some stunning photographs, no? Check out how GREEN the grass is!

 This one is probably my FAVORITE picture, because I can see my shadow in the cement wall of the bridge! I was showing my Mom these photos and she said I looked like a dragon. Haha.

The hardest part of the run.

This sucker was long, slow and gradual.  I was so glad to get to the top!  Not to mention, it’s toward the very end of the 5 miles, so it kicks my butt everytime!

Okay, so I lied.  THIS is my favorite picture 🙂  And with that, I concluded my run.  When I reached my driveway, I moved my car so I could play a little basketball.  It was boring by myself, so I went inside to do some ab work before my sister and Mom got home from softball practice.  My Dad had ordered us Chinese.

I got my usual, and when the rest of the family got home, we sat down to eat dinner together.

As you can see, I hated it:

After dinner, I went outside with my little sister and played some basketball!  Taking advantage of the fact that it was STILL light out at 7PM 🙂  I whooped her butt in “one bounce“.

We came back inside, I showered and relaxed the rest of the night.  I packed my lunch and then made us dessert

For lunch today, I packed a big tub of veggies (cucumber, carrots, & yellow pepper slices), some deli turkey that I abs. love, and a Light Flat Out with Sonoma Jacks to eat at my desk.

OH! And before I forget to mention this!  HUGE congrats to my girl, Lyndsie!  She applied for an internship in Uganda, Africa and just found out a few days ago that she GOT IT!!! WAY TO GO, BABE! 🙂
