Mission: Save Someone.

Posted on

My FAVORITE part of these posts is always at the beginning.  It’s what starts my day off on the right foot and puts my focus in the right place.  It helps me remember what’s MOST important in life and reminds me of the REAL reason why I’m even here.

This morning, it was said best by another favorite, Chris Tomlin.

Amazing grace, how sweet the sound
That saved a wretch like me
I once was lost, but now I’m found
Was blind, but now I see
‘Twas grace that taught my heart to fear, and grace my fears relieved
How precious did that grace appear, the hour I first believed
My chains are gone, I’ve been set free
My God, my Savior has ransomed me
And like a flood His mercy rains
Unending love, Amazing grace

2 Lite Van’s waffles with a Morningstar maple flavored sausage all drizzled in 1/4 C. Sugar Free Log Cabin

After all, is it really going to matter what we had for breakfast that day, when we get to heaven?

I mean, shouldn’t we be a little more concerned with whether our best friends and loved ones will be joining us when God calls us home?

1 C. Unsweet Almond Breeze + 1 tbsp. SF strawberry syrup

Life is here and gone in an instant.  Compared to eternity, our lives are just TINY little specks of time.  What will YOUR life reflect?  God’s love is my goal!

1 La Tortilla Factory Original wrap stuffed with spinach, tomato, turkey breast, and garlic hummus.

You’re probably wondering what triggered all of these thoughts.   The series that I’ve been going to listen to at Christian Life Assembly this month has been all about the “Beginning & The End“.  I know personally, I lose sight of the BIG picture.  Our purpose while we’re here on Earth is to share the Word with everyone.

Lunch side salad with spinach, broccoli, yellow & red tomato, sliced orange pepper, and cucumber dressed up with balsamic vinegar & sugar free strawberry syrup.

Folks, in a nutshell, GOD LOVES YOU.  He WANTS to save you.  He sent his ONLY son to die on a cross for YOUR sins.  Who can say they would EVER be able to sacrifice their own child for a stranger

Juicy peach

All you have to do is ask Him to forgive you from your sins and to come into your life and be PART of it.  He is the ONE person you will ALWAYS be able to count on.  Prayer and faith are two things that NO ONE can ever take away from you.  Two of the most powerful things in the world

1/2 C. fat free ricotta cheese with 1 slice of Manna Organic sprouted bread crumbled ontop with 2 tbsp. no sugar added apple butter

I know I’m not perfect.  Not EVEN CLOSE.  I screw up ALL the time.  My attitude isn’t always positive.  I say things I don’t mean.  My mind isn’t always pure.

But God took our punishment for usHow amazing is that?!  We should be wanting to tell EVERYONE we meet how awesome our Savior is, right?

Guys, it’s not about RELIGION.  It’s about TRUTH.  The truth is, we have to make a decision for ourselves to follow Christ.  Regardless of what “denomonation”, the facts are the facts.

“Jesus wants a relationship with you, but He’s not going to force it. The decision is up to you. You can accept what Jesus has done for you, or you can reject it. You can put your trust in Jesus, or you can trust some other plan. You can meet Jesus, or turn away. There is a day coming when time shall come to an end and all people who don’t know Jesus will stand before God in judgment.

If you don’t accept Jesus, you will stand alone before God. You’ll have to bear the consequences, which the Bible tells us involves eternity in hell, forever separated from God. (See Revelation 20:11-12.)

You may think that you’re not ready to make a decision about Jesus, or that it’s no big deal and you can choose later. But not choosing is the same as rejecting. So before you put off deciding, take some time to really think about it.

But when you do accept Jesus, it’s a different story. Jesus is sitting by God’s side right now as your representative, sticking up for you because you know Him. You won’t have to bear the consequences of your sin because Jesus already has. One day you will be welcomed into heaven and spend eternity with God. (See Romans 8:33-34.)”

If you have ANY QUESTIONS about anything you read in the post today, PLEASE email me (  I don’t know everything, but if I can help you get answers, I will do whatever it takes 🙂  It’s SOO incredibly important.

Praying for you all!

Maker of heaven, giver of life
You are my strength, my song in the night
My refuge, my shelter
Now and forevermore
My help comes from the Lord

When I’m broken, scarred by sin
Death gives way to life again
When I suffer, when I’m bound
In You I’m free, in You I’m found

Some of the most delicious breakfasts come in the ugliest forms.  I wish I knew how to beautify my oats the way Kath does, but so far, I’m content to just enjoy the taste.

1/3 C. rolled oats, 1/2 C. water, 1/3 C. lowfat milk, 1 tsp. chia seeds, 1 tbsp. sf vanilla Torani, 1/2 sliced peach, 1 egg white, a sprinkle of baking powder, & 3/4 scoop Vanilla Chai Amazing Meal.  Sugar free Log Cabin syrup drizzled ontop with a sprinkling of cinnamon.

I microwaved this tupperware container of glorious oats in the microwave for about 2 minutes on power level 7.  You have no idea how hard it was to wait until I got to work to break into the dish.  I think the key to successful oats is to add a hint & pinch of SEVERAL ingredients.  It was like a warm, sweet peach custard dessert.

My boss and I ran out around 12PM to grab some lunch from Simply Turkey.  I wasn’t allowed to pay, because it was my “birthday treat“.  Thanks Bosssssss 🙂  Speaking of boss, that’s what I ordered.  The BOSS salad-you choose whateverrrrrr toppings you want.  I chose baby spinach & spring mix as my base topped with peppers, tomato, carrots, cukes, broccoli, and chickpeas with Fat Free Tomato-Basil dressing on the side and a slice of multi-grain bread to round out the meal.  I LOVE seedy, grainy bread like that!

On the way home, I stopped at a local produce (self-serve) stand.

ALLL this for about $6=WIN.  HUGE zucchini

& sweet onion,

summer squash, cucumber, yellow cherry tomatoes, 3 sweet white peaches, & a red bell pepper.  The price was SO right 😉  I planned on putting them to good use for dinner.

When I got home from work, it was SO nice not to have a schedule.  After snacking on the above juicy ‘loup and some chocolate in Vitatop form.

I picked up the little seester from basketball pratice and headed home for a little Insanity action.  I am a HUGE fan of Cardio Abs.  It was a quick, yet totally effective workout.  It works ALL angles of your abs: obliques, lower abs, and upper all in about 15 minutes.  Then I hit the bike & the books.

I used the time on the stationary bike to take advantage and get ahead in class by reading The Rising Tide by Jeff ShaaraAnyone read this book?  So far it’s pretty enticing.  I love an author who knows how to use his adjectives, making it easier to feel part of the story.  I’m not one for war novels, but since it’s required, I guess I’ll deal 😉

I got hungry while biking so I took a rest to make some dinner, utilizing the goodies that I purchased earlier.

It came together quite nicely in the end.  I didn’t have lettuce/spinach for salad base, so I got creative and took a vegetable peeler to the zucchini for some long, curly strings to base the rest on.  I diced up the red pepper, cucumber, and some onion with a few cherry tomatoes in the mix and for protein, I put some sliced grilled chicken on the top.  The dressing is some hummustard (patented by heabs 😉

Afterward, I still had some reading to do, so I headed back to the basement for some extra biking & reading.

Turns out 40 minutes of reading and biking doesn’t get you all that far.  Oh well!

A little while later, I snacked on some Finlandia Reduced Fat Swiss

Sometimes I just crave dairy like its no one’s business.

Then I decided to brew some coffeee for refrigerating.  Although, I’m thinking we’re nearing the end of iced coffee season!

Since I’m avoiding diet soda at all costs, I’ve gotta get my caffeine some way!!

Next, I showered and ate dessert

aka a Peanut Butter Chocolate Vitatop.

Annnndd that’s all folks!!  The boyyy comes home from school this weekendd and we are going rock n’ bowling with the “surrogates” 🙂  I can’t wait!  Also in the mix is going to be hiking & a family birthday party.

Any exciting weekend plans, bloggies?

Stay tuned & happy Friday!!!  Be sure to enter Evan’s CSN Stores giveaway! AND wish a Happy Two Year Blogiversary to Holly while entering her contest!

Annnnd today’s song comes from Sanctus Real, another favorite of mine!

Father, show me the way
To lead them
Won’t you lead me?

To lead them with strong hands
To stand up when they can’t
Don’t want to leave them hungry for love
Chasing dreams that I could give up

I’ll show them I’m willing to fight
And give them the best of my life
So we can call this out home
Lead me, ’cause I can’t do this alone

1 Whole Wheat La Tortilla Factory wrap with Fantastic Foods Vegetarian Chili mix with mango salsa & navy beans

I’m not sure what’s gotten into me lately, but I’m loving savory breakfasts!  Maybe it’s just because I’ve been without the delicious, sweet greek yogurt, banana whip, and desserty oats!  I guess La Tortilla Factory brings out another side of me!

Anyway, around 10:15PM I had another banana for a mid-morning snack.  Since brekkie is eaten at like 7am, I need something to tide me over until lunch at 12-12:30.  Gotta keep that metabolism moovin‘!

Breakfast dessert, if you will.

Somewhere in between, I downed a chilled coffee made with some Maple Bacon Morning Boca Java and SF vanilla torani.  It was pretty boring looking…just a simple travel mug!  After some filing, writing, scheduling, and emailing, lunch rolled around and I was diggin’ into my packed sustenance.

Fantastic Foods Vegetarian Chili mix with navy beans & mango salsa mixed in to top my bed of spinach and steamed veggies (broccoli, cauliflower, & carrots!)

It was a totally random combo, but I was hurting for veggies and knew I’d need some protein. The mango salsa instead of stewed tomatoes turned out to be a great compliment to the spicy mix and navy beans.  Not your typical chili, but I love that I can adapt the mixes to suit my taste!

For whole grains with some flavah, I packed a whole wheat Sara Lee bun (80 calories) slathered with 1/2 Sonoma Jack’s cheese & sf apricot jam.

I had a hankering for some chocolate, so I hit the desk drawer pretty hard and TRIED to control myself in the presence of this Lenny & Larry’s Peanut Butter Protein Brownie, since 1/2 is considered a serving.

But really, who eats just 1/2 a brownie?! Protein or not, that whole, dense, rich, chocolate peanut buttery deliciousness was in my belly by 2:30PM.

This babe powered me through an entire insanity workout after arriving home from work, along with 55 minutes of biking! Again, Melissa & Joey (2nd episode) was watched! They’ve got great onscreen chemistry!

After biking, my appetite finally came back.  I went upstairs and got to work on some dinner. We’ve got TONS of zucchini from my uncle’s garden to use up, so I grated a bunch of it and steamed it in the microwave.  Then I made a deliciously creamy, noochy sauce for ontop!

Bowl #1

Bowl #2

SOOOO delicious.

Sauce in bowl #1 was cherry tomatoes blended with hot water, some roasted red pepper hummus, canned mushrooms, and sprinkled with nooch.  Sauce in bowl #2 was stewed canned tomatoes, carrots, garlic hummus, and shroomies from the 2nd 1/2 of the can.

SO yumm.

A little while later, after clean up and such I went back downstairs for a brief ab session full of planks and oblique twists.  I also decided to put my old books for sale on instead of selling them back to the campus book store, since they totally rip you off!

I wrote up a list of things to help me start budgeting to save for things I’d really like to purchase in the next few years:

And then I ran to make a quick grocery store trip to grab some essentials: oats, unsweet almond breeze, vitatops, chobani, and frozen veggies!

When I got home, I had dessert

Chocolate goes with ANYTHING.  Including pineapple 🙂

I spent the rest of the night blogging, and prepping for the weekend!  I cleaned out my car a bit, too!

I also have a Baby Bo update for all of you!  He is officially back at his birth weight & breathing on his own!  The doctors say the situation is BEYOND positive!  Isn’t he a miracle of God!?! I mean, all babies are, but this just astounds me.

Check out the comparison of his diaper to an electric razor to give you an idea of how tiny he truly is

They’re taking such great care of my bestie, her hubs, and baby Bo.  I couldn’t have asked the Lord for better caretakers and thank you alll soooo much for your prayers! Due to privacy issues, I had been kindly asked to remove the photo of Bo.  I apologize!

HAPPY FRIDAY, indeed 🙂

Big Daddy Weave  knows what’s up…

“To my audience of one
You are Father, and You are Son
As Your spirit flows free,
Let it find within me
A heart that beats to praise You.
And now just to know You more
Has become my great reward
To see Your kingdom come
And Your will be done
I only desire to be Yours,

And so does La Tortilla Factory

1 La Tortilla Factory Smart & Delicious Tomato Basil wrap with 3 egg whites, salt, pepper, & tomato slices

Their Tomato Basil wraps are my new infatuation.  This is truly something big, considering I’m typically a sweets kinda gal.  Nothing fancy for breakfast, but it did the trick!

Thennn around 10:15AM, I ate a banana which was packed for a snackaroo.  It was camera shy, so all I have to leave you with is this

Lunch was NOT camera shy.  In fact, it was kind of a photo whore.

Jumbo lump crab meat heated and mashed with one Sonoma Jack’s pepperjack cheese wedge, salt & pepper with a tsp. of sour cream all wrapped up with some spinach in a Tomato Basil La Tortilla Factory wrap

It’s not even THAT good looking for gosh sakes.

The taste was a different story entirely.  It was like a creamy, spinach and cheese crab dip with a warm tomato basil blanket!  I warmed it up in the microwave at work to eat at my desk and it seriously melted in my mouthhh.

Anywhooo.  The 2nd part of lunch was a repeat, but delicious, none-the-less.

Salad monster was back in town.  Baby spinach (on its last leg!), tomato, cucumber, red pepper, carrots, and onions.  Dressed in strawberry balsamic.

Some of your have been messaging me about what I use to make my Strawberry Balsamic, and it’s actually pretty simple!  I just pour some balsamic vinegar and sugar free strawberry torani into a ziplock baggie together and throw it into my lunch bag!  it’s DELICIOUS and very low cal.

After work, I ate a delicious nectarine (they are SO ripe right now!), but I knew we would be going to dinner together soon, so I didn’t want to ruin my appetite.  The battery in my camera was dead  & charging up for dinner at this point, so there was no photo action, but you get the picture.

The Special Place is a family run, homecookin’ kinda place that my family adores.  It’s only about 15 minutes away from our house and beats driving to Harrisburg.

My cousin, Allison joined us for dinner too!  She LOVES their chicken noodle soup!

Mom & Pops each got the all-you-can-eat buffet which included corn, mashed taters, salisbury steak, and sweet potatoes with fruit.

Middle seester got the buffet too, but baby seester got the grilled chicken salad in a bread bowl.

While waiting for my meal, I patiently sipped on 6 glasses of lemon water.  Dehydration should NOT be a problem anytime soon 🙂

I ordered a spinach salad with turkey breast, cucumber, tomato, mushrooms, broccoli, and onion with fat free tomato basil vinaigrette on the side.

Anddd a baked sweet potato on the side which I sprinkled with some Splenda for extra flavah.  If only they had cinnamon at the tables, too! 😉  For some reason, baked sweet potatoes taste sooo much better than microwaved…?  Maybe it’s because the entire thing is mushy and well done unlike the microwave which doesn’t always cook evenly.

After dinner, we stopped at a furniture store close to the restaurant to look for an end table to go in my sisters’ bedroom.

They also had a cute little area of collectable stuff such as Yankee candles, Willow Tree Angels, and Boyds Bears.

They had some really decorative ideas and I loved the clock in this picture!  Then….I spotted the love of my life and spent the rest of the time there engrossed in its glory….

Upon winning the lottery, this is one of the first things I would spend my money on.  Right now I can’t even afford one of the PILLOWS.  Haha.  In all seriousness, I’ve decided to start saving for one…along with a new laptop, a Polar heart rate monitor, and an iphoneA girl can dream, right?

You thought I was joking, did you?  No, seriously.  I was the weird girl who laid in the bed at the furniture store the entire trip there.  Don’t lie, you would’ve too.

This thing massaged, too!  I needed one after the insanity workout the other day!  My hammys, calves, and gluteus were S-O-R-E.

When we finally got home, I biked for about 45 minutes burning about 250 calories (according to the bike), while watching Joey & Melissa on Hulu.

Showered up, ate a snack

& hit the sack.

NOW for the winners of the Girard’s dressing giveaway!

– Proverbs 15:1

are some

new additions

to my serveware

Thanks to Marlin, an old family friend, who passed away about a year or so ago.  He was such an amazing man.  These were a few of his dishes that I was given the opportunity to snatch up.  Props to you, Marlin!  I’ll think of you everytime I use one 🙂

Optimum Nutrition Cookies N’ Cream + water & ice poured over Fiber One cereal.

love the waves

Work was actually busy again.  I had quite a few things to keep me occupied until 12ish when I dug into lunch.  The circus train has officially LEFT town.  It is no longer outside my window at work.

veggies, whole grains, & protein.

Under that pile of diced cukes, baby carrots, and celery slices, we’ve the last of my mache mix.  I’m sad to see it go!  I can’t wait to get more… For protein, I packed some black bean dip (1/2 C. baby butter & black beans + onion, vinegar, & Splenda).  Then for whole grains, I packed a 100 calorie bag of kettle corn.  Never packing just that for whole grains again.  Yummy, yes; Filling, no.  It did take me awhile to munch it all down though.

After work, I had some  chunky monkey ice cream chocolate banana softserve for a snack.

1 frozen banana + 1 Tbsp. Hershey’s cocoa powder blended.

Gena was right, this will change your life.  I think I could eat this everyday, all day and be a happy camper.  After “mmmmm” ing aloud several times and polishing off this dish, I went downstairs to use the stationary bike for about an hour.

I knew I didn’t wanna over-do anything exercise wise since I wanted to have lots of energy for my FIRST sand volleyball match of the summer at City Island!

dinnah #1.

After an hour, I made a quicky dinner of 1 greek yogurt + raspberry sf syrup for dunking my deep chocolate Vitatop.

I also made a sweeeet omelette which I got the idea from this fabulous birthday girl, Janetha!!  If you missed her birthday on the 1st, make sure you wish her a happy belated! 🙂

3 egg whites + 1/2 C. ff cottage cheese + 2 Tbsp. SF apricot jelly

I didn’t feel like dirtying a frying pan, so I just microwaved it!  It turned out much better than expected, actually! SO yum.  Wish I had some cinnamon.  That totally would’ve made it better.

Not pretty, but deliciouso!

Tomorrow is also my sister’s first day back at work since she’s done with school for the summer!  She works at the hospital and needed a packed lunch, so I hooked her up 😉  I had a little extra time & like to be busy.

Skippy & homemade grape jelly on sourdough.

I planned on making a super healthy lunch and letting her use some of my Easy Lunch Box tools, but she requested PB&J with oreos & cheese in a disposable container, so her wish was my command.

Randa's lunch.

Then I headed out to meet up with Tiff, Matt, & Will for our volleyball match which started at 7:15PM.  It was beautiful weather and a perfect night for a game.  I love hanging out with Tiff.  She’s like me. SO not into girly, petty drama.

We went three for three!  Officially undefeated, thus far!  We’ve got games every Wednesday.

When I got home, I had dinner #2 since the first was very low cal & I had already burned 1/2 of it off with the biking sesh pre-volleyball.

whole grains & low fat dairy.

Next up on the menu, fruits & veggies.

taste the rainbowww.

sliced cucumber, snap peas, cherry tomatoes, baby carrots, & yellow pepper slices atop homemade honey mustard dressing.

and to wash it all down

an ugly swamp monster.

a big mug of blended frozen spinach + 8 oz. Diet V8 Splash (mango) + Diet Green Tea + 6 strawberries.

things just taste better out of glass.

I felt like Popeye after this drink! Not to mention, my hair already feels healthier..Haha.

I did a little Facebooking after my shower, and started writing to my two little boys 🙂  I received my informational package from Compassion International regarding my sponsorship!!

Compassion International.

I can’t wait to get in contact with Christopher & Robbin!  I want to let them know that as their sponsor I will be praying for them and their families… I also can’t wait to get to know them!  They’re both so adorable.

The week is already 1/2 over!!  Tomorrow is FRIDAY!  WOO hoo.  To make your day even better, check out Lucky Taste Buds for  your chance to win these yummy looking pretzel thins!  I know I’ll feel alot better if I would win these SmartSole Insoles from Missy’s giveaway to work out in!

Which meansss…

3 Question Thursday!

1. Which one of Marlin’s dishes do you like best? I think my favorite is the green wavy one with the aluminum flowery bowl coming in second place 🙂

2. What is the most valuable gift you’ve ever been given? I think the most valuable in terms of sentiment was the diamond necklace my parents gave me for my 21st birthday.

3.  Who was it from? See above 🙂

Verse of the Day:

“For God did not send his Son into the world to condemn the world, but to save the world through him.”

– John 3:17

I know I say this everytime, but this is such a great verse.  It’s so true.  Some people look at Christianity as “set of rules” that you have to live by, when in reality it is SO much more than that.  A personal relationship with Christ who SAVED us, is the total JOY of my life.  Think of where we would be without it!  Doomed to an eternity in Hell.  As opposed to thinking of God as a “dictator“, try thinking of Him as the SAVIOR He is!

That being said, I guess we’ll start at the beginning.  Before I get carried away, make sure to head on over to Danica’s Daily for your chance to win some Biggest Loser books!  Breakfast was consumed at around 7:15 AM & consisted of the typical “SOC“.

Fiber One & Optimum Nutrition.

Have I told you lately how much Cali bowls rock? 🙂 Cause they do.

I worked until about 12 noon when I breaked to eat my packed lunch!

Lots of crunchy veggies!

I love sampler style lunches like this because I get to munch, munch, munch.  In the mix there are some cucumber fries, celery, orange pepper, snap peas, & baby carrots which got dunked in my sweet bean dip made with ff refried beans + sf syrup.

Ringling Bros. + Barnum & Bailey!

To my excitement, I saw this train outside my window at work.  Yes, this is the view from my desk!  Ringling Bros. are the most famous circus that I know of, and they’re coming to my area!

My friend Josh & I already decided we’re totally going on Saturday night 😉  I can’t tell you the last time I went to a circus!! Does that, or does that not look freaking exciting?!

Anywho, 4PM rolled around rather quickly and I was headed out to my Momma’s first District softball game as head coach.

I decided some lunch dessert was in order (at 4pm?! I know ;)) before I left

apple crisp!

I microwaved a diced gala apple for about 2 min, ground up some Fiber bran cereal, and combined with some cinnamon.  MMmm Mmmm GOOOD.

yes, it was eaten in a coffee mug 🙂

I wrote her a little card this morning wishing her luck and telling her how proud I already was of all she’s accomplished with the girls.

This girl hit a TRIPLE around the 5th inning which scored a bunch of runs!

It was a great game, which we almost allowed to slip through our fingers!  The score was 6-1 going into the 5th inning, but by the 7th, we were tied up!  Finally, we got a nice poke to right field made by one of the senior girls, to score a run and come out victorious, 7-6.  Momma FF was like a celeb. afterward, being interviewed by newspapers!

It was approximately 7:13PM. Ha.

When I got home I decided on something light for dinner.  While my broccoli slaw was steaming in the microwave, I chewed on a whole grain sandwich flat slathered in Sonoma Jacks & SF apricot Polaner jelly+fiber.

Quorn & slaw.

I threw a Quorn Chick’n Cutlet with my broccoli slaw and drizzled in some SF syrup mixed with soy sauce for a sweet teriyaki flavor.

protein & veggies.

It was mighty good.  I just loveeee these easy frozen sources of protein.  They never go bad and always taste delish when you make them.  SO totally easy to prep, too! Perfect for when I’m feeling lazy 😉

Until the family got home, I went downstairs and hit the stationary bike for about an hour while facebooking (300 calories burned).

After dinner, we downloaded SKYPE!  Coolest thing EVER.  I got to have a date with my Daddy all the way in Nicaragua!!!  He comes home in FOUR DAYS!  Yes, the count down is on!  We chatted with him for about an hour & then I had a handful of bloobs for dinner dessert.

We’ve got another Skype date tonight & I can’t wait!  Exciting news, coming tomorrow regarding a little boy from Nicaragua!

1. Have you ever been to the circus?  If so, what’s your favorite “act”?  Once when I was really little!  I don’t remember much, but I LOVED the tigers.  Oh, and the acrobats!

2. Do you Skype & if so, what’s your fave feature?  I’m a newbie!  I love that I could actually SEE my Daddy from SO many miles away. Technology never ceases to amaze me.

Happy Hump Day, bloggies!  Enjoy 😉

An Epic (ROOTS) Thursday.

Verse of the Day:

I appeal to you, brothers, in the name of our Lord Jesus Christ, that all of you agree with one another so that there may be no divisions among you and that you may be perfectly united in mind and thought.”

– 1 Corinthians 1:10

It was an ordinary Thursday morning and nothing was standing in the way of my cereal and I

Optimum Nutrition Chocolate Mint SOC.

As I’ve said before, this is not just any other cereal.  By the time I get to work, I’ve already had about 114% of my DV Fiber 🙂 HA.  Is there such thing as fiber overdose? If so, I’m pretty much doomed.

Over our break, my boss & I hit the Farmer’s Market together.  I snagged the usual suspects: alfalfa sprouts, cherry tomatoes, bell peppers, gala apples, some kiwi & peaches.

This is when my day became EPIC.  The generous people at Epic Roots sent me some of their beautiful, fresh mâche mixes to try out!

I was excited by the mere look of the dramatic shapes, colors, and textures of this blend.  See what I’m talkin’ about?

look how fresh!

Wild Arugula is officially my favorite green of choice for salad from here on out.  It’s also described as a “Mélange of sweet and spicy greens“.  The crunch of the leaves tasted so fresh…I had the absolute finest, most crisp salad base I could’ve asked for.

the spread.

I mixed things up again!  Thanks to the inspiration of Epic Roots & Quorn (who also sent me the most AWESOME lunchworthy goodies EVER –> Turk’y Burgers & Chick’n Cutlets!)  With grilling season just around the corner, what better proteins could a girl ask for?!

gorgeous colors, no?

I packed some Epic Roots topped with alfalfa sprouts, some snap peas, broccoli, orange pepper, cherry tomato, and broccoli for topping my salad along with a sliced Turk’y Burger & some carby acorn squash microwaved until soft, topped with cinnamon & SF syrup!  I could NOT wait to dig into this lunch.

Before I knew it the work day was over.  I went straight from work to meet Middle FF seester for a movie with some buds.   Our friend, Adam is visiting this week from Alaska!  We all decided to meet up for a little Russell Crowe action 😉

Good movie, but insanely long.  The movie started at 4:10PM & we didn’t get out until about 6:30ish!  I had a gala apple while I was in the theater & had some packed Oikos before I went in, but by the time I got home, my belly was rumbling!

Epic Roots to the rescue!

taste the rainbow 🙂

Eaten along side some munchie 100 calorie kettle corn from Pop Secret

dynamic duo = greens & grains.

After dinner, I was kind of bored.  It was almost 8PM, and I had missed the last One Tree Hill because of the see-off dinner for my Daddy at Fiesta Mexico.  I decided it was in my best interest to catch up on it ASAP and take advantage of my downtime by doing some biking & episode watching 🙂  HOLY COW.  SO glad I didn’t miss that one.  Hailey is out of her funk, Brooke is engaged, and Clay & Quinn are…SHOT?!?  UGH.  Drama, drama, drama.

Afterward, lunch was packed, a shower was had, and this girl collapsed in bed.

1.  How long is TOO long for a movie?

2.  What’s your favorite OTH episode?

3.  Any exciting weekend plans?

Rest Days.

Posted on

Everyone knows that sometimes you just need a rest day.  I had been doing about 8-9 miles everyday for the past 10 days and my body was starting to give me a hard time.  My hips, especially were tight and achy.  I felt as if I had arthritis!  Anyway, I proclaimed Thursday my rest day.  NO GYM for this girl.

The day started out like any other day.  Filling & crunchy.

Fiber Select + cake batter protein milk.

I don’t know what it is about this breakfast that satisfies my soul.  Maybe because I used to ALWAYS eat cereal as a kid.  It’s like for the first meal of the day, I’m back in a time when I had no worries or responsibilities…Cereal does it for me!  Granted, then it was more like Lucky Charms or Fruity Pebbles, but you get the picture 😉  What’s your favorite childhood cereal?

Speaking of childhood, I brought my little pink lunch tote to work containing all of the following goodies:

Packed lunch.

A veggie tub filled with a rainbow of color

Orange pepper, cherry tomatoes, celery, cucumbers, & carrots.

Swimming in some apple cider vinegar mixed with Splenda.

Two dogs.

Hebrew National 97% Fat Free Hot dogs @ 40 calories apiece and 6g protein!  That’s a pretty good calorie to protein ratio if you ask me!

Flat Out Light with Sonoma Jacks Light Pepperjack cheese wedgie.

My snackTAXI is CLEAN!  Finally getting to use it.  No more ziplock baggies for me!! I’m working on getting these in MY SHOP.

Over my actual lunch break, I managed to hit the grocery store & the farmer’s market!  I prefer to buy farmer’s market produce because it’s usually much cheaper than at the grocery store.

Here’s a shot of what I rounded up!

Fiber Select, Gardenburger veggie patties, 2 gala apples, 2 orange peppers, Walden Farms calorie free chocolate syrup, cherry tomatoes, portabello mushroom caps, Thomas light whole wheat high fiber english muffins, & sugar snap peas.
L-R: head of cauliflower, cantaloupe, strawberries, broccoli, cucumber, alfalfa sprouts, imitation crab meat, & light tofu.

When I got home from work, I put away all the groceries and made myself a snack.

1 gala dipped in 1 Oikos plain + 1/4 C. sf syrup + cinnamon.

Art in a bowl?

Next on the agenda was to go support my Mom’s softball team in a home game at my alumni.  It was a beautiful day for a game!  When I arrived, they were in the 4th inning, losing 1-2.

blue skies!

Can anyone spot Momma Freckled Foodie????!

Yep! There she is!

They ended up making a killer comeback and winning the game 10-2.  I think I was the good luck charm because they were losing until I got there 😉  Momma Freckled Foodie agreed.

After the game, I headed home and made some dinnah.

Doesn't this look like an egg mc muffin?

I guess looks are deceiving!  This sandwich is actually a Gardenburger veggie patty with Sonoma Jacks & reduced sugar Heinz ketchup on a whole wheat light english muffin!

Along side my delish burger, I had some peas [& thank you].

I used to have serious pea issues.  Like any other kid, peas & I were enemies at a younger age.  What was an enemy food of yours growing up?

With my dinner, I drank the last of my iced birthday cake coffee.  Time to make another pot!

Okay, so I know I said today was a rest day, but I was antsy.  No one was home and I was bored, so I decided a little LIGHT biking was in order.  No harm in that, right?  Biking is a lot less hip rotation, so it didn’t bother me one bit.  I went downstairs and ended up doing this

bike stats.

while I watched the most recent One Tree Hill episode & facebooked.  So glad Brooke & Julian are back together.

I got a shower, packed my lunch for today, and had dessert.

dark chocolate banana baby.

After consumed, I hit the hay a happy camper.

Verse of the Day:

“It is written: ” ‘As surely as I live,’ says the Lord, ‘every knee will bow before me; every tongue will confess to God.”

– Romans 14:11

How awesome is it to realize that someday everyone will bow down to Him?!  That is going to be QUITE the sight, if you ask me 🙂

Also, I realized this morning, I totally forgot to show you all the beautiful flowers that our office gave me for “Administrative Assistant’s Day” 🙂

Aren't they sweet!?

Nothing like a gorgeous set of flowers to brighten up a work day!

I love the heart that it is shaped into!

Oh, and now my bamboo has a buddy 😉

Date Night.

Anyway, it’s FRIDAY! Can’t wait to start the weekend.  Only about 7 more hours to go!  Tonight, I’m going out to see Date Night with a guy friend after my workout at the gym.  I’ve heard good things and hope it lives up to the ratings!  I love Tina Fey and Steve Carell, so I’m thinking it can’t be bad!

Back to yesterday’s eats.  When I got home from work, I had a snack wrap of laughing cow with sugar free blackberry jam on a flat out light.

golden delicious.

Not as good as gala, but it did the trick and fueled me with some carbs for my workout!

I befriended my stationary bike, yet again, trying to avoid the same workout two days in a row (elliptical/gym machines).  I biked for about an hour, catching up on my Facebook page & watching “Friends“.

I decided it was time to refuel after burning off about 300 calories.

enter: orange carb.

sweet tater.

I’m digging how clear my photos have been thanks to the glorious sunshineee.

enter: sweet protein.

fat free cottage cheese

1/2 C. = 70 calories, 0g fat, 12g protein.

Eaten straight from the container. I know, classy, right?

What can I say?  I was home by myself and I didn’t feel like making extra dishes.  There were already several waiting for me in the sink from the family that were used while I was at work. Yippee.  Probably ate 1.5 servings + some drizzled crack SF Log Cabin.

I was bored with nothing else to do, so I went back to watch some episodes on the laptop.  I also downloaded the new Robert Pattinson movie, “Remember Me” while I biked for another hour, burning another 300 calories

Time for more protein!  And I had some cake batter on the brain.

Protein Shake

Small handful berries + spinach + 1 scoop Optimum Nutrition cake batter whey protein.

I also knew I needed some veggies in my life, so I opted for some steamfresh cauliflower out of the freezer.

I wanted something creamy, so I blended the cauliflower with some Sugar Free syrup & cinnamon for an oatmeal tasting flavor.

Cauliflower soup!

Sounds & looks gross, tastes awesome.

Almost looks like applesauce?

Next time, I’m going to microwave some chopped apple & add it to the mixture.  I think that’ll be like apple cinnamon oatmeal!!?  YUMMMMM.

Next on the checklist was a shower.  A much desired one at that.  I could seriously fall asleep in the shower or bath.  Anytime.  Not in any other than my own, obvi.

I jumped into my coziest pair of sweats and decided to embark on some coffee making for refrigeration and successful iced coffee creation later down the road.

This was no ordinary coffee though,

this was Caftea Birthday Cake coffee!

UHHHHHmazing.  I knew just by the aroma that it was going to be fantastic.  Buttery, sweetness filled the air.  You can buy this in my OpenSky Shop if you’d like to try it!   SERIOUSLYYou’ll love it.

I settled down and unwound, sipping my coffee, by packing my lunch.

the line up.

Typical suspects: Veg tubsliced yellow pepper, broccoli, cherry tomato, carrots, and cucumbers; FF cottage cheese+sugar free syrup+cinnamon; Fiber Select for crunchy cottage cheese topping; Homemade honey mustard for veg. dippin’

I also realized, I have not been photographing my breakfasts.  NOOOO this does not mean, I’m not EATING them.  I just am usually in a rush in the morning, trying to get everything ready for work and forget to snap a pic when it’s something I don’t have prepared ahead of time.  As of late, it’s been the same thing every morning anyway, because it keeps me full for EVER and tastes yummy everytime.  Simply a protein shake with 1C. Fiber Select mixed in.  The shake trumps milk on my cereal because of the 24g of protein!  Don’t worry, it’s got Calcium, too!

Reminder!  Only a few days left to enter my snackTAXI and Custom Choice Cereal giveaways!! If you don’t act quickly, you might miss out on Danica’s giveaway of these neat Furochic reuseable gift wraps!

Happy Friday to you all!  Any exciting weekend plans?  In my future, I’m seeing Date Night, gym plans, softball games, and outdoor adventures for the weekend! 😉

Verse of the Day:

“I give them eternal life, and they shall never perish; no one can snatch them out of my hand. My Father, who has given them to me, is greater than all; no one can snatch them out of my Father’s hand. I and the Father are one.”

– John 10:28-30

Isn’t it awesome to know that no matter what we do, or how badly we screw up, once Jesus saves us, we’re ALWAYS his children?  NO ONE can undo that! 🙂  It’s easy to be joyful if we can keep this thought in the forefront of our minds!  After all, this life is only a glimpse of what is in store for us!  Eternity is going to make our time on Earth seem so miniscule.  Hard to keep in perspective? Yes.  Untrue? No.

So last night when I got home, I had a date at the gym with the elliptical, but had to cancel at the last minute because Daddy freckled foodie asked if I would join the family for dinner.  He was going to make grilled chicken (something I would actually eat).   How could I turn down a family dinner?!  It is a rare occasion in our house because of everyone’s hectic schedules.  It wouldn’t make sense, however to drive to the gym because by the time I’d get there, he would be calling me to let me know it was dinner time.  See, Momma freckled foodie and sister freckled foodie have softball practice (on non-game days) until 5PM, so time wise it just wouldn’t have worked out.  Instead of missing my workout completely, I decided to make good use of my time at home by hitting the stationary in our basement.

But first, some fuel:

steps 1 & 2: spread cheese wedge on tortilla + splenda; fill with microwaved berries + chocolate sauce.
chocolate, berry & “cream cheese” crepe.

For this delishhh snacky was only 160 guilt-free calories.  Made with 1 La Tortilla Factory Low Carb High Fiber Whole Wheat wrap with, 1 Sonoma Jacks Light cheese wedge (inner), and microwaved frozen berries with Walden Farms Calorie Free Chocolate Sauce. Holy cow was this awesome.  You WILL see this again. I promise you that!

The set-up.

I know I talk about this all the time and figured it was finally time to show you guys my “set-up“.  Like I’ve said before, I prop up the laptop on the handlebars and facebook & watch online tv to pass the time.  Last night, my program of choice was the “Jamie Oliver’s Food Revolution” episodes I missed along with a “Friends” or two.

Seriously, how cute is he?  Maybe he’s just more attractive to me because of his personality.

Anyway, after biking for about an hour & 15 min. it was dinner time.

Sweet tater, broccoli/carrot/cauliflower mash, & grilled chicken tenderloins + reduced sugar ketchup.

After dinner I went back into the dungeon basement & did some “in-and-outs” for my abs + some push ups and got back on the bike for another hour or so.  Daddy freckled foodie was working on the house upstairs since we’re remodeling and Momma freckled foodie was helping him.  They had to spackle and move whole bunches of stuff around so we can get our hardwood floors put in this week!  Here’s our upstairs as of late:

Freckled foodie rents’ closet.

They just painted their bedroom this sweet yellow color!  I think it was actually called buttered popcorn? 🙂

living room & poppa freckled foodie.

He’s a “do-it-yourself” kind of guy! He basically built our entire house with is own two hands.  I hope to someday be able to tell people he helped build my house 🙂

our living room furniture sitting in the kitchen!

stereo equipment in the dining room!

After finishing up on the stationary, I remembered that I had yet to pack my lunch, put away laundry, and clean.  First up, I tackled my bedroom.  I tend to leave clothing lying around after trying something on and deciding not to wear it, which happens at least once a day.

Next, I packed my lunch.  I wasn’t sure what I’d be hungry for, so I tried something new with my homemade honey mustard.  Tuna salad!

Tuna snack.

I wanted to make sure I’d like it, because I know how disappointing it can be if you back something in your lunch and end up throwing it away because it’s gross….soooo I had a little tuna snack.  The verdict?  HOLY YUM.  Needless to say, it will be making it’s debut in my lunch today as a dipper for my veggies.

veggie tub, tuna salad, & flat out light with cheese wedge+splenda.

The veggie tub included sliced orange pepper & peas on the top, cauliflower & cherry tomatoes in the middle, and some cucumber slices on the bottom.  For my tuna salad, I mixed 1 pack of Light Tuna in water with 1/8 C. SF syrup & mustard (to taste) + minced celery & some additional peas

Thennnn, I made myself some dessert for being a good sport and getting in a workout while keeping my family priorities straight 😉

Strawberry Cheesecake Protein Shake.

check out the spillage in the sink! 😦

And don’t mind my single stroke of pink nail polish, I wanted to see what color it was out of bottle 😉

The shake was 1 scoop Optimum Nutrition cake batter whey protein + 1/2 C. water + 4 frozen strawberries + 2 ice cubes.

I also munched on a few chocolate covered strawberries with my shake :

walden farms calorie free chocolate is BOMB.

I know, right?! Calorie free chocolate?! You’re not dreaming 🙂  In fact, you can see it in my picture!

Happy Hump Day, folks!

What’s your favorite dessert?
