Sweet Six <3

I broke my dating/relationship record this weekend.

Everyone was so proud.  Haha.  See, I’m not the kind of girl to lead a guy on.  If I don’t see anything developing long term, I don’t mess around.  I feel like it isn’t fair to either party.  As you probably can tell from my posts, Jarid (the boyfriend) and I are very happy.  I can honestly say, I never thought I’d find someone to put up with my control freak personality, insanely packed schedule, my abnormal healthy eating habits, and my quirky sense of humor…let alone someone I’m absolutely, head-over-heels, crazy in love with.  It’s only been 6 months, but I’m confident he’s the one.  When you know, you just know.

 Along with my lovely weekend with him, I made this beautiful salad.  I’m thinking I might add brown/long grain rice to every salad from now on…at least the ones drizzled in Annie’s Lite Honey Mustard (aka my new favorite).

Halloweeny Weekend.

Friday afternoon, we had a pretty leisurely basketball practice.  After all, the girls had their first game on Saturday, so coach wanted them to be nice and rested.

I came home to a kitchen full of helpers getting ready for the big Halloween party to be held on Saturday night by my sister & cousin along with their friends. 

 They made all sorts of goodies for the party and pretty much went all out.  

Momma Freckled Foodie even dyed the Mac & Cheese green so it looked like it was moldy.

The cut out bats & pumpkins from the loaf of bread for the spinach dip!  Too cute.  I was hangry when I got home and immediately upon smelling all the cooked foods went into a salad making frenzy.

Spinach, alfalfa sprouts, tomato, cucumber, avocado, orange pepper, and fat-free Vidalia onion dressing.  And a vitatop to round out my meal.  Later on, I also took a dive into the sugar-free fat-free vanilla ice cream container waning in the freezer.


In the morning, I ate a naner and a vita, did insane abs, biking, & ellipticalling until it was time to shower and get ready to go support my girls in their first basketball game!

Before I left, I wolfed down this monstrous salad.  It had a new addition, though!

The girls kicked BUTT at the game.  It sucks that I won’t be able to play until Spring, but I was glad I went anyway.

Final score!!  They annihalated the Philly team!  I was so proud of them. 

After the game, I took advantage of the fact that I was in the Harrisburg area, and went sneaker shopping.

Not bad for under $50!  🙂  I think they’re cute.

I painted my nails and got ready for the party.  Guess which color I chose.

My costume was quick and easy.  🙂

I decided a runner would be suitable.  I actually RAN to the party. LOL.  It was only out the street from our house in a barn.  You can’t see it in the picture, but I did have a medal on that I won in a 5K last year.  It was under the jacket.  I also put on a nike ear warmer headband.

Before I left, I threw together a sampler platter for dinner.

Veggie Patch meatless meatballs with Garlic Lovers Cedar’s Hummus, Tzatzki Cucumber Garlic dip, tomato slices, baby carrots, cucumbers, and sprouts all with two slices of Low Carb Julian Bakery bread.

A lot of costumes at the party were super cute, but here were some of my faves.  Keep in mind, this was a FAMILY & friends party.  Clean cut, of course 😉





The kids bobbed for apples, took a hay ride, danced, hung out by the fire, and played a few other games…like this one!  They had to see who could eat the donut off the string fastest without using their hands.

It was so funny to watch, because they were swaying back and forth trying to reach them.  Then you had the smart alecks that decided to cheat 😉  Haha.

The bonfire was my favorite.  I ran home, consumed a large bowl of steamed vegetables with light ragu after ward + a big, juicy apple, and went to bed.

It was an ordinary Thursday morning and nothing was standing in the way of my cereal and I

Optimum Nutrition Chocolate Mint SOC.

As I’ve said before, this is not just any other cereal.  By the time I get to work, I’ve already had about 114% of my DV Fiber 🙂 HA.  Is there such thing as fiber overdose? If so, I’m pretty much doomed.

Over our break, my boss & I hit the Farmer’s Market together.  I snagged the usual suspects: alfalfa sprouts, cherry tomatoes, bell peppers, gala apples, some kiwi & peaches.


This is when my day became EPIC.  The generous people at Epic Roots sent me some of their beautiful, fresh mâche mixes to try out! 

I was excited by the mere look of the dramatic shapes, colors, and textures of this blend.  See what I’m talkin’ about?

 Wild Arugula is officially my favorite green of choice for salad from here on out.  It’s also described as a “Mélange of sweet and spicy greens“.  The crunch of the leaves tasted so fresh…I had the absolute finest, most crisp salad base I could’ve asked for.

 I mixed things up again!  Thanks to the inspiration of Epic Roots & Quorn (who also sent me the most AWESOME lunchworthy goodies EVER –> Turk’y Burgers & Chick’n Cutlets!)  With grilling season just around the corner, what better proteins could a girl ask for?!

 I packed some Epic Roots topped with alfalfa sprouts, some snap peas, broccoli, orange pepper, cherry tomato, and broccoli for topping my salad along with a sliced Turk’y Burger & some carby acorn squash microwaved until soft, topped with cinnamon & SF syrup!  I could NOT wait to dig into this lunch. 

Before I knew it the work day was over.  I went straight from work to meet Middle FF seester for a movie with some buds.   Our friend, Adam is visiting this week from Alaska!  We all decided to meet up for a little Russell Crowe action 😉


Good movie, but insanely long.  The movie started at 4:10PM & we didn’t get out until about 6:30ish!  I had a gala apple while I was in the theater & had some packed Oikos before I went in, but by the time I got home, my belly was rumbling!

After dinner, I was kind of bored.  It was almost 8PM, and I had missed the last One Tree Hill because of the see-off dinner for my Daddy at Fiesta Mexico.  I decided it was in my best interest to catch up on it ASAP and take advantage of my downtime by doing some biking & episode watching 🙂  HOLY COW.  SO glad I didn’t miss that one.  Hailey is out of her funk, Brooke is engaged, and Clay & Quinn are…SHOT?!?  UGH.  Drama, drama, drama.

Afterward, lunch was packed, a shower was had, and this girl collapsed in bed.

It’s official.  I have slain a live animal.  On my way to the gym yesterday after work, I hit my first squirrel 😦  I swear it came from out of no where!! I was just about in tears.  I was praying that it didn’t suffer at all and I’m pretty sure it didn’t, considering I looked in my rear-view mirror and saw something pretty ugly.  This is going to sound absurd, but the blogger in me seriously contemplated going back to document aka photograph the accident so you guys could mourn the animal death with me. HA. 

Anyway, I guess we’ll start at the beginning

Breakfast yesterday was pretty boring.  But cereal is exciting for me!  Any other cereal lovers out there?!

In place of milk, I use water blended with 4 ice cubes + 1 scoop Cake Batter Optimum Nutrition protein powder.  LOVE that protein! 

When I got to work, I sipped on this AWESOME iced Caftea Birthday Cake coffee I mixed with a little SF Vanilla Torani Syrup at my desk. 

My snackTAXI is in the washing machine, so I shamefully opted for a ziplock baggie for my wrap!  Don’t worry, though, I use them over & over again!

Lunch was some steamfresh broccoli topped with reduced sugar ketchup with 3/4C. egg beaters + reduced sugar ketchup mixed, along with a La Tortilla Factory low-carb high fiber wheat wrap with a wedge of Sonoma Jacks pepperjack cheese & Splenda.

It’s the 2010 Pillsbury Bake-Off 100 Winning Recipes Cookbook!  Just a little reminder, you can actually WIN YOUR OWN by submitting a recipe on the Eggland’s Best site, as I announced in this post, by April 30th

After scanning through the pages, I got changed and hit the gym for an hour of cardio on the elliptical.  For some reason, I wasn’t hungry for a snack between work & the gym today. 

On the way home, I stopped at the grocery store, mainly because I was craving a big bowl of veggies for dinner and my produce stash was completely depleted.  


It was a huge, beautiful bowl with just about each color of the rainbow represented 🙂  Broccoli, cauliflower, yellow pepper, tomato, cucumber, and spring mix on the bottom.  I topped the bowl with homemade honey mustard (1/4 C. SF syrup + mustard to taste) mixed with 1 whole can of light tuna.  

Post dinner plans were to shower, pack my lunch, and relax.  Our house was finally alllllllmost finished.  Now all that’s left to do it put the trim back on.  The hardwood floors are in, the hallway/living room is painted, and all of our photos have been re-hung! Check it out:

After admiring all the beauteous additions to our home (props to Poppa Freckled Foodie!),  I decided it was time for dessert.  I picked up some fresh strawberries at the grocery store, and knew exactly what I wanted to make. 


Sliced strawberries + frozen deep chocolate Vitatop topped with Oikos mixed with Calorie Free chocolate syrup from Walden Farms.

For some reason I prefer my Vitatops cold/frozen as opposed to warmed in the microwave? All I know is, this was the perfect ending to my Monday!  I caught up on Dancing With The Stars and One Tree Hill while consuming this, which only made it that much more enjoyable.  There’s some crazy stuff going on in the OTH world!!  Totally scandalous 😉 

Any OTH fans out there?  I missed part of the episode, so fill me in!! Maybe I’ll watch it online tonight 😉

Last night, I finally broke down and bought a membership at the gym in our town.  Even though it’s $39/month, I figured it was dumb not to.  I’m not sure how long it’ll be before I get the elliptical from my Aunt, and I don’t want to keep paying $7/day to use the equipment.  I figured, I’ll at least get my money’s worth! 

Anyway, I left work early yesterday because I had a dentist appointment.  No cavities here! 🙂  It was just my 6 month cleaning.  When I got home I made some snacks to fuel my workout.

I did an hour and five minutes on the elliptical at level 7.

Then, I hit the ab crunch machine.  I only used 25lbs. but I did 3 sets of 20 verrrrrrry slowly, making sure to get the best burn for my buck 😉  I’ve noticed that a lot of people at the gym, including myself, just “throw weight” around.  It was brought to my attention by a nice man on Saturday morning while I was there.  He reminded me that the better control I have while I’m lifting, the harder my muscles are working.  You can do 3 sets of 50 quick reps or 3 sets of 20 slowly and get a better burn for keeping your muscles contracted and not using gravity to your advantage.

After the abs, I did some side crunches, and 3 sets of 30 each on the hip abductor & hip adductor machines with about 100lbs.

When I got home, I started on dinner. I decided I was in the mood for beans, and I wanted to try this yummy looking blend that I got in the mail from Allen’s!

After heating up the beans, I spread some on a Light Flat Out for a bean burrito & then topped my lettuce for a side salad, too!

I really loved the sweetness of the vidalia onions that flavored the beans!  It was perfect.  After I ate the main course, I packed my lunch to avoid double the clean up.  You guys are going to be SO glad…I’m officially on the last carton of hard-boiled eggs from Easter!  That means variety in my lunches again!  😀  I can hear you cheering from here.

This time for my homemade honey mustard, I also added cinnamon.  I think it’ll make a nice touch.  It certainly tasted good when I licked the spoon after combining!

I needed something sweet for dessert, so I reached for the Oikos & spooned a few dollops into a bowl topped with some SF syrup.


Tasted just like a caramel parfait….I should probably invest in stock with Log Cabin SF syrup.  I use it at LEAST once a day.  It’s just that good.

The rest of the night was spent organizing my closet!  Putting away Winter stuff & getting out all the Spring/Summer clothes that had been packed away!

Before bed, I also had an apple & some diet sweet tea, but it wasn’t very photogenic.  Just a basic golden delicious!

Weekend Recap!

Soooo Friday night when I got home, I almost immediately hopped on the exercise bike so that I could get a good workout in before heading to Harrisburg to meet up with some friends.  I biked for about 2 hours while watching “Extreme Makeover: Home Edition” on my laptop. 


My family left for my younger sisters’ basketball tournament around 6PM and would be there overnight into Saturday.  I was meeting my friend Rachael and her buddy Wade at Damon’s where they were having dinner and then we headed to Bourbon Street downtown for a little while.  It didn’t last long, which I was glad for because going to a bar isn’t my thing at all…We decided to go bowling instead and made our way to ABC East.  It was a fun night! I got home around 2 AM and went right to sleep.


I woke up to an empty house, as expected and made some breakfast.  I must’ve been craving protein, so I made some frozen berry cottage cheese with Fiber One topping:

I did a lot around the house on Saturday like laundry, paying bills, and tidying up.  I also biked on and off alll day until about 4PM.  I had a big date to get ready for!  I was going ice skating with my cousin, her boyfriend, and her boyfriend’s buddy.  Names will remain annonymous.  I haven’t exactly told him much about the blog yet, as far as what it entails, but he does know I have one and that I’m a nutrition nut.  He was really sweet and brought me a rose 🙂  Not to mention, he was a perfect gentleman all night.  After skating, we needed something to warm us up so we grabbed some coffee and chatted for a little while longer.  After dropping off my cousin and her boy, we sat in the car and chatted for about 1/2 hour before we headed our separate ways.  He invited me to his church the next morning, and I happily accepted.


As late as I got home the night before, I felt like a nice little workout before I went to meet up with [the boy] for church would wake me up a little, so I biked for about an hour.  Only burned about 300 calories

Then I made breakfast:

Greek yogurt+Fiber One+ SF syrup.

After that, I got a shower, I prettied up for church and headed to Carlisle to meet [the guy] for church.  After the service, we went to Panera for coffee together.  I can already tell this is the start of something good.

Then, I met my family in Harrisburg for lunch at the Jade Buffet.  This place is awesome because, along with a salad bar in addition to all the fried nasty chinese food, they’ve got a bar of raw meat and veggies without sauce, completely plain.  You can make a plate of your own meat  & veggies, hand it to the chef, and ask him not to cook it in oil, just water.  Which is exactly what I did 🙂 Sauce on the side, of course.

This was TOTALLY my favorite meal of the weekend.  FOR sure.  The sauce that I sprinkled on was brown and watery, with just enough garlicy flavor to spice up my veggies and protein 🙂

For dessert, I had a plate of cantaloupe from the salad bar that went unpictured.

From there, we went to Wolf’s furniture store so my parents could do some bedroom decor shopping.  They bought a new bed frame and furniture to match, which I absolutely love.

Then, we picked my sister up at Messiah and we went bowling!  I’m not very good, but I had a lot of fun and scored over 100 each game! 🙂  Yay.  After bowling, we had plans to go to Olive Garden for dinner, but the wait was outrageously long, so we opted for Applebee’s instead.

I didn’t want any of the salads on the menu or any of the sandwiches, but the waitress really hooked me up with a basic salad & sandwich.  Everything had some sort of fatty dressing/topping, that I just wasn’t feeling.

Myranda’s friend, Bekah who is home from PSU on Spring Break, came with us too!  She ordered the Shrimp & Broccoli alfredo which came in a humungo bowl! It was so pretty that I had to take a photo.

Pros vs. Cons

On a positive note, here’s your Verse of the Day 🙂

On a little bit less positive note, I’d like to make a public apology for using Ash’s amazing Rush Bowl pictures.  She is truly a talented food blogger and photographer.  I guess I was a tad naive in believing that it wasn’t a big deal to borrow photos without asking.  I promise I meant no harm, and I am sincere and remorseful for to those of you that I’ve offended.  I am a newbie and I suppose for most of you its common sense, but I have learned a lesson and will no longer use a photo without asking permission.  Thank you for bringing it to my attention so I didn’t continue doing something harmful without realizing it.  I wish I had been told the first time that it happened so I wouldn’t have continued to do it!

Anyway, back to the positive.  The Bachelor is OVER! The pro:  We don’t have to sit through the torture of watching someone break good girls’ hearts, while the seemingly immature win out.  The con:  Girl’s nights with the family are over…unless we find a new show to watch!  Which is what I’m gunning for 🙂 I’m not even going to waste my breath ranting about Jake’s choice.  If that’s the type of girl he wants, then he doesn’t deserve a girl like Tenley anyway.

Pro:  My Dad fixed my stationary bike for me!  I was able to bike 600 calories off when I got home from work last night.  Con:  It may not live very much longer.



Pro: Dinner was epic.  My Dad took good care of us last night!  He had fresh greens, cherry tomatoes, sliced strawberries, pork chops, and baked potatoes.  (Baked microwaved sweet potato + sugar free brown sugar cinnamon torani & strawberry salad with asian silk 1 calorie per spray dressing) Con: I am now completely out of SF brown sugar cinnamon syrup



I also had a La Tortilla Factory Wrap filled with banana slices and Dark Chocolate peanut butter from Sunland Inc.  It wasn’t too photogenic, but tasted really delish!  Reviews on the peanut butter to come!  They also sent Raspberry & Banana infused peanut butters as well!  I can’t wait to try them.

After dinner, I packed my lunch for today:

Leftover salad from dinner + a few modifications.

I added some sugar snap peas, cherry tomatoes, sliced strawberries, and broccoli to my salad.

Then I packed a Quorn Turkey burger with a La Tortilla Factory wrap & a Sonoma Jack’s Pepperjack Cheese wedge.

Packed in a classy manner with a ziplock baggie 🙂

After the Bachelor I passed out pretty quickly.  I was soooo sleepy!

Saturday Recap

Saturday morning came, and this girl was pretty excited

I got a text at 6:30AM from our yoga instructor who is also a personal trainer, letting us know that she would be having a “boot camp” class at 7:30AM before our 8:30AM yoga class!  I was so pumped.  Usually the boot camp classes are before work on Tuesdays and Thursdays so I can’t make it.  We only have one shower in our house and since my Mom goes, we would both need to use the shower at the same time to be able to get ready for work in time, which wouldn’t work out. 

Before I went, I had a quick breakfast of this guy:

Boot Camp consisted of many fun activities.  Jump rope, weighted frog hops, hip lifts, planks, side planks, weighted moon flowers, tricep dips, and squats.  Following boot camp, we had yoga.  It wasn’t too intense of a yoga session, but it felt good to stretch after boot camp, nonetheless.  After yoga, I changed into my running gear and hit the road.  I ended up running about 6 miles, and back home.  Upon arrival home, I hit the stationary bike for about 40 minutes

Afterward, I made a quick snack of some fat free cottage cheese with sugar free log cabin syrup drizzle:

After my snack, I got a shower and got ready.  My sister and I were going with my Dad to visit my Grandma & Pap Pap who recently moved to Mt. Joy, about an hour from us.  My grandma just had foot surgery, so we wanted to check up on her.  We stopped at Sheetz on the way to pick up some lunch!

I’m sorry, I don’t always have a camera available since mine is currently broken.  It looked a lot like this though:


I got the chef salad with all turkey instead of ham&turkey, romaine lettuce, tomato, onion, jalepenos, banana peppers, cucumbers, green peppers, salt, and pepper.

I also snagged a bag of Sugar Free Black Cherry Jello bites and some liquid crack.

After visiting them for awhile, I snacked on a cup of coffee & an apple.

Then some strawberries and baby carrots.

I guess that much exercise in the morning makes your appetite rage the rest of the day!?

On the way home, around 6PM, we called the local chinese joint to order some dinner.  I got the steamed shrimp with steamed vegetables, the usual.

President’s Day!

It was SO nice to sleep in on a Monday morning for once!  Having Monday off always makes the week seem to fly by!  I was looking forward to a day out with Dad, car shopping!  But first things first. 

For breakfast, I grabbed a chocolate Vitatop slathered in Better N’ Peanut Butter.

After biking off about 400 calories, I knew I needed to refuel 🙂 [THE BEST PART OF A WORKOUT]

My weapon of choice?  Jay Robb could satisfy, so I went with a vanilla protein shake.

 I also did a little bit of ab work before I got a shower including some planks, sun salutations, and bicycles.

Then it was time for car shopping with Daddy-0!

First stop, Sutliff Cadillac/Hummer.

I saw this Mercury Montego online and loved it!  I was looking for something classy, with decent mpg, and AWD, but I didn’t want an SUV.

Not to mention,  it’s a full-sized car and fairly heavy (safe).  Unfortunately, the price was a little out of our range.  I truly loved it though.  Fully loaded with everything you could ask for.  We took it for a test drive and everything.   I just figured, it wasn’t meant to be!  Unfortunately there weren’t any other noteworthy cars found, in addition. 

We grabbed some Sheetz for lunch.  It was quick and convenient.   One of the better things I’ve gotten from sheetz, actually!  Unfortunately, I didn’t have  my camera, but it looked something like this, minus the olives + turkey 😉[source]

It was the Chef Salad on the MTO menu, but I asked for all turkey instead of ham, and without cheese or croutons.  I didn’t even need dressing!  The veggies flavored it perfectly.  Romaine lettuce, tomatoes, cucumbers, pickles, banana peppers, green peppers, and jalepenos with a little salt, pepper, and oregano.

From there, we did a few more drive throughs, but didn’t find much else.

I came home, cleaned a little bit, did some laundry and by that time, I was ready for dinner.  I made a nice little whole wheat wrap with cottage cheese, cucumbers, tomatoes, and had some baby carrots on the side.

Then, I had a serious craving for green beans about an hour later, so I ate a can.  Yes, a can 🙂

I made another Fireman’s Apple Pie for serving to our guests at girl’s night and prepped everything to make it “Bachelor” watching friendly.   It ended up snowing, causing people to be too scared to come out in the weather so we just watched it ourselves, in the comfort of the basement & on the big screen.  It was just my Mom, my cousin, Renee, and I:) Still fun!

I had some pumpkin fluff for dessert while they enjoyed the apple pie with vanilla icecream.  They don’t know what they’re missin’!

Just what the doctor ordered! 🙂

Last night wasn’t too strenuous, actually.  Neither was the rest of this week.  It’s just something about the long weekends that makes me excited…not to mention, there are also some awesome SURPRISES in store this weekend.  I’m pretty safe mentioning this on the blog considering my grandma has no idea how to use a computer, or cares to touch one…ever…haha. Soooo we’re having a surprise party for her on Saturday to celebrate her 70th birthday!  She’s probably the most giving, selfless person that I know, so it will be interesting to see how she reacts to a party in which SHE’s the guest of honor!   She has made so many sacrifices for our family  and she’s always there when someone needs something.  She would give the shirt off of her back for a stranger.  She also makes the best apple dumplings in the whole world 🙂  I’m going to have to figure out a way to make a healthy recipe adapted from hers….

Dried Mango

Anyway, back to last night.  I got home from work and snacked on some dried fruit, starring dried guava and mango that Oh!Nuts sent me!  It was fantastic = unofficial review.  After I ate my weight in these goodies, I jumped on the exercise bike for a good 1 1/2 hours.

Some Guys Just Can't Handle Vegas!

I’ve been learning little ways to keep myself entertained while on the bike which make the time go by really quickly.  I downloaded “The Hangover” to my ipod, watched about half, facebooked, and then finished the movie.  Before I knew it, I had biked off 500 calories.  Then it was time to shower, get ready for the high school girls’ basketball game, and eat some dinner. My Dad is an assistant coach, so I go to the games more so to support him than to watch the team.

For dinner, I was really craving a big bowl of raw veggies with some pineapple salsa, but I was completely out…sooo I improvised!  I had some SF orange marmalade (that I tried in my cottage cheese mixes and HATED) that I tried mixing with some kidney beans and regular salsa which turned out looking like this:

But on top of the salad, it was seriously awesome!  It tasted more like mango salsa than pineapple salsa, but I’m not a fruit discriminator 😉  I just wanted the sweet & spicy taste in general.  To round out the meal & get some whole grains in, I toasted a slice of 100% whole wheat bread, and topped it with a wedge of laughing cow cheese with splenda.   Just like sweet cream cheese!  Foodie success.

I didn’t feel like prepping breakfast or lunch for today at all last night, so I kept it basic with 1C. Fiber One + 1/2 banana (sliced) + 1/2C. ff milk.  For lunch, I’m thinking Simply Turkey for a Boss Salad?  They’re such a treat!  🙂
