Sista FF Turns 19!

Yesterday, I celebrated the 19th year since my middle sister, MYranda’s birth.  It all started out with this quick and easy breakfast.

Then we left for Sunday School at 9am and then Church at 10am.  My new goal after listening to a class about selfishness, is to have the heart of a servant.  I got to thinking for example, when we consider going out to eat, I ALWAYS make sure to get my opinion in on where we go because of my picky habits, but I should be more concerned with the needs and wants of others.  My job in life isn’t to please myself, it’s to be like Jesus, which means being humble and looking out for others before myself

Afterward, we went home and started cookin’ her faveee meal…homemade sausage potpie.  She LOVES it!

My lunch was MUCH tastier, however 🙂

Sweet Vegetable Soup!

Ingredients? 1 Steamfresh bag of California Blend + 1/4C. Sugar Free Syrup + an outrageous amount of cinnamon.  I’m addicted!  Kid you not, just like oatmeal/cream of wheat with brown sugar.

Pluuuuuuuus some protein & carbs:

Plain Oikos + drizzle of SF syrup + Fiber Select

After lunch, we got cleaned up, the littlest FF seester had travel team softball practice about an hour away, so Poppa FF took her there, while Momma FF & I took the birthday girl to see a “The Last Song“.


Personally, I wasn’t sure what to expect.  I’m not typically a Miley Cyrus fan, number one, and number two, I was really let-down by “Dear John” another movie spun off of a Nicholas Sparks novel.  I read the book before seeing the movie last time and came to the theatre with high hopes, but left disappointed.  The Last Song, however was pleasantly surprising.  I cried about 4 times and it takes a lot for me to get emotional in the movie theatre.  Alot had to do with the fact that in this movie, the tearjerker was the troubled relationship between a girl and her father, which I could totally relate to, whereas in the other films, it was mainly based around a romantic relationship.  Either way, I truly recommend it 😉

When we got home, I snacked on an unpictured nectarine & ran to Walmart to get my oil changed.  I figured I could get some groceries while I was there too since I was all out of my Light Flat Outs, syrups, cereal, and produce. 

The Goods.

I ended up stopping at Giant on the way home too, since Walmart didn’t have some of my faves (Fiber Select, Light Flat Outs, & Sonoma Jacks).  Anyway, here’s the spread: SF syrups (Log Cabin, Vanilla Torani & Raspberry Torani), Flat Outs, Sonoma Jacks, Fiber Select, diet sweet tea, yellow & orange peppers, cucumber, cherry tomatoes, Steamfresh veggies, and a nectarine.

When I got home, the whole family was there and ready to celebrate the birthday girl!  We had a feast of many dishes:

Fruit bucket (strawberries & grapes)

Lipton noodles & hotdogs.

I used the condiments table to make my dinner!

You can bet I topped this beastly salad with my yummy homemade honey mustard.

I got her a pair of aviators, a shirt from Hollister, Gertrude Hawk chocolate (her fave), some earrings, and a mug that she picked out while we were at Orlando.

Anyway, I think she had a good night!  We all had a ton of fun hanging out together and relaxing.

When everyone skidattled, I packed my lunch for today:

moreeeeeeeee eggwhites, veggie tub, & flat out.

Weekender Recap

I arrived home Friday night after work to an empty house.  My Dad left for a coaching clinic in Kutztown and my Mom & sister were at softball practice.  I decided to get the biking out of the way for the night and hopped on after getting changed.  I biked for about 2 hours while watching random online episodes of “Friends“.  For some reason, that never gets old 🙂  After showering up, my Mom took my sister to a party and she and I went to get Chinese food.

There is something about this dish that I can’t seem to venture away from.  I bet it would be good with chicken too, but I was craving shrimp! 🙂   The steamed veggies included broccoli, bok choy, carrots, baby corn, and green pepperI love the sauce they give you to use with it too.  Oil/cornstarch free!  It’s basically water, soy sauce, chili powder, and scallions with a touch of garlic.  YUM.  I have recreated this at home 🙂   

We wanted to go see a movie but hadn’t done research on the showtimes, so we figured we’d just see whatever was playing to the closest time when we got to the theatre.  Unfortunately, we just missed all the starts for showtimes and would have to wait around for another hour or so to see ANYTHING.  We just went home and chilled out instead.  I may or may not have eaten a spoonful or two of this kryptonite peanut butter before bed.

I woke up kind of disappointed Saturday morning.  The wind was insaneeee, and Saturday mornings were the only real time I had to go running outside.  Flustered about the weather, I turned to a comfort food before our 7:15AM yoga class.   







Yes, I cheated.  This is the result of an instant oatmeal packet.  Giant brand, no less.  But it was mighty tasty.  Cinnamon apple style.  The mix consisted of 1 packet oats + 1 spoonful dark chocolate peanut butter + 1 drizzle sugar free honey + a splash of unsweetened chocolate Almond Breeze. Sorry for the blurry picture.  I got excited and was too impatient to score a perfect one.  

Yoga was alright, nothing too strenuous.  Don’t worry, I made up for it afterward with a 6 mile run.  Here is me when I returned home:   







A little damp..

Not only was it windy, but the drizzly rain was WHIPPING me in the face.  Oh well, I felt good to have gotten to go at all!  No more complaining 🙂  

I decided on a protein shake to refuel.  After all, Saturdays were my ALL OR NOTHING workouts.

Sooooo, I whipped up a little BSN Banana Nut Protein dessert with some more unsweetened chocolate Almond Breeze.

After biking for awhile, I decided to try out the P90X cardio DVD.  I haven’t done this one yet, I usually stick to the AB RipperX, which I also did later Saturday.  

I breaked for lunch somewhere in the mix of all the working out for a bagel thin with Raspberry infused peanut butter spread, a baby apple, and some raw veggies.  The only thing I managed to remember to photograph was the apple.  SORRY!

I had a date Saturday night, so it was a little bit of a blurr the rest of the day.  I have no idea what I ate for dinner?  No documentation was to be found on my camera.  I can guarantee you I did eat, I just don’t remember what or when?  Haha.  All that exercise must’ve made me delirious.   

We met at the mall and hung out there for a little while, then we headed to a nearby theatre and saw “The Crazies“. 



It was sooo unbelievably creepy.  I seriously could NOT sleep when I got home.   


Did you all remember to “spring ahead”!?  I did! I even got up an EXTRA hour before church so I could get some biking & ab work in, leaving the rest of the day to relax.  For breakfast, I had some Banana Bread Nut cereal cookie. 


I have a feeling lots of people forgot about the time change because there were slim pickin’ s at church in the morning!  After church, I had choir practice until about 12:30PM.  I stopped at the grocery store to pick up a few staples for the week so I could pack lunches (lunchmeat, raw veggies, flat outs, & greek yogurt).  I was hungry for something warm and comforting when I got home and decided on homemade Vegetable Soup.

Steamfresh veggies + soy sauce + minced garlic + minced onions.  Alllllll blended together and eaten warm.

I’ll spare you the POST blending pictures, being that they highly resemble baby feces. 

Along side my soup, I had a Flat Out smeared with sweet cream cheese Sonoma Jacks Pepperjack cheese + Splenda.

It hit the spot!  Today was all about relaxation, so after lunch, I vegged out with the rest of the family watching movies and enjoying each others’ company.  A few hours later, I had a protein snack.

This stuff has ZERO calories!  Crazy, huh?

We played Phase 10 and were lazy bums.  I was a little sore from the p90X stuff combined with the running & biking from Saturday, so it was a nice recovery day for me.

Dinner was munchies throughout the night.  Broccoli slaw with ketchup, raw tofu dipped in sugar free honey + soy sauce mix, some vanilla sugar free pudding, and a whole wheat bagel thin topped with sugar free strawberry jelly.  I also had a bag of Black Cherry sugar free JELLO bites from Sheetz that my buddy, JD brought me 🙂 Oh and a peach, too.  Sorry for the lack of pictures.  My camera was MIA.  I didn’t realize how SNACKY  I had been all night.

Time Flies

I can’t believe the first week in March is already coming to an end…It’s like the older you get, the faster time goes…

I’m still not feeling too great, so last night in between biking sessions, I honored my cravings.



When I got home from work around 4:30PM, I had a bagel thin with banana peanut butter, a peach,  and a few baby carrots.  These things are awesome!  I just picked them up at the store yesterday on my lunch break at work and they definitely did not disappoint.  I knew they would be similar to sandwich thins, but they DID have a chewy bagel taste to them. SO yum.

Then I got on the stationary bike and set up a Facebook account for Freckled Foodie while I was biking.  I took a break around 5:45PM to chat with the family while they ate their lasagna dinner. 

I ate a Voskos yogurt at the table with a Diet Swiss Miss packet mixed in for some faux s’mores yogurt.  Woo hoo for 24g of protein!


When I finished, it was back to work on the stationary.  It’s actually quite convenient because I can catch up on all the TV and facebook that I don’t do during the day.  Two hours is all I need.  Plus I get some cardio in! Perfect.  Although, I AM really excited to start running outside again.  It’s getting warmer, folks! [knock on wood]

After a total of 600 calories burned, I was done.  I showered and made some veggie soup with the help of my steamfresh california blend (broccoli, cauliflower, & carrots), canned mushroom, minced onion, minced garlic, & water.  Deeelish.

I packed my lunch for today and showered up.  Then, I made some dessert!  A protein cookie

Banana Nut BSN Lean protein powder + water.

After mixing the protein powder with some water until thick, I stir in my fiber one, mold into cookie form, and refrigerated for a lil bit until kind of firm like a cookie!  Best dessert EVER.  I’ve also been eating these for breakfast 🙂


What better to drink with a cookie than milk?!  Unsweetened Chocolate Almond Breeze, of course!  (with a lil bitta Splenda).  I couldn’t help myself they were on sale when I stopped at the store!

Perfect Timing.

Unfortunately, the title of this post is intended to be taken in the most sarcastic way  possible.  I’ve got a date Saturday night and am supposed to be going out with some friends tomorrow night, and wouldn’t you know it…I start breaking out like you wouldn’t believe.  UGH.  What that heck.  I feel like I’m growing three horns right now.  It makes me wish I could just hide away from the world until it’s all gone. 

Now that I’ve vented about my skin situation, here’s your verse of the day 🙂

“Have I not commanded you? Be strong and courageous. Do not be terrified; do not be discouraged, for the LORD your God will be with you wherever you go.”- Joshua 1:9

Next up:  Recap from last night…So, I got home from work and started the typical routine…biking & facebooking…Then I had the brilliant idea to start watching “What Not To Wear” online!  I love that show, and watching the clips made time on the stationary bike completely fly by!

After the first hour, I took a break to make this for refueling.

Sweet potato mash with sugar free syrup & cinnamon.


I love those microwavable sweet potatoes.  They come out perfect evertime and don’t cost as much (energy wise) to heat up the oven for baking one. 

When I was finished biking, I decided on a turkey wrap with veggies & salsa.

After my shower, I was still craving veggies, so I made some veggie soup with the bella.

Step one: steam veggies (whole bag!) in the microwave & add salt, pepper, 1/2 mini can of sliced mushrooms, garlic salt, & minced onion.

Getting down to business.

Step 2:  Blend in bella until smooth (you can leave some veggie chunks if  you prefer!)

Step 3: Ignore the fact that it reminds you of baby poop, visually, and enjoy!

Mmmmm. This is definitely a comfort food for me. 

Dessert was a plain greek yogurt + diet hot chocolate + fiber one.  AKA, a S’MORE in bowl form! I have a photo, but for some reason I can’t get it to upload correctly.  It’ll be edited to add later, I promise 😉

After dinner, I packed my lunch to avoid cleaning up two messes.  Today I’ll be enjoying some buffalo chicken salad (1/2 can white meat chicken + 1/3 C. ff cottage cheese + Texas Pete hot sauce + 1/2 tsp. ranch seasoning)

Not the most appealing at a glance, but boy is it tasty!

I also packed a light 100 calorie english muffin to spread the buffalo chicken salad onto and a big container of veggies, too!
