First Day Alone.

Pretty soon, you’re going to be tired of seeing the same old combination for breakfast.  I’ll apologize ahead of time, because I just can’t foresee anything looking more appealing to me in the morning than this combination.

(1/3 C. oats, 1 mashed banana, sugar-free vanilla Torani, cinnamon, pinch of salt, and 1/4 C. peanut flour)

The thing is, I learned something.  You MUST add a hint of salt to the peanut butter mix.  It takes things to a whole new level, which makes sense, since the best peanut butters I’ve ever tasted have a little added salt.  I used my Nutrasalt, which was the perfect addition.

I ate 1/2 of the mix at home and saved 1/2 for when I got to work…kind of glad I did since the lighting is so much better 🙂

I got a text from D with a timestamp of 7:43AM:

“Hey gorgeous, I’m at the airport, all settled in to wait.  I’ll text when I get to my connection. 🙂  Thanks for coming over last night”

It’s amazing what kind of comfort a text message can provide.  A little while later, around 10:30, I got a message from him again letting me know he made it to Charlotte.

Digging into lunch around 12PM was the only thing keeping me sane.  While in Germany, D won’t be able to use his phone, so communication will be limited.  He will, however have his computer.  I’m hoping for a Skype date this weekend…I’d like to see him on Valentine’s Day, but I don’t know how that will work, if at all, since the time difference is six hours.

Work dragged on as usual, and by the time 4PM rolled around, I was more than ready to get my butt in gear to hit the gym. 

Exercise is such a release for me, so I was really looking forward to meeting up with a girl on my team in the fitness center before practice at 5PM.

Dethawed, frozen pineapple pre-gym was necessary for a little natural sugar boost.  I also picked up some cherries walking back to my car from work since I go right past the farmers’ market.

Just as I finished up my 20 minute quickie on the Cross Ramp, my phone lit up…not that I was staring at it the entire time…:)  At 4:45PM, I got a text that read:

“Hey baby, I’m gonna get on the plane to Germany in a minute.  I’ll talk to you as soon as I can, honey.  I miss you already! Good luck this week with your games!”

My heart totally melted and I felt a sense of total peace after I said a prayer asking God to keep him safe.  He just has a way with me… I don’t know how else to describe it.

By the time practice was over, I’m pretty sure I had the whole team saying a prayer for his trip 🙂  Oh yeah, and I had burned 870 calories.  As soon as I got home, I was craving something cool and refreshing.

(1 handful frozen spinach, 2/3 C. almond breeze, 3/4 C. canned pumpkin, sugar-free vanilla Torani, 1 scoop vanilla whey)

You see, dinners for me consist of a mish-mosh of different cravings.  I wouldn’t have it any other way.  While my veggies were roasting in the oven, I nuked a little cheesecake oat muffin.

(1/3 C. oats, 1 tbsp. fat-free cream cheese +1 tsp. peanut flour+sugar-free vanilla Torani)

I actually ate a spoonful of fat-free chocolate fro-yo with this and it was like chocolate cheesecake!  It held me over quite nicely until the rest of my meal was ready to eat!  One thing I realized, is that I can really make a mess in the kitchen.  I re-use as many dishes as I can while I’m preparing things, but I ended up with a lot of clean-up!

Totally worth it, though, am I right?!

A good old veggie roast was just what the doctor ordered to replenish my body …in fact, a food baby was born.

Don’t worry, though, there’s still room for dessert…especially on my first night alone :-/  Chocolate was definitely in order.

Now that I was aware of how vital salt is in my peanut butter creations with peanut flour, I couldn’t wait to try out some more.  It makes a WORLD of difference, I’m telling you.

I made little peanut butter/chocolate sammies, which were divinee ❤  Check out the little flax seeds in the chocolate!  Outstanding.  Newtree Belgian Biscuit chocolate + Peanut flour paste (made the same way as in my breakfast bowl) is my favorite dessert.  It even overrides Arctic Zero ice cream.

I think my first night on my own wasn’t too bad.  I was happy with the way we left things.  We had an awesome night together before he left.  I completely adore his family and cannot wait to visit them again…oh yeah…and to visit him!  Only a couple of months and I’ll be on a plane to Denmark!

Thanks so much for all of your supportive comments and prayers for D.  I appreciate them more than you can imagine!  Blog friends are best friends, and I love each and every one of you 🙂

A Man In Uniform.

I had been dreading the day that D would be gone again since the first day he was home on leave.  I know he was really excited about it, so I did my best to be happy for him instead of being selfish. 

(1/3 C. oats + cinnamon + 1 egg white + 1 tsp. peanut flour, sugar-free vanilla Torani, & fat free cream cheese)

I had to work all day, and wouldn’t see him until after practice.  I wanted him to be able to get some good rest before the big day, so we decided that I would only stay for a few hours. 

(1 handful frozen spinach, 1 scant scoop vanilla whey protein, 1/2 C. frozen pineapple, 1/2 packet of Superior Oranges)

Work kept me busy and my mind off of the fact that soon I wouldn’t be able to talk to D on a whim.  He won’t have his phone over there, but he will have computer access which means lots of Skype dates in our future.

(1 end piece of Arnold 10 grain bread + sugar free apricot jam & 1 sonoma jack’s light pepperjack cheese wedge)

Truthfully, this was the first time in a long time that I just didn’t feel like eating…My glands have been swollen and I’ve had a sore throat for the past two days.  I’m achy all over and tired, so don’t think I’m just being dramatic about D leaving 😉

As you can see, I did stomach quite a bit of food, it was just on and off throughout the day…Besides, when you’re sick with a temperature, your body is fighting off infections and viruses, so it is expending more calories.  I made it appoint to fuel properly so that I feel better faster!

Practice was only an hour and 1/2 long because there was a playoff game for the 4th seed in our conference.  We had to be out of the gym by 6PM, which was perfect for me because it meant that I would get to see D sooner and for a longer period of time (sorry, no picture of the HR monitor, but I did burn 400 calories).  I showered at the gym and hit the road.

Eating dinner while driving probably wasn’t a great idea, but I managed.  My time there felt like a whirlwind.  It was here and gone before I knew it.  I did get to stay until about 12AM – unlike I planned – but it didn’t feel like enough time even then.

These two handsome guys got dressed up to take some pictures together before the big day arrived.  I totally lit up when I saw D in his uniform for the first time.  How can you not? I mean, look at him.

He and his father are a lot alike.  I could tell they were both swelling with pride, which I found completely adorable.  They should be proud.  They are amazing guys.

Of course, after a family photoshoot, I got an opportunity for some pictures with my Army guy as well.

I’m pretty sure the ones that his Father took came out a lot better than the ones on my phone, so as soon as I get them, I will post! 

I did pretty well when the goodbye part came… I didn’t even let him see me cry, which I was pretty proud of.  I saved the tears for the drive home.

My belly was growling when I got home (yes, at about 12:30AM)…not sure exactly why, I basically ate all day…but I obliged in the best comfort a girl could as for…

Please pray for a safe trip to Germany for D.  I would really appreciate that!

I know he will be safe in God’s hands 🙂

Rubber-Band Faith.

Absolutely LOVED the analogy in the devotional this morning…how true, right?!

Breakfast was a repeat.  I can’t seem to crave anything in the morning other than Cinnamon Raisin Swirl Peanut Butter Banana Oats anymore.  That’s quite a mouthful, huh?

  • 1/3 C. old-fashioned oats
  • 1 mashed banana
  • 1/4 C. peanut flour
  • cinnamon
  • 1/2 pack of raisins

Kid you not, I could eat this everyday, all day 🙂 

I realized when I got to work that I felt totally achy and beat up.  I’m not sure if it was because of the game the night before or what, but my neck, back, and shoulders were killing me.  I got a dead-leg in the game, and every time I took a step on my walk to my building, I felt a throbbing pain…I know, I know…stop being a baby, Sami 🙂

I dined at my desk for lunch, and incorporated some supplies that I picked up at the grocery store before my game yesterday.

(2 slices 10 grain Arnold bread with 1 Quorn chicken cutlet, steamed kale, and 1 tbsp. Light Zesty Italian dressing with a tub of veggies on the side including snap peas and cherry tomatoes)

I think I may be getting a cold or have some type of viral thing, because not only am I freezing and achy, the soreness in my neck also hurts where my glands are, making it hard to swallow.

I decided that my best bet was to pump up my Vitamin C intake like it’s my job!

Or maybe I just used that as an excuse to snack like a maniac at my desk throughout the day 🙂  What can I say?! I wanted to be properly fueled for my game!  Hehe.

Somewhere in between, I ate this amazing bowl of deconstructed CHERRY CHEESECAKE made healthy – aka, Cabot Low-fat Plain Greek yogurt mixed with sugar-free vanilla Torani syrup and then topped with sugar-free cherry pie filling and fiber one crunchy cereal.

Do yourself a favor and go try this immediately.

The game was a non-conference one, so it wouldn’t affect our top seed position if we lost.  That didn’t change the fact that we wanted to kick some butt! The first half was a bit rough…I think we were worn down from the game the night before because we laid it all on the line.   We managed to pull off a WIN, though!  The final score was 79-59.

After my game, I had Nutrition class! I’m so lucky to have an understanding professor who allowed me to go to my game and come to class a little late.

 We talked about carbohydrate makeup, digestion, fat soluble and water soluble nutrients, and food allergies. 

  1. glucose + glucose = maltose
  2. glucose + fructose = sucrose
  3. galactose + glucose = lactose

Eat food –> Digest to food to nutrients in the GI tract –>Absorb into circulation –> Deliver nutrients to cells

On our break during class, I ate dinner.

Plus, I had needed some protein, so I supplemented with an EAS Carb Control drink for just 110 calories and 17g protein.

When I got home, dessert consisted a few chunks of my fave chocolate bar.

I packed up all my stuff for the next day and hit the bed early.  Tonight will be the last time I see D for awhile…his flight leaves tomorrow morning at 8am…Please keep him in your prayers!  I’d love to see him off at the airport, but I don’t want to intrude on family time, so I think I’ll say my goodbye tonight…:-/

You know it’s going to be a good day when your morning starts off with a bowl of noodles 🙂  Plus, I love these colors together [orange + teal]

 It may be a stretch for some of you, but it hit the spot this morning!  For the sauce, I combined: 1/2 C. FF cottage cheese + 1 1/2 Tbsp. SF apricot jam in my blender with a splash of SF Vanilla Bean Torani syrup.  Then, I cooked up some Fiber Gourmet rotini noodles and layered them in the bowl, stirring in the cottage cheese sauce.  I diced up some cantaloupe to throw in, and VOILA!  It was kinda like baked unbaked peach cantaloupe keugel?!

Lunch time rolled around and I was ready to devour my packed sustenance.

After work, I scrounged up a last gala apple & some oikos for pre-gym.

The workout was the same 65 minute cardio routine on the elliptical at levels 7&9 (720 calories) followed by these moves:

  • 3 sets of 25 hip adductors @ 90 lbs.
  • 3 sets of 25 hip abductors @ 115 lbs.
  • 3 sets of 15 situps on the incline bench (each side; total: 135)
  • 3 sets of 35 “in-and-outs”
  • 3 sets of 10 pushups
  • 3 sets of 30 mountain climbers
  • 3 sets of 20 lat pulldowns @ 45 lbs.

Post gym, I hit up the grocery store to restock some goodies (aka water & gala apples).

As soon as I got home I started on dinner, where layers were key 😉

First, I cooked up 1 Applegate Farms Apple Chicken Sausage & some frozen veggies (broccoli, red pepper, onions, & mushrooms) on the stove top in 1/4C. Light Ragu.

This dish was loaded with Fiber Gourmet pasta, fresh and cooked veggies, and a tasty source of protein!  The flavors and textures were soooo yummy together!  You’ve gotta try it 😉

Weird quirk about me?  I don’t like the casing/skin on the sausages, so I peeled it off where I could see it!  haha. 

I cleaned up, packed lunch, washed some dishes, and showered up!  It was soon time for the next Skype date with Pops & I had exciting news for him!

While we were waiting for him to get online, I whipped up some dessert, which was breakfast inspired!

I just blended 1C. FF cottage cheese + 1 1/2 Tbsp. SF Blackberry Jam + Calorie Free Walden Farms Chocolate syrup + ice and sprinkled with a dash of Hershey’s Special Dark Cocoa powder.

 Since I got to share the good news with the family first, I’ll fill you in!  On my way to work yesterday morning, my favorite radio station, The Word FM was working on a project with Compassion International to get needy children from 3rd world countries sponsored by donations in hopes of giving them opportunities that they may have never gotten to have.

I just felt like God was convicting me so much that I needed to check out the website and see what I could do to help.  For $38 a month, or $1 a day, you can sponsor your very own child.  You’ll be able to write to and be in contact with this child throughout the entire process and can really develop a close relationship.  I clicked on the page to find out more information, and a handsome little boy from NICARAGUA popped up on my screen.

God was clearly speaking to me, so I can officially say that I am his sponsor! 🙂  I can’t wait to start writing to him and was thrilled to share the news with my Dad.  The info said that he lived very close to where my Dad is working down there, so Pops is going to ask around to see if anyone knows him!! How cool is that?!  If you think you could possibly help one of these children out, please check out the website for more info or even just to get a glimpse into the lives of the kids.  I thought of it this way:  If I can spare $1 a day for a Diet Mt. Dew out of the vending machine at work, I can CLEARLY afford to set aside that money for a child, instead 🙂

Date With Dad!

I know I say this everytime, but this is such a great verse.  It’s so true.  Some people look at Christianity as “set of rules” that you have to live by, when in reality it is SO much more than that.  A personal relationship with Christ who SAVED us, is the total JOY of my life.  Think of where we would be without it!  Doomed to an eternity in Hell.  As opposed to thinking of God as a “dictator“, try thinking of Him as the SAVIOR He is!

That being said, I guess we’ll start at the beginning.  Before I get carried away, make sure to head on over to Danica’s Daily for your chance to win some Biggest Loser books!  Breakfast was consumed at around 7:15 AM & consisted of the typical “SOC“.

I worked until about 12 noon when I breaked to eat my packed lunch!

I love sampler style lunches like this because I get to munch, munch, munch.  In the mix there are some cucumber fries, celery, orange pepper, snap peas, & baby carrots which got dunked in my sweet bean dip made with ff refried beans + sf syrup.

Ringling Bros. + Barnum & Bailey!

To my excitement, I saw this train outside my window at work.  Yes, this is the view from my desk!  Ringling Bros. are the most famous circus that I know of, and they’re coming to my area! 

My friend Josh & I already decided we’re totally going on Saturday night 😉  I can’t tell you the last time I went to a circus!! Does that, or does that not look freaking exciting?! 

Anywho, 4PM rolled around rather quickly and I was headed out to my Momma’s first District softball game as head coach. 

I decided some lunch dessert was in order (at 4pm?! I know ;)) before I left

I microwaved a diced gala apple for about 2 min, ground up some Fiber bran cereal, and combined with some cinnamon.  MMmm Mmmm GOOOD.

I wrote her a little card this morning wishing her luck and telling her how proud I already was of all she’s accomplished with the girls. 

This girl hit a TRIPLE around the 5th inning which scored a bunch of runs!

It was a great game, which we almost allowed to slip through our fingers!  The score was 6-1 going into the 5th inning, but by the 7th, we were tied up!  Finally, we got a nice poke to right field made by one of the senior girls, to score a run and come out victorious, 7-6.  Momma FF was like a celeb. afterward, being interviewed by newspapers!

It was approximately 7:13PM. Ha.

When I got home I decided on something light for dinner.  While my broccoli slaw was steaming in the microwave, I chewed on a whole grain sandwich flat slathered in Sonoma Jacks & SF apricot Polaner jelly+fiber.

I threw a Quorn Chick’n Cutlet with my broccoli slaw and drizzled in some SF syrup mixed with soy sauce for a sweet teriyaki flavor.

It was mighty good.  I just loveeee these easy frozen sources of protein.  They never go bad and always taste delish when you make them.  SO totally easy to prep, too! Perfect for when I’m feeling lazy 😉

Until the family got home, I went downstairs and hit the stationary bike for about an hour while facebooking (300 calories burned).

After dinner, we downloaded SKYPE!  Coolest thing EVER.  I got to have a date with my Daddy all the way in Nicaragua!!!  He comes home in FOUR DAYS!  Yes, the count down is on!  We chatted with him for about an hour & then I had a handful of bloobs for dinner dessert. 

We’ve got another Skype date tonight & I can’t wait!  Exciting news, coming tomorrow regarding a little boy from Nicaragua!

QUESTION TIME! 

1. Have you ever been to the circus?  If so, what’s your favorite “act”?  Once when I was really little!  I don’t remember much, but I LOVED the tigers.  Oh, and the acrobats!

2. Do you Skype & if so, what’s your fave feature?  I’m a newbie!  I love that I could actually SEE my Daddy from SO many miles away. Technology never ceases to amaze me.

All Twisted Up.

Wow.  It’s so funny how God knows exactly what we need to hear and always shows us what He wants us to work on.  This verse really hits home for me because I know I can be irritable sometimes and quick to anger.  I’m not an angry person by any means, but I let little things annoy me, causing me to lack showing God’s love to others.  I get especially impatient behind the wheel!

That being said, I hit the road yesterday morning with a perfectly satisfied belly. 

SOC = Smoothie Over Cereal.

Fiber Select (the generic brand of Fiber One at our local store) has been unstocked the past THREE times I was at the store.  What the heck, Giant Foods?!  I guess God is giving me opportunities to work on being slow to anger 😉  Haha.  It just stinks paying about $1 more per box for the “Fiber One” brand label when the nutritional stats for the cheaper stuff are even better! 

Before I knew it, lunch time rolled around and I had this savory packed dish waiting for me in the fridge at work to be eaten at my desk.

Aren’t you proud?!  It’s not the typical raw veggies with homemade honey mustard & a Light Flat Out, as per my usual packed lunch!  These salmon burgers from SeaPak are inspirational, I tell you 😉

I just cooked one up on the stove, steamed a bag of broccoli slaw in the microwave, laid a base of some fresh spinach, and topped the whole dish with a mix of sugar free syrup + soy sauce…asian inspired?  SO delish.  For my whole grains, I packed 1/2 of a Fabulous Flats whole grain sandwich flat and some SF Blackberry jam + fiber for spreading.

About the time I arrived home from work, I was ready for my carby protein snack and missed my beloved greek yogurt in my diet this weekend.

This snack fueled me through a good 9 miles on the elliptical at levels 7-9 burning 713 calories (or so the machine told me ;)) over a total of 65 minutes.

After cardio, I did some lifting & floorwork:

  • 3 sets of 25 hip abductors @ 115 lbs.
  • 3 sets of 25 hip adductors @ 90 lbs.
  • 3 sets of 35 “in-and-outs”
  • 3 sets of 1 min. Supermans
  • 2 sets of 15 & 2 sets of 12 sit ups on the incline bench to each side (total: 162)
  • 3 sets of 15 lat pull downs @ 45 lbs.

When I got home, I got to work on the party foods for girls’ night including THESE braided twists!

They’re basically pastries that come with frosting packets (one cream cheese & one chocolate).  The insides of the pastries are filled with either boston cream (for the chocolate sauce) or strawberry (for the cream cheese sauce).  They looked pretty neat, but the nutritional stats were pretty ugly, so I stayed away.  My Mom actually bought them from a school fundraiser, so they weren’t homemade.  They came in frozen plastic wrappers!  Not my style 😉 

 For dinner, I whipped together a quick salad.  I used a Quorn Chick’n Cutlet that the company sent me, cooked up on the stove top in salsa & taco seasoning.

Next, I heated up some ff refried beans in the microwave (not quite a whole serving), and mixed it with a touch of greek yogurt.  I used the rest of the yogurt cup for dressing, which I mixed with a little more salsa and some Hidden Valley Ranch seasoning packet.

I piled the goodies onto a bed of Mache Mix from Epic Roots along with some diced cucumber & orange pepper for veggie power.  I topped it all off with an extra dollop of salsa & chowed down.  There will DEF. be a repeat of this salad.  Mmmm.

I prepped the rest of the food for this Girls’ Night spread:

fruit, veggies, pastries, chips, crackers, & cheese.

The braided twists came out pretty well!

So far on The Bachelorette, I’ve got TWO picks:

Roberto & Jesse.

They both seemed totally genuine, but weren’t trying “too hard“.  Roberto was smooth with the salsa dancing, and I’m a total sucker for a man with dimples 😉  Jesse was just adorable and had that prince charming thing about him.  I was SOOOO glad to see JASON go.  He was a jerk the entire night!

Breakfast

It was an ordinary Thursday morning and nothing was standing in the way of my cereal and I

Optimum Nutrition Chocolate Mint SOC.

As I’ve said before, this is not just any other cereal.  By the time I get to work, I’ve already had about 114% of my DV Fiber 🙂 HA.  Is there such thing as fiber overdose? If so, I’m pretty much doomed.

Over our break, my boss & I hit the Farmer’s Market together.  I snagged the usual suspects: alfalfa sprouts, cherry tomatoes, bell peppers, gala apples, some kiwi & peaches.

Lunch 

This is when my day became EPIC.  The generous people at Epic Roots sent me some of their beautiful, fresh mâche mixes to try out! 

I was excited by the mere look of the dramatic shapes, colors, and textures of this blend.  See what I’m talkin’ about?

 Wild Arugula is officially my favorite green of choice for salad from here on out.  It’s also described as a “Mélange of sweet and spicy greens“.  The crunch of the leaves tasted so fresh…I had the absolute finest, most crisp salad base I could’ve asked for.

 I mixed things up again!  Thanks to the inspiration of Epic Roots & Quorn (who also sent me the most AWESOME lunchworthy goodies EVER –> Turk’y Burgers & Chick’n Cutlets!)  With grilling season just around the corner, what better proteins could a girl ask for?!

 I packed some Epic Roots topped with alfalfa sprouts, some snap peas, broccoli, orange pepper, cherry tomato, and broccoli for topping my salad along with a sliced Turk’y Burger & some carby acorn squash microwaved until soft, topped with cinnamon & SF syrup!  I could NOT wait to dig into this lunch. 

Before I knew it the work day was over.  I went straight from work to meet Middle FF seester for a movie with some buds.   Our friend, Adam is visiting this week from Alaska!  We all decided to meet up for a little Russell Crowe action 😉

Good movie, but insanely long.  The movie started at 4:10PM & we didn’t get out until about 6:30ish!  I had a gala apple while I was in the theater & had some packed Oikos before I went in, but by the time I got home, my belly was rumbling!

After dinner, I was kind of bored.  It was almost 8PM, and I had missed the last One Tree Hill because of the see-off dinner for my Daddy at Fiesta Mexico.  I decided it was in my best interest to catch up on it ASAP and take advantage of my downtime by doing some biking & episode watching 🙂  HOLY COW.  SO glad I didn’t miss that one.  Hailey is out of her funk, Brooke is engaged, and Clay & Quinn are…SHOT?!?  UGH.  Drama, drama, drama.

Afterward, lunch was packed, a shower was had, and this girl collapsed in bed.

A huge thanks to Suzy and Quorn for sending me some of their premium line of all-natural, meat-free frozen foods! These meat free products are also soy-free and deliver awesome taste for one-the-go lifestyles!  They have a long shelf life due to their frozen state, too.  The protein source used in all Quorn products is called, mycoprotein, Greek for “fungi”.  Don’t let the description fool you, this mycoprotein is highly nutritious!  Check out the protein & vitamin/mineral comparison to other foods!

I think the stats speak for themselves on this protein source!  I’m an even BIGGER fan of Quorn products now!  I got to try a handful of the products including: Chick’n Cutlets, Turk’y Burgers, Turk’y Roast, and Chick’n Tenders!  There wasn’t one of these products that I didn’t like, however, just like anyone else, I definitely had my favorites. 

I think I probably could’ve eaten one of these Turk’y Burgers everyday for the rest of my life and been totally content.  Slathered with a Sonoma Jack’s pepperjack cheese wedge and plopped on a light whole wheat english muffin with a little bit of pineapple salsa….MMmM!  Deeeelish

Just 90 calories for 10g of protein, 4g of fat (.5g saturated), and 2g of fiber?!  How can you lose?! 

I also thoroughly enjoyed the Chick’n Tenders.  They are the perfect protein addition to stirfries, salads, casseroles, etc!  I love that all of the Quorn products could also be prepared using a microwave! How convenient is that?!  After microwaving for a few minutes, I tossed my Chick’n Tenders with raw coleslaw and a sauce made from melted sugar free honey + balsamic vinegar.  It was AWESOME.  It reminded me of the Asian Chicken Salad from Applebee’s!  I should’ve added some mandarin oranges to top it all off!  There’s always next time 😉

Nom, nom, nom.

Each serving was just 80 calories, 10g protein, 4g fiber, and 2g fat (.5g saturated).  It made for a quick, packable lunch for me to take along to work!

These Naked Chick’n Cutlets were exactly the same taste and texture wise as the tenders.  Just like chicken!  I tried these topped with red pepper jam and the combo was out of this world!  They are also great grilled in BBQ sauce!  Paired with a sweet potato & some steamed veggies, you’ve got yourself a balanced dinner!  I also enjoyed these for making fajitas or burritos!  All you have to do is slice them length-wise into strips, microwave, add to a Flat Out Light or La Tortilla Factory wrap with lettuce, tomato, salsa, & some greek yogurt and you’ll out-do the BEST mexican you’ve ever had! The stats were exactly the same as the tenders!

Last but not least, we’ve got the Turk’y Roast!  This product is the PERFECT option for family gatherings and holidays as a substitution for the classic “butterball turkey”.  It’s got a whopping 14g of protein packed into just 90 calories with 5g fiber and 1.5g fat (.5g saturated).  Personally, I loved it for topping salads, slicing and eating in sandwiches & pitas, or just simply shaved by itself as a protein snack!  I think my favorite was roasting it in POM juice.  You have to try it!  It reminded me of Thanksgiving with cranberry relish!  So juicy and moist!  Move over Tofurky!  This stuff is 10X better.

Now they’ve created two new products!  Southwestern Chik’n Wing (can you say HEALTHY BUFFALO CHICKEN?!) & Cranberry & Goat Cheese Chik’n Cutlet!  They also make Garlic & Herb Chik’n Cutlets, Gruyere Chik’n Cutlets, and Chick’n Nuggets!   You can find them in the freezer section at your grocery store!  Check out the store locator on their website and visit the recipe page for more creative ways to use Quorn!

Hallelujah, it’s Friday.

So, last night when I got home, I was a little bummed about the chill factor, but decided to go for a run anyhow.  It wasn’t exactly COLD, but it wasn’t nearly as gorgeous as it had been Wednesday!  I grabbed this little guy from Granola Gourmet (reviews to come!) for some fuel and headed outside:

 I actually only ate 1/2 the bar (75 calories) because Wednesday, I felt like I ate too much before I ran, which slowed me down a bit.  The five miles felt MUCH better.  I only stopped for a few minutes to talk to our family friend, Kimmie as she was driving by in her mini van! LOVE that girl. 

When I got home, I decided to experiment a little bit.  I wanted to pack my lunch, but I also needed to whip up some dinner.  I steamed a whole bag of these steamfresh veggies, california blend to be exact, and topped it with salt & pepper with mustard on the side for dippage

If anyone has had the privelage of winning or working with Progresso, they know what I mean when I say I LOVEEE the huge, blue mug that I have from them.  It’s so PERFECT.  Big enough for mixing, steaming, whatever! 

Anyway, as I was prepping my lunch for today I had a few handfuls of this addicting cereal:

Lunch today is some Quorn Chick’n Tenders with some coleslaw for crunch and all mixed in with some balsamic vinegar + sugar free honey homemade dressing. 

Asian Chicken Salad.

Along with this beastly salad, I packed a navel orange to enhance the asian flavors:

To top off my dinner, I knew I needed some protein!  I decided to experiment a little bit and tried to make one of Janetha’s protein cakes with my BSN banana nut bread protein powder.  I failed miserably.  I don’t know what went wrong?  I used the correct amounts of everything???  The only thing I can think of is that maybe I didn’t mix it well enough before popping it into the microwave. 

Anyway, I had the whole house to myself last night, so I felt like a mad scientist in a lab.  I went to work with my Bella, in an effort to create a Strawberry Cheesecake GREEN MONSTER

EUREKA.  Seriously, you MUST try this recipe.

Strawberry Cheesecake Green Monster:

  • 1/2 C. Fat free cottage cheese
  • Handful spinach
  • 1 oz. Sugar Free Strawberry Torani syrup

IT’s SOOO easy, but so yummy.

Trust me on this one.  To die for.  After consumption, a bike ride on the stationary was taken worth 200 calories, and some ab work was done on my living room floor 🙂

On that note, HAPPY FRIDAY!  I’ve got lots of fun stuff planned for this weekend including family egg painting tonight at mi casa, a massage with my bestest tomorrow, a wine & movie night with Nic on Saturday, and softball fundraiser bingo with the troops on Sunday after church!
